SLAMMIN' HAMMIES

Steps:

• 1. Place all "Hammie" ingredients in a large bowl. Mix with hands until well combined. Mixture should hold together when patties are formed. (NOTE: if too dry, add more pineapple juice, if too wet, add more graham cracker crumbs)
• 2. Make 6 baseball size patties. Place a "dimple" in middle of each pattie so they remain flat when grilled. Refrigerate for 1 hour.
• 3. Prepare grill. Coat grids with vegetable oil. Place patties on grill and grill for 5-6 minutes, turn and grill for another 5-6 minutes or until instant read thermometer reads 160 degrees F.
• 4. During the last minute, place a slice of Swiss cheese on top of each pattie, close lid and cook until cheese melts, about 1-2 minutes.
• 5. Assemble hammies: Place roll bottoms on serving platter. Lightly drizzle with honey mustard dressing. Evenly divide arugula between rolls and spread evenly. Top each with a hammie and tomato slice. Drizzle the underside of top roll with more honey mustard dressing and place on top of all.
• 6. Serve with additional honey mustard dressing.

KERI'S HAMMIES

Steps:

• Slice the bresd in 1/2 then put sliced ham and cheese on the bread. Melt the butter and mix in seeds, onion, mustard and sauce. Spread on the bread and meat and cheese. Put top half of the bread back in place. Cover with foil. Heat before serving at 400 for 20 minutes. Then remove foil and separate by slicing on the bread's separations. These can be made ahead of time and heated before serving.
