Steps:
- Boil peeled potatoes in salted water until done. Cool to room temperature.
- Place diced potatoes in large bowl.
- Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, and pepper in another bowl.
- Add to potatoes.
- Add celery and onions and mix well.
- Stir in eggs.
- Sprinkle a little paprika on top.
CAULIFLOWER "POTATO" SALAD

- Bring a pot of salted water to a boil. Add the cauliflower florets to the boiling water and cook until tender, 5 to 7 minutes. Drain well and cool to room temperature.
- Add the mayonnaise, mustard, vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large mixing bowl and whisk to combine. Then add the cooled cauliflower, pickles, dill, eggs, celery and shallot. Mix until thoroughly combined. Serve at room temperature or cover and store in the refrigerator until ready to serve.
KATIE'S POTATO SALAD
I neighbor in Sun Prairie, Wisconsin, gave me this recipe years ago. It takes very little mayonnaise, and yet the taste is so unique that everyone loves it.

Steps:
- 1.Mix the onion, hard boiled eggs, celery and potatoes in a large bowl.
- 2.In a medium saucepan, over very low heat, add the whisked eggs, with the flour and stir
- 3.To this mixture add the sugar, vinegar and milk. Keep stirring until mixture is thick and smooth.
- 4. Put the sauce in the refrigerator for about one hour until cold.
- 5. Add the mayonnaise and mustard to the chilled sauce and mix.
- 6. Pour over the potato mixture and stir until well blended.
- 7. Chill until ready to serve.
- 8. You can top with more hard boiled eggs and green onion for presentation
- Tip: If you need to thicken the sauce you can take a little cornstarch and cold water -- stir together and pour into sauce.

BACON AND RANCH POTATO SALAD

- Put the potatoes in a large pot and cover with salted water. Bring to a boil, reduce the heat to a simmer, cover and cook until fork-tender, 15 to 20 minutes. Drain and let cool completely. Slice the potatoes into bite-size pieces.
- In a large bowl, combine the mayonnaise, buttermilk, Parmesan, chives, parsley, garlic powder, onion powder and pepper and mix until well blended. Taste and season with salt if needed.
- Add the potatoes to the bowl along with most of the bacon and scallions (reserve some of the bacon and scallions for a garnish) and gently mix. Transfer to a serving bowl or cover with plastic and refrigerate until ready to serve. Garnish with the reserved bacon and scallions before serving.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

- Place potatoes in a large pot with enough water to cover by several inches. Bring to a boil over high heat, add 1 tablespoon salt, and lower to a gentle boil. Cook until potatoes are tender when pierced with a knife, about 25 minutes. Drain into a colander. Using paper towels or gloves to protect your hands, peel potatoes, and cut into 1-inch dice while still hot. Drizzle with vinegar; set aside.
- Place eggs in a small pan with enough water to cover by 1 inch, and place over medium-high heat. When water comes to a boil, turn off heat, cover, and let stand for 13 minutes. Drain, and place in a bowl with cold water to cover. When cold, peel eggs. Chop 2 into 1/4-inch dice. Slice the third egg into 1/4-inch-thick rounds, and set aside for garnish.
- Combine diced eggs, mayonnaise, celery seed, mustard, 2 teaspoons salt, and black pepper in a large bowl, and whisk to combine. Add reserved potatoes to mayonnaise mixture. Add celery, red pepper, onion, cornichons, scallions, and chopped parsley. Stir to combine. Chill for 30 minutes before serving. Garnish with paprika and reserved hard-boiled egg rounds.

- Bring a large pot of water to a boil, and reduce to a simmer. Drop in the potatoes and cook until fork tender, about 15 – 20 minutes, depending on the size of the pieces.
- For the last minute of cooking, drop the asparagus pieces and peas into the pot of boiling potatoes, to briefly blanch them.
- Drain using a colander, cover with a clean dish towel, and refrigerate until cool. If you are in a hurry, you can pop them in the freezer to cool them faster, but don't forget about them!
- To assemble the salad, toss the cold potatoes with the rest of the ingredients and chill until ready to serve.
