1 package (8 ounces) brownie mix
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla extract
2 large eggs
1 cup milk chocolate chips, melted
Whipped cream and miniature chocolate kisses, optional

Steps:

  • Preheat oven to 350°. Prepare brownie mix according to package directions for chewy fudge brownies. Spread into a greased 9-in. springform pan. Bake at 350° for 15 minutes (brownies will not test done). Cool for 10 minutes on a wire rack. , Meanwhile, in a bowl, combine the cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition. , Pour over the brownie crust. Top with melted chocolate; cut through batter with a knife to swirl the chocolate. , Bake at 350° for 35-40 minutes or until center is almost set. Run a knife around edge of pan to loosen; cool completely. Remove sides of pan; refrigerate for at least 3 hours. Garnish with whipped cream and chocolate kisses if desired.

Steps:

  • Grease bottom of 9-inch springform pan.
  • Prepare basic brownie mix as directed on package; pour batter evenly into springform pan.
  • Bake at 350°F 15 minutes.

4 ounces bittersweet chocolate discs
3/4 cup all-purpose flour
1/4 cup Dutch-process cocoa powder

1/4 teaspoon baking soda
3/4 cup packed dark brown sugar
1/4 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs
8 ounces cream cheese, at room temperature
1/4 cup granulated sugar
2 tablespoons sour cream
1/2 teaspoon vanilla extract
1 large egg
Pink food coloring
3 cups confectioners' sugar, or more as desired
2 sticks (1 cup) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
Milk, optional
Candies or cookies for decorating, such as pirouette cookies, white, pink or chocolate curls, dragees, edible glitter, chocolate cigars or wafer cookies

Steps:

  • For the brownies: Preheat the oven to 325 degrees F. Line a mini-muffin pan with paper liners.
  • Melt the butter, oil and chocolate discs together over a double boiler, stirring until melted and smooth. Remove from the heat.
  • In a medium bowl whisk together the flour with the cocoa powder, salt and baking soda.
  • Stir the brown and granulated sugars and vanilla into the chocolate mixture with a wooden spoon. Add the eggs and beat vigorously until fully incorporated and the batter is thick and glossy. Fold in the dry ingredients until just incorporated.
  • Spoon the brownie batter into the cupcake liners, coming about three-quarters of the way up the sides. Set aside.
  • For the cheesecake topping: Using an electric mixer, beat together the cream cheese with the granulated sugar, sour cream, vanilla and egg until well incorporated. Put half of the cheesecake topping into a pastry bag or resealable plastic bag. Use a bit of pink food coloring to dye the remaining topping; place into a second pastry bag.
  • Snip the tips of the pastry bags and pipe 3 to 4 medium dots of each color on top of the brownie batter. Use a toothpick to gently swirl the cheesecake batter and cover the brownie batter completely. Bake for about 15 minutes, then cool completely.
  • For the buttercream frosting: Sift the confectioners' sugar into a medium bowl. In a mixer fitted with the paddle attachment, beat the butter on medium-high until smooth and light, about 1 minute. Add all but 1/4 cup of the confectioners' sugar and mix on low just to combine. Add the vanilla and increase the speed to high; beat until light and fluffy, 1 to 2 minutes. (Add more confectioners' sugar or a bit of milk depending on how stiff or loose you want the frosting.)
  • Remove the brownies from the pan and decorate with the buttercream frosting and candy or cookies as desired.

These are the epitome of soft, dark baked-just-until-barely-set brownies. Their creamy texture makes them seem wildly luxurious and very much a treat to be meted out in small servings (just small enough for a scoop of ice cream and some chocolate sauce). The mixing method is unorthodox for a brownie. Half of an egg-sugar mixture is stirred into the melted chocolate and butter, while the other half is whipped until it thickens and doubles in volume. The lightened eggs are folded into the chocolate with a delicate touch, as are the dry ingredients--tricks that enhance the brownies' lovely texture."

1 1/4 cups sifted all-purpose flour
1 teaspoon salt
8 ounces unsalted butter
4 ounces unsweetened chocolate, coarsely chopped

Steps:

