Steps:
- Preheat oven to 350°F.
- Line muffin pan with muffins liners and set aside.
- In a large bowl combine both sugars, baking soda, spices, and salt.
- Add the applesauce and mix well (mixture should be completely smooth).
- Beat in the oil, eggs, and vanilla extract.
- Add the flour and mix until incorporated. Do not over mix!
- Scoop the batter into the muffin pan filling the cups to the top.
- Bake for 20 - 21 minutes until a toothpick inserted comes out with a few crumbs.
- Cool in pan 5 minutes then transfer to a wire rack (or large plate if you don't have a rack) to continue cooling.
- Serve warm or cooled completely.

- Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper muffin liners. Whisk together 1 1/2 cups oatmeal, the flour, baking powder, baking soda, and 1/8 teaspoon of cinnamon in a mixing bowl; set aside.
- Whisk 1/2 cup brown sugar, egg white, applesauce, and milk together in a mixing bowl until smooth. Stir in the flour mixture until evenly moistened; it's ok if small, dry lumps remain. Pour the batter into the prepared muffin tin. Stir the 1/4 cup oatmeal, 1/4 cup brown sugar, 1 tablespoon cinnamon, and the melted butter in a small bowl; sprinkle this mixture over the muffins.

- Preheat oven to 375 degrees F. Line a 12-cup muffin tin with liners or grease with non-stick cooking spray. Set aside.
- In a medium bowl, stir together the oats, applesauce, milk, egg, vanilla, butter and sugar.
- In a large bowl, mix the flour, baking powder, baking soda, cinnamon, salt and cranberries or raisins.
- Make a well in the center of the dry ingredients and pour in the applesauce mixture. Stir just until combined (don't overmix!)

- In a large bowl, whisk together the melted butter, applesauce, honey, egg, and spices.
- In a food processor*, pulse the oats for 40-60 seconds, until they are ground into a grainy, flour-like consistency. Add the oats to the liquid ingredients, along with the whole wheat flour, baking powder, baking soda, and salt. Fold the ingredients together until combined.

- Preheat oven to 350 F and prepare 12 pc muffin pan with muffin liners for later.
- In a medium bowl combine all wet ingredients (applesauce, maple syrup, coconut oil and vanilla) and set aside. In a large bowl place all your dry ingredients (everything except diced apple) make a 'well' in the centre of the bowl and pour in your wet ingredients. - Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners. If using cupcake liners, spray the liners because when warm, these muffins stick.
- Whisk the flour, oats, cinnamon, baking soda, baking powder, and salt together in a large bowl until combined. Set aside.
