HOT ROAST BEEF SANDWICHES

Steps:
- Preheat the oven to 350 degrees F.
- Mix together the mayo, mustard, poppy seeds, grated onion, horseradish mayo and Worcestershire. Taste the dressing and adjust the ingredients however you wish.
- To assemble, spread the dressing on the top and bottom buns. On the bottom bun, lay on some provolone, roast beef and American cheese, and place the top bun on top. Repeat with the next sandwich.
- Wrap each sandwich in a foil square, and either bake right away or keep in the fridge. To bake right away, put them on a baking sheet in the oven until the buns are slightly crusty and the cheese is melted, 15 to 20 minutes. Great for a crowd!
PRIME RIB WITH BEEF GRAVY

- For the prime rib: Use the tip of a knife to make slits in the fat of the prime rib and stuff with slices of garlic. In a small bowl, mix the salt and pepper. Create a crust of salt and pepper all over the meat. Let stand at room temperature for 30 minutes.
- Preheat the oven to 450 degrees F. Put the prime rib on a rack in a roasting pan.
- Roast the meat for 10 minutes at this temperature, then turn the oven down to 350 degrees F. Roast until the meat registers 120 degrees F on an internal meat thermometer for a medium-rare roast, 1 hour 30 minutes to 1 hour 45 minutes (about 15 minutes per pound). Remove the meat to a cutting board, loosely tent with foil and let stand 20 minutes.
- For the gravy: In the meantime, pour off most of the fat from the roasting pan, leaving about 1/4 cup. Put the roasting pan on top of the stove over medium heat. Whisk the flour into the fat and cook for 2 to 3 minutes. Vigorously whisk in the beef stock and mustard. Add the thyme, rosemary and garlic. Bring to a low boil, then reduce the heat to a simmer. Cook, whisking, until the mixture begins to thicken. Add the sherry vinegar and cook 1 more minute. Transfer to a serving dish.
- Remove the ties from the prime rib. Slice the prime rib and bones and serve with the gravy.
KATHY'S FILET MIGNON STROGANOFF
II have always liked the taste of beef stroganoff but not the stringy, tough texture of cheaper cuts of beef. I decided to develop my own recipe for stroganoff using filet mignons. The result is a succulent, tender, wonderful culinary experience. Give it a try......you'll love it!! **NOTE: this recipe is not for the diet conscious! For some reason 'Zaar will not take my filet info.....it's (2) two inch thick filets.

- Brown the onion and mushrooms in 4 tablespoon of melted butter. Remove to a platter with the liquid. Slice the filets into 1 inch thick steaks and then slice against the grain into 1/4 inch strips.
- Dredge the strips in the 1/2 cup flour.
- Add the remainder of the butter to the skillet and pan fry the strips to rare to medium-rare doneness. Remove from skillet and place on a platter.
- Mix the bouillon, 2 tablespoons of flour and the 1/2 cup water together and add it with the reserved mushroom/onion mixture to the skillet. This will thicken quickly, remove from heat and stir in the sour cream, Worcestershire sauce, Kitchen Bouquet and the heavy whipping cream.
- Return the filet strips to the skillet and continue heating until mixture is hot.

KATHY'S BEEF TIPS WITH MUSHROOMS
This savory, stew-like dish is a great source of vitamin B12 and improves upon standing. Make the entire dish ahead (except the rice or noodles), and reheat in a low oven to serving temperature. Can be served over buttered egg noodles or steamed rice. From the recipe collection of Bird's sister Kathy. To add enhanced flavor, drop a couple of bullion cubes into the boiling water while cooking the noodles. :)

- Preheat oven to 275°F (low). In a large saute pan or skillet melt butter and heat oil. sear the meat with the garlic. Remove meat to a casserole and cover.
- To the same skillet, add the wine and saute' the mushrooms and onion for 1 minute, then add to the meat. Cover and bake for 1 hour or until the meat is tender.
- Meanwhile, add the broth, soy sauce, and Worcestershire to the pan in which the meat was seared. Bring to a boil and de-glaze the pan. Blend together the mustard, cornstarch and cream then add to the pan. Simmer until reduced and thickened.
- When beef is done, pour off the juices into the sauce and boil, whisking until smooth. Add meat and stir to coat.
- To serve, plate up either buttered egg noodles or rice and pour beef tips over top. Sprinkle with parsley if desired.
EASY ROAST BEEF
This is a pretty fool proof way to make a roast beef. You can add or subtract any seasoning you want. * I don't add salt before cooking as it will draw out the juices. *Always check your roast with a meat thermometer, to get a perfect roast. I use a digital read thermometer. see bottom of directions for timetable. *Remember that the roast will continue cooking after you remove from the oven and let it sit. Usually about 5-10 degrees, so keep that in mind when you go to read the temperature *Allow the roast to sit for 10-15 minutes after removing from oven, so that the juices can redistribute, before you slice it.

