Sweet Kale Salad with Dried Cranberries and Poppy Seed Dressing image

This sweet kale salad is a copycat of the popular bagged salad you find in grocery stores -- but as always, homemade is way better!

4 cups firmly packed shredded kale, finely chopped
2 cups broccoli slaw
2 cups shredded Brussels sprouts
[1/2 cup poppy seed dressing]
1/2 cup dried cranberries
1/4 cup shelled pumpkin seeds (pepitas)

Steps:

  • In a large bowl, mix together kale, broccoli slaw, shredded Brussels sprouts, and poppy seed dressing. Toss together until all ingredients are coated with dressing.
  • Sprinkle with dried cranberries and pumpkin seeds immediately prior to serving.

2 tablespoons cider vinegar
1 tablespoon extra-virgin olive oil
1 teaspoon poppy seeds
1 teaspoon sugar or honey
¼ teaspoon salt
¼ teaspoon ground pepper
4 cups coarsely chopped kale, any tough stems removed
2 cups matchstick-cut peeled broccoli stems or broccoli slaw
2 cups thinly sliced trimmed Brussels sprouts (8 ounces)
½ cup sliced radicchio
3 tablespoons dried cranberries
3 tablespoons toasted pepitas

Steps:

  • Whisk mayonnaise, vinegar, oil, poppy seeds, sugar (or honey), salt and pepper in a large bowl. Add kale, broccoli stems (or slaw), Brussels sprouts, radicchio, cranberries and pepitas; toss until well coated with the dressing.

1 bag (16 ounces) pre-washed tri-color cole slaw mix (recommended: Fresh Express)
1 (8.25 ounce) can mandarin oranges, drained
1 (8-ounce) pineapple chunks, drained
1/2 cup poppy seed dressing (recommended: Knott's)
1/2 cup organic sour cream

Steps:

  • In a large mixing bowl combine cole slaw mix and fruit; set aside.
  • Stir together poppy seed dressing and sour cream. Pour over slaw mix and toss. Serve chilled.

The salad bursts with the flavor of mandarin oranges, sweet and tart strawberries, and has a pleasant poppy seed dressing. When mangoes are in season, you can substitute them for the mandarin oranges or walnuts and pomegranates, toasted cashews or walnuts, and apples in the fall for different flavors. The possibilities are endless!

olive oil cooking spray
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
1 pound Brussels sprouts, trimmed and thinly sliced
½ pound curly kale, chopped
½ pound lacinato (dinosaur) kale, chopped
½ pound napa cabbage, chopped
1 ½ cups sweetened dried cranberries (such as Craisins®)
1 (15 ounce) can mandarin oranges, drained and sliced in half, or more to taste
3 green onions, thinly sliced
4 fresh strawberries, sliced, or to taste
1 (12 ounce) bottle poppy seed salad dressing (such as Marie's®)
3 tablespoons orange juice concentrate

Steps:

  • Pour pepitas into a bowl and coat with cooking spray. Sprinkle cayenne pepper, salt, and pepper over pepitas and toss to coat.
  • Cook and stir coated pepitas in a skillet over medium-low heat until lightly toasted and fragrant, about 5 minutes. Remove skillet from heat and allow pepitas to cool.
  • Combine Brussels sprouts, curly kale, lacinato kale, napa cabbage, dried cranberries, mandarin oranges, green onions, strawberries, and toasted pepitas in a large bowl.
  • Mix poppy seed dressing and orange juice together in a bowl; pour over Brussels sprouts mixture and toss well.

3 tablespoons cider vinegar
2 tablespoons honey
2 teaspoons Dijon mustard
1 1/2 teaspoons poppy seeds
1/4 teaspoon kosher salt
fresh ground black pepper
3 tablespoons vegetable oil
1/3 small red onion, diced
2 bunches flat-leaf kale
2 apples (Granny Smith or Fuji ,or 1 of each)

Steps:

  • For the dressing:.
  • Place the vinegar, honey, mustard, poppy seeds, and salt in a large, nonreactive bowl, season with pepper, and whisk to combine. While whisking constantly, slowly add the oil until all of it is incorporated. Add the onion, stir to combine, and set aside.
  • For the coleslaw:.
  • Wash and dry the kale. Cut out and discard the tough stems. Arrange the leaves into stacks, slice crosswise into 1/4-inch ribbons, and add to the bowl with the dressing. Core the apples, cut them into 1-1/2-inch-long matchsticks, and add to the bowl. Toss to combine. Let the coleslaw sit for at least 15 minutes at room temperature and up to 1 day in the refrigerator for the flavors to meld. Toss again before serving.
