These sweet potatoes will knock your socks off. And not just because of the bourbon. Butter, vanilla, and a golden-baked marshmallow topping turn some sweet potatoes into an utterly life-changing casserole.

3 1/2 pounds canned, vacuum-packed sweet potatoes
1 cup sugar
1/3 cup bourbon
1/2 cup butter or margarine
1/2 teaspoon vanilla extract
1/2 cup chopped pecans, optional
2 cups miniature marshmallows

Steps:

  • Fresh sweet potatoes, cooked until soft and then peeled, can be substituted for the vacuum packed ones. Don't use drained, canned in syrup as they are too moist. Preheat oven to 350 degrees F. Put sweet potatoes in a large heavy saucepan and cook over medium heat, stirring frequently, until heated through. Mash sweet potatoes. Add sugar, bourbon, butter and vanilla; beat until well blended. Turn into a 2-quart, shallow baking dish. Sprinkle the pecans (if using) and marshmallows over top. Bake, uncovered, 30 minutes, or until marshmallows are golden.

1/2 cup (1 stick) unsalted butter, softened
1/2 cup bourbon
1/3 cup orange juice
1/4 cup (packed) light brown sugar
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/3 cup chopped pecans
Special equipment: 2-quart baking dish

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350°F. Butter a 2-quart baking dish.
  • In a medium pot over moderately high heat, combine the potatoes with enough cold water to cover by 1 inch. Bring to a boil, then reduce the heat to moderately low and simmer, uncovered, until the potatoes are tender, about 15 minutes. Drain the potatoes and transfer to the bowl of a stand mixer fitted with a paddle attachment. 4 tablespoons (1/2 stick) unsalted butter, plus more for the baking dish
4 to 6 sweet potatoes, peeled and sliced about 1/2 inch thick
Coarse salt and freshly ground black pepper
1/2 cup firmly packed light brown sugar
1/2 cup bourbon
2 tablespoons sorghum, cane, or maple syrup

Steps:

  • Preheat the oven to 350°F. Butter an ovenproof gratin or casserole dish. Arrange the sweet potato slices in the prepared dish and season with salt and pepper.
  • In a large saucepan, combine the sugar, 4 tablespoons butter, bourbon, and syrup and bring to a boil over medium-high heat. As soon as the sauce is boiling, pour it over the sweet potatoes.   • Put sweet potatoes in a large sauce pan.
  • Cook over medium heat, stirring frequently until heated through.
  • Preheat oven to 350F
  • Mash sweet potatoes
