From "Welcome to Junior's! Remembering Brooklyn With Recipes and Memories from Its Favorite Restaurant" by Marvin and Walter Rosen and Beth Allen.

Provided by Vicki Butts (lazyme)

Categories     Other Salads

Time 20m

Number Of Ingredients 9

5 lg carrots, peeled, shredded (about 1 1/2 lbs)
1 head green cabbage, shredded (about 2 lbs)
DRESSING:
2 c mayonnaise
2 Tbsp cider vinegar
2 Tbsp sugar
1 tsp minced garlic
1 tsp ground white pepper
1 tsp salt

Steps:

  • 1. Make dressing first so it's ready to toss on vegetables as soon as they are shredded.
  • 2. In a small bowl, mix together the mayonnaise, vinegar, sugar, garlic, pepper and salt. Set aside.
  • 3. In a large bowl, toss the carrots and cabbage.
  • 4. Immediately pour dressing over cabbage mix and toss until all vegetables are well-coated. Cover bowl and refrigerate until vegetables wilt just a little, about 15 minutes. (The flavors blend even better if slaw marinates in refrigerator for about 1 hour.)
  • 5. Toss again before serving to redistribute any dressing that has settled in the bottom of the bowl.
  • 6. This recipe yields 16 servings (3 quarts).

CREAMY GARLIC COLESLAW

Creamy Garlic Coleslaw image

This recipe is from Junior's restaurant in Brooklyn, NY cookbook. I used 1 bag of preshredded coleslaw mix, 1 cup of mayonnaise but the same amount of vinegar, sugar, garlic, salt and pepper. This coleslaw was so good and creamy, we love garlic. It is best to make this the day before to give it time to get nice and creamy. Cook time of 24 hours is the marinating time.