- Preheat Oven to 500 Degrees.
- Remove Roast beef from package and rinse under cold water. Pat dry with paper towels.
- Rub Olive Oil all over roast and put in roasting pan on a rack. (FAT SIDE UP).
- Sprinkle Garlic Powder and Black Pepper all over roast.
- Put in oven and roast at 500 degrees for 20 minutes.(do NOT open oven door during this step. You want the intense hot heat to "sear" the roast and keep in all the juices.).
- After 20 minutes, lower the oven temperature to 300 degrees and continue roasting for at that temperature for 18 minutes per pound.
- *3lb Roast- 54 minutes
- *4lb Roast-72 minutes
- I generally start checking the temperature after 45 minutes of cooking at 300 degrees. When the roast reaches the required temperature (see below) remove from oven and let sit for 10-15 minutes.
- Timetable.
- Rare- 125-130 degrees.
- Medium rare- 130-140 degrees.
- Medium- 145-150 degrees.
- Well Done-155-165 degrees.
- After allowing the roast to "rest" Slice and Serve!

KATHY BAKER'S BEEF TENDERLOIN
This recipe came from Booby Flay's wife Stephanie March. It is her mother's recipe. Actual hands on time is 15 minutes, the rest is marinating and resting time.

- Prepare a heavy baking dish that is as close to the size of the beef tenderloin as possible by making an aluminum foil "basket" for it to sit inches It is very important to use heavy duty aluminum foil. Place 2 or 3 pieces of foil in the dish and put the beef tenderloin on top of it, leaving enough hanging over the edges of the dish to really wrap up the meat.
- Rub the garlic over the entire tenderloin and season well with salt and pepper. Sprinkle the butter pieces evenly over the beef. Drizzle with Worcestershire and lime juice let marinate in the refrigerator for at least 3 hours.
- Adjust the oven rack to the highest position and preheat the broiler. Place the pan right underneath the broiler and broil for about 8 minutes. (It will look like the flames are burning or touching the meat, but that is fine). Carefully pull the pan out and turn the meat over. Broil for another 5 minutes or until cooked to desired doneness. (When the meat is done under the flame it will look like it is burned, but it's not). Wrap it up very tightly in the foil and let it sit and continue to cook inside the foil on the kitchen counter for about another 1 1/2 hours.
- Whisk together the sour cream and horseradish and season with salt and pepper. Slice the meat and serve with sour cream mixture on the side.

- 1. Rub Salt, Pepper, Garlic Powder & Onion Powder all over roast to season. You can add any of your other favorite seasonings, I sometimes rub it with steak seasoning by TexJoy. In a large dutch oven heat cooking oil and brown roast on all sides.
- 2. When roast is golden brown, put dry onion soup mix on top of roast then add enough water to cover the top of the roast by at least an inch. The amount of water will vary with the size of your roast.
- 3. Bring to a boil then lower heat to a light boil. Continue cooking roast until very tender, falling apart. This takes 3 to 4 hours. Keep adding water if it cooks out. Once cooked, remove to a platter, reserving the juices in the pot. Turn off the heat and let juices cool down for about 15 minutes.
- 4. In a large cup mix flour, a few dashes of salt and water and mix until there are no lumps. The salt helps dissolve the lumps in the flour & water. I have a large glass with a lid and put mine in that and shake it until lumps are dissolved. Add slowly to cooled juices, stirring constantly until paste is dissolved. Turn the heat back on and stir constantly until mixture comes to a boil. This thickens the gravy. I always put the roast back into the pot of gravy and serve it from there. You may prefer to have the gravy on the side.
EASY ROAST BEEF

- Heat oven to 240C/220C fan/gas 9.
- Mix 1 tsp plain flour and 1 tsp mustard powder with some seasoning, then rub all over the 950g beef top rump joint.
- Put 1 onion, cut into 8 wedges, and 500g carrots, halved lengthways, into a roasting tin and sit the beef on top, then cook for 20 mins.
- Reduce oven to 190C/170C fan/gas 5 and continue to cook the beef for 30 mins if you like it rare, 40 mins for medium and 1 hr for well done.
- Remove the beef and carrots from the oven, place onto warm plates or platters and cover with foil to keep warm.
- Let the beef rest for 30 mins while you turn up the oven to cook your Yorkshire puds and finish the potatoes.
- For the gravy, put the tin with all the meat juices and onions back onto the hob.
- Stir in 1 tbsp plain flour, scraping all the stuck bits off the bottom of the tin. Cook for 30 seconds, then slowly stir in 250ml beef stock, little by little.
- Bubble to a nice gravy, season, then serve with the beef, carved into slices, carrots and all the other trimmings.
