KALE, CORN AND ONION SKILLET CAKES

Kale, Corn and Onion Skillet Cakes image

From Cait Johnson's "Cooking Like a Goddess". These are amazingly yummy and nutritious as well. I make a full batch on the weekend and keep the leftovers in the fridge or freezer. Then I pop a few in the toaster oven or microwave to warm for breakfast or lunch at work. Everyone who tries them asks me for the recipe.

CARAMELIZED ONION SKILLET CORN BREAD

Caramelized Onion Skillet Corn Bread image

As part of GMA's $15 Dinner Dare series, each day an anchor unveiled a list of secret ingredients, then a chef had to prepare a tempting family meal live on the air with the newly unveiled ingredients. Emeril Lagasse was the second chef to take on the challenge. His list of surprise ingredients included only vegetables: black beans, pinto beans and spinach, so he contrived this side dish from the GMA pantry. I've never known anyone who could instantly caramelize onions, so this method was a huge surprise. Now, if you'd rather be more traditional, you can always caramelize onions (cut in 1/2 inch pieces) in the skillet over medium heat using a couple of tablespoons of butter and a little oil, sauteing until they turn brown and caramelize, then melt the remaining butter in the skillet (add sugar here if you like sweet cornbread) and continue with the recipe as written. Prep time includes time to heat the skillet.

GREEN ONION CAKES

Green Onion Cakes image

These chewy fried Chinese flatbreads are delicious! They are common at fairs and festivals in Edmonton, Alberta, Canada where I lived for 5 years. They are commonly served with fiery hot Chinese chili garlic sauce that you can find at most grocery stores. If you're not into spicy food, you can serve this with plum sauce or sweet and sour dipping sauce instead. Although, these are lengthy instructions, the green onion cakes are pretty easy to make and well worth the effort. If you don't want to cook them all at once, you can freeze the uncooked cakes, then thaw and fry them as needed. If you freeze them, separate each cake with a small piece of wax paper.

Time 2h15m

Yield 10 serving(s)

Number Of Ingredients 6

2 cups all-purpose flour
3/4 cup hot water
1 cup green onion, finely chopped
1 teaspoon honey
1/2 teaspoon salt
2 tablespoons vegetable oil

Steps:

  • Add salt to flour in a mixing bowl and mix throughly.
  • Add honey to hot water in a separate cup or dish until the honey melts and mixes with the water.
  • Slowly add water/honey mixture into the flour while stirring the flour.
  • Knead the mixture until smooth (approximately 5 minutes). If it is too dry add a little extra water. If it is too wet, add a little flour.
  • Cover with plastic wrap and refrigerate for at least 1 hour.
  • After at least an hour remove mixture and roll into a sausage shape and divide into 10 equal portions. You will work with one cake at a time so cover the others so they don't dry up.
  • For each portion of dough, roll into a ball between the palms of your hands, then on a floured surface roll the dough out into a thin round pancake.
  • Sprinkle the surface of the dough with green onions.
  • Roll the pancake into a sausage shape, trapping all the green onions inside the dough.
  • Roll the dough again along the length of the sausage to make a coil shape.
  • With the coil still standing up on your counter top flatten it with the palm of your hand (if you flatten it with the coil lying flat on your counter, the onion cake will open up while cooking).
  • Roll the dough into a circle about 5 inches in diameter and place to the side while you make the rest of the cakes.
  • Heat up the oil in a frying pan or skillet at a medium heat and fry each cake, one side at a time, until it is light brown.
  • Cut into quarters and serve with chili garlic dipping sauce.

KALE AND FENNEL SKILLET

Kale and Fennel Skillet image

KALE-CORN FRITTERS

Kale-Corn Fritters image

Adapted from an adaptation from Cait Johnson's book, "Witch in the Kitchen". These are yummy and while they taste awful for you- are pretty good, especially with all the super-nutritious kale they contain. They go well with traditional Southern dishes- I think they would be very good with fried catfish. They also freeze well. I just cook mine at about 350F for 5-7 min in my toaster oven still frozen and eat! Be sure to cut your kale small enough, because the large chunks can be kind of offensive. Times are estimates.

Provided by Roosie

Categories     Breakfast

Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 cup flour
1 cup yellow cornmeal
1 teaspoon salt, to taste
2 cups fresh corn or 2 cups frozen corn
2 cups kale, chopped and packed (finely or roughly, depending on how much "kale" flavor you want)
2 eggs
2 tablespoons melted butter or 2 tablespoons olive oil
2 cups milk
1 cup diced onion (optional)
2 -4 slices bacon, crumbled (if you choose to add the bacon, it is nice to use the some of the fat for frying) (optional)

Steps:

  • In a large bowl, stir together the flour, cornmeal, salt, kale and corn.
  • In a medium bowl, lightly beat the eggs.
  • Mix in the oil/butter, and milk.
  • Make a well in the center of the dry ingredients and pour in the wet ingredients.
  • This makes mixing in easier and faster.
  • If you are using the onion, sautee it, then add to your batter.
  • Also, if you are using the bacon, cook it and crumble it into the batter.
  • Reserve some of the bacon grease.
  • For both of these, it is better if you can cook your fritters in the same pan- the fact that you already cooked flavorful foods in that pan will add to the flavor of the fritters.
  • Do not worry if the batter seems kind of thin.
  • Due to the eggs it should fry up fine.
  • However, if you try one and feel it is still too thin, feel free to add more flour- about a Tbs at a time.
  • Heat a frying pan with oil and/or bacon grease over medium heat.
  • Add dollops (about 1/4 cup) of the batter and fry.
  • When the fritters are ready to be flipped they will begin to look firm and egg-like around the edges and begin to bubble slightly (This should be about 3 minutes).
  • Flip and cook the other side (1-2 min).
  • It is much like cooking pancakes, and is pretty easy to get the hang of.
  • You may need to fiddle with your heat.
  • Be sure these are cooked through as they do contain raw eggs.
  • Serve warm.
  • I like mine with sour cream, my boyfriend likes his with sour cream and cheddar.
  • For Vegetarian Omit the bacon.

  • Heat 2 tablespoons oil in a large (12-inch) cast-iron skillet over medium. Add red onion and 1/2 teaspoon salt; cook, stirring occasionally, until softened and lightly browned, about 8 minutes. Add kale and 1 teaspoon water; cook, folding kale into onion mixture, until kale wilts, about 2 minutes. Add vinegar; cook, stirring constantly, until evaporated, about 20 seconds. Remove from heat. Transfer mixture to a small heatproof bowl; set aside. Wipe skillet clean.
  • Preheat oven to 475°F with rack in middle position. Grate potatoes and yellow onion on large holes of a box grater. Working in batches, place grated vegetable mixture on a clean kitchen towel, and squeeze firmly over sink to remove as much liquid as possible. Transfer mixture to a large bowl. Add eggs, panko, chives, lemon zest, pepper, and remaining 2 teaspoons salt; stir until combined.
  • Add 1/4 cup oil to cleaned skillet, and swirl to coat. Heat over medium-high until oil shimmers. Spoon potato mixture into skillet (mixture should sizzle on contact). Using a spatula, press mixture into an even layer to cover bottom of skillet. Brush top of latke with remaining 2 tablespoons oil. Bake in preheated oven on middle rack until latke bottom is browned and edges are crisp, about 15 minutes.
  • Heat broiler to high (do not remove skillet from oven). Broil until top of latke is golden brown in spots, 4 to 5 minutes. Remove from oven; let cool 5 minutes.
