½ cup shortening
1 ¼ cups packed light brown sugar
¾ cup peanut butter
1 egg
3 tablespoons milk
1 tablespoon vanilla extract
1 ¾ cups all-purpose flour
¾ teaspoon baking soda
¾ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a medium bowl, cream together shortening, brown sugar, and peanut butter until smooth. Stir in egg, milk, and vanilla. Combine flour, baking soda, and salt; stir into the peanut butter mixture until well blended. Drop by rounded spoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1/2 cup unsalted butter (room temperature)
2/3 cup granulated sugar
1/3 cup brown sugar
2/3 cup peanut butter
1 large egg
¾ tsp baking powder
½ tsp baking soda
¼ tsp salt
1 1/3 cup all-purpose flour

Steps:

  • Preheat the oven to 350°F. Line 2 large baking sheets with parchment paper.
  • With an electric hand mixer, cream together the butter, granulated sugar, and brown sugar. Add the peanut butter and egg and mix until combined.
  • In a separate bowl, add baking powder, baking soda, salt, and flour (sift flour once measured). Add to the peanut butter mixture, mix until combined.
  • Form dough into 1" balls. Place the balls about 3-inches apart on the prepared baking sheet. Flatten in a crisscross pattern using a fork.
  • Bake 8-9 minutes until cookies just start to turn golden at the base. Remove from the oven and allow cookies to cool 5 minutes then transfer on a wire rack.

1 cup creamy peanut butter
1 cup sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • Mix all ingredients together and place in fridge while oven heats to 350 degrees. Roll the dough into 1 inch balls (you can add criss cross design on top with a fork if you like). Bake for 10-12 minutes- the cookies will look soft and the tops will begin to crack. Let cool.

2 1/2 cups unbleached all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup salted butter (softened to room temperature)
2 cups creamy peanut butter (see note)
1 1/2 cups brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk together the flour, salt, baking powder, and baking soda. Set aside.
  • In a large bowl with a handheld electric mixer or in the bowl of an electric stand mixer fitted with the paddle attachment, beat together the butter and peanut butter until light and fluffy, 1-2 minutes, scraping down the sides of the bowl as needed.
  • Add the brown sugar and granulated sugar and mix until combined. Beat in the eggs and vanilla until creamy.
  • Add the dry ingredients and mix until combined.
  • Scoop the dough and roll into 1- or 2-inch balls. Place on parchment- or silpat-lined (or lightly greased) large, rimmed baking sheets, placing them a couple inches apart.
  • Bake for 10-11 minutes until puffed. Don't overbake.
  • Remove from the oven and immediately press each cookie to flatten slightly with the bottom of a flat drinking glass. Don't flatten the cookies to smithereens, just press the puffed part down until the cookies are an even thickness.
  • Scoop onto a cooling rack to cool completely. These cookies freeze great (and actually taste amazing straight from the freezer).

I was given this recipe many years ago by a co-worker and it "IS" the best peanut butter cookie that you will "EVER" eat. The almond extract brings out the flavors so well, it is yummy! They won't last long in your house!

1 cup butter, softened
1 1/4 cups creamy peanut butter
1 cup granulated sugar
1 cup brown sugar, packed
2 eggs
1 teaspoon almond extract
2 2/3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 (12 ounce) package peanut butter chips

Steps:

  • Cream the butter, peanut butter, sugars, eggs and almond extract till fluffy. Sift the dry ingredients and add to the creamed mixture. Shape into quarter cup sized balls, roll in additional granulated sugar and flatten with the tines of a fork. Bake on un-greased cookie sheets for 11-13 minutes. Cool slightly and remove from pans to cool on racks.
  • I use a smaller ice cream scoop to measure my cookies out. You can make them whatever size that you want, be careful to not overbake, I bake for only 11 minutes.
