Kate's Caramelized Garlic Chicken Wings (Only 3 Ingredients!) image

Slowly roasting the garlic in olive oil caramelizes its natural sugars developing a sweet nutty flavor, and the chicken wings are fall of the bone tender and moist. The large amount of garlic used is surprisingly not pungent because the garlic oils mellow into a sticky and buttery consistency.

3 -3 1/2 lbs chicken wings, tips trimmed (about 20 wings)
1 (6 ounce) container peeled whole garlic cloves
1/2 cup olive oil
1/2 cup water

Steps:

  • Preheat oven to 425F degrees. Cut chicken wings in half at joint. Finely chop half a container of garlic (measures to be about 3/4 cup of whole garlic cloves). Refrigerate remaining garlic for another recipe. Place chicken wings in baking pan in single layer; they can touch. Rub wings all over with olive oil. Rub wings all over with minced garlic. Sprinkle top with salt and pepper to taste. Pour water in four corners of baking pan. Cover with aluminum foil.
  • Bake at 425F degrees for 45 minutes. Then, bake at 350F degrees for 1 hour. Remove foil. Bake at 350F degrees for 20 minutes or until browned.
  • The garlic infused oil left in the baking pan is yummy over rice or sopped up with crusty bread. Hint: find the 6 oz container of peeled whole garlic cloves in the produce section of the grocery store by the refrigerated pre-cut vegetables, salsas, and salad dressings.

2 tablespoons unsalted butter
1/2 cup dark brown sugar
8 cloves garlic, finely minced
One 2-inch piece ginger, finely minced
1/3 cup rice vinegar
1/4 cup fish sauce
1/4 cup low-sodium soy sauce
8 skin-on, bone-in chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon coconut or vegetable oil
White rice, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a small saucepan over medium-high heat. Add the brown sugar and cook, stirring constantly, until it begins to melt, 2 to 3 minutes. Add the garlic and ginger and cook, continuing to stir, for another 1 to 2 minutes. Stir in the vinegar, fish sauce and soy sauce. Bring to a low simmer and let cook for about 5 minutes. Remove from the heat.
  • Use a paper towel to thoroughly pat dry the chicken. Sprinkle both sides with salt and pepper.
  • Heat a large ovenproof skillet over high heat until very hot. Add the oil. Place the chicken in the skillet skin-side down and let brown without moving it for about 4 minutes. Remove the chicken to a plate and raise the heat to medium-high. Add the brown sugar mixture and use a wooden spoon to scrape up any browned bits. Return the chicken to the skillet skin-side up. Transfer the skillet to the oven and bake, basting the chicken with the sauce midway through cooking, until cooked through, about 20 minutes. For extra-crispy skin, transfer the skillet to the broiler for about 2 minutes. Serve over white rice with sauce.

½ cup white sugar
⅓ cup soy sauce
2 tablespoons peanut butter
1 tablespoon honey
2 teaspoons wine vinegar
1 tablespoon minced garlic
12 large chicken wings, tips removed and wings cut in half at joint
1 teaspoon sesame seeds, or to taste

Steps:

  • In an electric skillet or a large skillet over medium heat, mix together the water, sugar, soy sauce, peanut butter, honey, wine vinegar, and garlic until smooth and the sugar has dissolved. Place the wings into the sauce, cover, and simmer for 30 minutes. Uncover and simmer until the wings are tender and the sauce has thickened, about 30 more minutes, spooning sauce over wings occasionally. Sprinkle with sesame seeds.

4 boneless skinless chicken breasts
1 teaspoon salt
3/4 teaspoon black pepper
1 tablespoon oil
4 -6 garlic cloves, chopped
1/4 cup brown sugar
1/4 cup heavy cream

Steps:

  • Sprinkle the salt and pepper onto the chicken.
  • In a medium to large sized skillet (I like cast iron) heat the oil over medium-high heat until almost smoking.
  • Add the chicken breasts and garlic to the pan and brown the first side of chicken, about 5 minutes.
  • Flip the chicken and brown the other side, about 3 minutes.
  • Remove the chicken from the pan and add the brown sugar to the pan.
  • Allow the sugar to melt about half way and add the cream.
  • Bring to a bubble and add chicken back to pan
  • Simmer for 3-5 minutes and serve over butter egg noodles or rice.