  • Center a rack in the oven and preheat the oven to 350°. I bake them at a lower oven temp of 330°.
  • Sift the flour and salt together; set aside.
  • Melt the butter and chocolate together in a medium saucepan over low heat, stirring frequently and keeping a watchful eye on the pot to make certain the chocolate doesn't scorch (Alternatively, you can melt the ingredients in the top of a double boiler over, not touching, simmering water.) Add 1 cup of the sugar to the mixture and stir for half a minute, then remove the pan from the heat and stir in the vanilla.
  • Pour the mixture into a large bowl.
  • Put the remaining 1 cup sugar and the eggs into a bowl and mix or whisk by hand just to combine.
  • Little by little, pour half of the sugar and eggs into the chocolate mixture, stirring gently but constantly with a rubber spatula so that the eggs don't set from the heat.
  • Fit the whisk attachment to the mixer and whip the remaining sugar and eggs until they are thick, pale, and doubled in volume, about 3 minutes.
  • Using the rubber spatula, delicately fold the whipped eggs into the chocolate mixture.
  • When the eggs are almost completely incorporated, gently fold in the dry ingredients.
  • Pour and scrape the batter in to an unbuttered 9-inch square pan.
  • Bake the brownies for 22-26 minutes, during which time they will rise a little and the top will turn dark and dry.
  • Cut into the center at about the 22-minute mark to see how the brownies are progressing: they'll be perfect if they're just barely set and still pretty gooey.
  • They're still awfully good on the other side of set, so don't worry if you miss the moment on your first try.
  • Cool the brownies in the pan on a rack.

That perfect balance of chocolate and cheesecake, what more can you ask for! I will tell you I was a bit concerned after making the brownies for the recipe. The 8x8 pan of brownies took longer to bake, by like 15 minutes. When we tasted the brownies as we cut and used the following day, they weren't "the best brownies I had ever had". HOWEVER... they are the perfect brownie for this recipe. They totally work for their intended purpose here.

8 ounces bittersweet chocolate or 8 ounces semi-sweet chocolate
1 cup unsalted butter
1 1/2 cups all-purpose flour
1 teaspoon salt
6 extra large eggs
2 cups sugar
1 tablespoon pure vanilla extract
3 (8 ounce) packages cream cheese (full fat only)
1 1/3 cups sugar
3 tablespoons cornstarch
1 tablespoon pure vanilla extract
2 extra large eggs
2/3 cup heavy cream, plus
1 tablespoon heavy cream, for brushing
2 ounces bittersweet chocolate or 2 ounces semi-sweet chocolate
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350 degrees. Generously butter the bottom and sides if a 9-inch springform pan and an 8 inch square baking pan. Line the baking pan (but not the springform pan) with parchment paper, leaving 1 inch overhang on the sides. Wrap the outside of the springform pan with aluminum foil, covering the bottom and extending all the way up the sides.
  • To make the brownies, melt the chocolate with the butter and let cool. In a small bowl, combine the flour and salt. In a large bowl, beat the eggs with an electric mixer on high until light yellow and thick, about 3 minutes. With the mixer still running, gradually add the sugar, then the chocolate mixture and the vanilla. Reduce the speed to low and blend in the flour mixture just until it disappears.
  • Spread 2 cups of the batter in the springform pan to make the crust and the rest in the baking pan. Bake just until set around the sides, about 10 minutes for the crust and 25 minutes for the baking pan. (The centers will be slightly soft.) Let cool on wire rack for 1 hour. Leave the brownie crust in the springform pan. Life the brownies out of the square pan onto a plate, using the paper hanging over the sides as handles. Cover both the crust and the square of brownies with plastic wrap and refridgerate overnight.
  • Cut the square of brownies with a serrated knife into 1 inch squares and set aside. Put one package of the cream cheese, 1/3 cup of sugar, and the cornstarch in a large bowl. Beat with an electric mixer on low until creamy, about 3 minutes, scraping down the bowl several times. Blend in the remaining cream cheese, one package at a time, beating well after adding each one. Beat in 2/3 cup of the cream just until completely blended. Don't overmix. Transfer 1 cup of the batter to a small bowl and set aside for the chocolate swirls.
  • Cover the chocolate brownie crust in the pan with small brownie bites (12 to 16), covering as much of the crust as possible. Use only one layer of brownie bites in order to leave plenty of room for the cheesecake batter. (Eat the rest of the brownies!) Gently spoon the white batter over the brownie bites.
  • Now make the chocolate swirls. Melt the chocolate and stir into the reserved white batter until completely blended. Using a teaspoon, drop the chocolate batter on top of the white batter, pushing it down slightly as you go. Usinga thin, pointed knife, cut through the batter a few times in a swirling "figure 8" design, just until chocolate swirls appear.
  • Place the cake in alarge shallow pan containing hot water that comes to about 1 inch up the sides of the springform. Bake until the edges are light golden brown and the top of the cake has golden and dark chocolate swirls, about 75 minutes. Remove the cake from the water bath, transfer to a wire rack and let cool 2 hours. DO NOT move it. Leave the cake in the pan, cover loosely with plastic wrap, and refridgerate until completely cold, at least 4 hours or preferably overnight.
  • To serve, release and remove the sides of the springform, leaving the cake on the bottom of the pan. Place on a cake plate. Brush the remaining 1 tablespoon of cream in a 1 inch border around the top of the cake. Sprinkle the nuts over the cream, pressing the nuts down gently, making a 1 inch border around the top outside edge. refridgerate until ready to serve. Slice with sharp, straight edged knife, NOT a serrated one. Cover any leftover cake and refridgerate.
