1 grapefruit
2 tablespoons brown sugar

Steps:

  • Set broiler to high. Slice grapefruit in half and use a paring knife to separate the pieces for easy scooping. Spread 1 tablespoon of brown sugar onto each side. Place fruit in a baking dish that will collect any excess juices that spill over.
  • Broil until sugar melts, about 5 minutes. Serve warm.

Tiny bursts of juicy, tart grapefruit mitigate the richness of this moist crumb cake, topped with almond and brown sugar. You can substitute oranges, tangerines or other tangy fruit for the grapefruit; you're looking for 1 1/2 cup fruit total. Just avoid anything too sweet (like blueberries, peaches and bing cherries). You need the acidity to balance out the sugary crumb topping. (If substituting other fruit, skip the sprinkling of salt.) If you don't have a springform pan, use a regular 10-inch cake pan that's at least 1 1/2-inches deep, then serve cake directly out of the pan instead of unmolding.

1 1/4 cups/155 grams all-purpose flour
2/3 cup/145 grams light brown sugar
1 teaspoon ground cinnamon
3/4 teaspoon ground cardamom or ginger
1/4 teaspoon fine sea salt
1/2 cup/55 grams slivered almonds
1/2 cup/113 grams unsalted butter (1 stick), melted
2 large red or pink grapefruits
1/2 cup plus 1 tablespoon sour cream
3 large eggs
1 tablespoon vanilla extract
1 1/2 cups/185 grams all-purpose flour
3/4 cup/150 grams granulated sugar
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon fine sea salt, more for sprinkling
1/2 cup/113 grams unsalted butter (1 stick), cubed, softened, plus more for greasing the pan

Steps:

  • Heat oven to 350 degrees and butter a 10-inch springform pan.
  • Make the crumb topping: In a medium bowl, whisk together flour, sugar, cinnamon, cardamom and salt. Stir in almonds and melted butter until 1/2-inch crumbs form. Store covered in the refrigerator. (You can make the crumb topping up to 5 days in advance.)
  • Prepare grapefruit: Line a baking sheet or plate with a double layer of paper towels. Finely grate 1 tablespoon of zest from the grapefruit; set aside.
  • Cut top and bottom off grapefruit with a sharp knife, then slice away peel so no white pith remains. Cut out the grapefruit segments by running your knife on the inside edges of each segment, leaving behind the white membranes. Place sections onto the paper-towel-lined pan or plate to dry out slightly. You should have about 1 1/2 cups grapefruit sections. Pull any large sections apart with your hands so they are all in 1-inch or smaller pieces.
  • Make the cake: In a medium bowl, whisk sour cream, eggs, vanilla and reserved grapefruit zest. In the bowl of an electric mixer fitted with the paddle attachment, mix together the flour, sugar, baking soda, baking powder and salt. Beat in the softened butter for 10 seconds, then beat in the sour cream mixture until smooth.
  • Pour the batter into the prepared springform pan. Spread grapefruit evenly across the top of the cake. Sprinkle the grapefruit very lightly with sea salt, then top with the crumb mixture.
  • Bake until springy when touched, and a toothpick inserted in the center comes out with just a few crumbs, 50 to 65 minutes. Transfer to a wire rack and cool completely before releasing the sides of the pan and serving (at least 2 hours).

2 grapefruits
4 teaspoons clear honey or 4 teaspoons maple syrup
1 teaspoon ground cinnamon

Steps:

  • Halve grapefruits and remove pith with a knife.
  • Loosen the sections.
  • Pour some honey into the centre of each grapefruit. Alternately drizzle the top with honey or maple syrup (thanks Ladypit!).
  • Sprinkle with cinnamon.
  • Bake at 190C/375F for 15 minutes.

3 grapefruits
1/4 cup brown sugar
1/2 teaspoon vanilla extract
2 egg whites 1/4 cup sugar
1 1/2 cups vanilla ice cream Special equipment: 6 (4-ounce) ramekins

Steps:

  • Heat oven to 450 degrees F. Remove the ends of the grapefruits to stabilize on the cutting board. Using a sharp knife, remove the skin and bitter pith from the flesh. Over a small bowl, hold grapefruit in 1 hand and carefully remove the segments by sliding the knife between the flesh and the membrane. Toss grapefruit pieces with brown sugar and vanilla and divide among 6 ramekins. In a large bowl, beat egg whites until light and fluffy. Add sugar and beat until meringue is glossy and holds stiff peaks. Top each ramekin with 1/4 cup of ice cream. Cover with meringue and bake until golden brown, about 7 minutes.

I made up this very easy recipe because I love buffalo chicken dip, but unfortunately cannot justify dip as a meal (most of the time anyways). These burritos have that spicy buffalo wing taste with a creamy sauce that mellows them out. I hope you enjoy!

1 large boneless skinless chicken breast
2 tablespoons hot sauce (I use Frank's Red Hot, to taste)
4 ounces cream cheese
2 tablespoons ranch salad dressing or 2 tablespoons bleu cheese salad dressing
2 burrito-size flour tortillas

Steps:

  • Cut chicken breast into large strips.
  • Place in pan over medium heat with hot sauce.
  • Stir chicken adding more hot sauce if necessary until chicken is cooked through.
  • Add cream cheese and salad dressing.
  • Stir until melted.
  • Add more hot sauce until spiciness is to your taste preference.
  • Wrap in tortillas.
  • Enjoy!

This is my favorite and most easily made panini. I don't have a panini press so I just use my George Foreman grill. This is a just the basic recipe and is delicious as is, but if you want to give it some more pizzaz add some apple or pear slices.

2 slices thinly sliced bread
Dijon mustard
mayonnaise
3 slices brie cheese
2 pieces prosciutto

Steps:

  • Spray grill or panini press with non-stick cooking spray. (I prefer olive oil cooking spray because I think it tastes a lot better).
  • Spread mayonaise and mustard on bread to your preference.
  • Put prosciutto on bottom piece of bread, top with cheese and second piece of bread. (Putting the cheese on top allows it to melt into the rest of the sandwich rather than just out and onto the grill.).
  • Grill until golden brown.
