EASY LAYERED TACO DIP
Steps:
- In a small mixing bowl, mix together refried beans and green chiles. Spread mixture into the bottom of a 9-inch pie plate or square baking dish.
- Beat cream cheese, sour cream and half a packet of taco seasoning together until smooth and creamy. Spread into the bottom of dish over refried beans mixture.
- Spread salsa on top of cream cheese mixture.
- Top with cheese, olives, tomatoes and green onions.
- Keep refrigerated until ready to serve. Serve with tortilla chips.

TACO DIP
This version of a game-day favorite, taco dip, is super simple to make. Even easier, make the beef-and-bean mixture a day ahead, then just reheat and top.

Steps:
- Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 8 to 10 minutes. Pour off the excess grease, add the taco seasoning and stir until the beef is well coated. Add the tomato paste, and stir until it darkens to a dull brick red, about 30 seconds. Add 3/4 cup water, bring to a simmer and cook and until the mixture thickens, 2 to 3 minutes. Add the beans, and stir just to warm them through. Remove from the heat, and transfer to an 8-inch square baking dish.
- Top the beef-and-bean mixture with an even layer of sour cream, then a layer of Cheddar. Sprinkle the tomatoes, lettuce and black olives and jalapeno if using on top. Serve with tortilla chips.
MEXICAN 7 LAYER TACO DIP (WITH BEEF)

- Using a 9″ skillet pan, pan fry ground beef on medium heat. Season beef with one pack of taco seasoning (approximately 3 tablespoons) and 3 tablespoons of water. Mix together. Spread seasoned beef evenly into bottom of 9×13 glass dish. In a small glass bowl, microwave refried beans for 30 seconds and stir. Lay refried beans on top of the layer of seasoned beef. Mix cream cheese, sour cream and second pack of taco seasoning (approximately 2 tablespoons). More if desired. Spread cheese mixture evenly on top of refried beans. Top next layers with toppings of your choice. In the pictures above, the next layers are shredded cheese, lettuce, tomatoes, onions and green onions. Set in refrigerator for at least 30 minutes before serving.
KAREN'S TACO PASTA
I made this with taco leftovers and my family loved it. I think it works best with fettuccine, but you can use your favorite pasta.

- Cook pasta in a large pot of boiling salted water until al dente. Drain.
- Meanwhile, in a large skillet cook ground beef. Drain excess grease. Add taco seasoning packet as directed on package.
- Transfer pasta to a large bowl. Toss with cooked meat mixture, prepared cheese, and tomatoes. If desired, add sliced olives. Season to taste with salt, pepper, and garlic powder. Sprinkle with grated Parmesan cheese. Serve immediately.

- 1. I don't really have a set recipe for the taco dip, I kind of wing it, every time its different ingredients! I use all mild sauces but it's up to you how hot you want it and what brands you like. I like Taco Bell taco seasoning mix and Salsa or Fridays Salsa and Pace Picante, I have also made homemade salsa when I have the time. Following is the basic quick recipe for a regular size crockpot full:
- 2. -Brown Ground Beef/Ground Sausage/Chicken, drain, add taco seasoning mix and 1/2 cup water, mix well and simmer for a couple minutes -Cook rice according to package -Pour Salsa and Picante in crockpot, mix well, add cheeses, mix well then add meat and rice and mix well -Put crockpot on high until it bubbles then reduce to low and cook for at least 2-4 hours stirring occasionally, top with sour cream and some more shredded sharp cheddar, you can keep in the crockpot on warm and serve with Tortilla chips (I prefer the Golden or Wheat ones)

CROCKPOT CHICKEN NACHO DIP
Steps:
- Place 1 1/4 cups chicken broth into a pressure cooker. Whisk in taco seasoning and cayenne. Add in petite diced tomatoes and chicken breasts and stir to coat in liquid. Cover with lid, ensuring pressure valve is closed. Press the "Chicken" cook function button, adjust cook time to 15 minutes and press "high pressure" button. Press "Start" button. It will take about 7-10 minutes to preheat before cooking time starts.
- Once cooking time has completed, open the pressure valve to release pressure quickly, using a long kitchen tool. Once all pressure has been released, remove lid. Remove chicken from the liquid and shred. Set aside.
- Switch to "Brown/Saute" function and whisk in cream cheese blocks until melted. Sprinkle in shredded cheese bit by bit, whisking to melt. Whisk remaining 1/4 cup chicken broth with corn starch and pour in. Boil for 30 seconds to 1 minute or until dip starts to thicken. Add shredded chicken and rinsed beans. Stir. Press "Stop" button. Taste and adjust seasoning with salt, pepper, cayenne or even more taco seasoning if you'd like.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, brown beef. Drain well. Stir in beans, taco sauce, chili powder and cumin. Heat until warm.
