This is a wonderful holiday or party side dish with red and green Christmas colors. Great make ahead too.

2 (10 ounce) packages frozen chopped spinach
1/4 cup breadcrumbs
2 eggs, beaten
1/4 cup minced green onion
4 tablespoons butter, melted
1/4 cup grated parmesan cheese
1/2 teaspoon minced garlic
1/8 teaspoon dried thyme
1/8 teaspoon black pepper
1/4 teaspoon salt
9 -10 slices tomatoes, 1/2-inch thick
1/2 teaspoon garlic salt

Steps:

  • Cook spinach and drain thoroughly.
  • In a bowl, place spinach, bread crumbs, green onion, eggs, melted butter, Parmesan, garlic, thyme, pepper, and salt.
  • Mix well to blend thoroughly.
  • Arrange tomato slices on a baking sheet and sprinkle lightly with garlic salt.
  • Spoon 1/4 cup spinach mixture on each, shaping into a dome.
  • Bake at 350° for 15 to 20 minutes, until set and heated through.
  • Can be assembled ahead and refrigerated.
  • If cold, bake 25 to 30 minutes.
  • As an alternate, you can also pile the spinach mixture on cooked artichoke bottoms.

1 pound trimmed spinach
1 ounce chopped garlic
2 ounces olive oil
2 ounces anise-flavored liqueur
Salt and freshly ground black pepper
8 ounces heavy cream
4 ounces Parmesan
30 oysters, on the half shell

Steps:

  • Preheat the oven to 400 degrees F.
  • Saute spinach and garlic in olive oil. Deglaze with liqueur and season with salt and pepper, to taste. Add cream and Parmesan. Fill oysters with spinach mixture. Bake for 10 minutes.

2 (10 ounce) packages frozen spinach
3/4 cup herb seasoned stuffing mix
1/2 cup butter
2 small onions, finely chopped
1/2 cup fresh grated parmesan cheese, divided
2 eggs, beaten
1 teaspoon garlic powder
1/8 teaspoon dried thyme
Tabasco sauce
6 slices firm beefsteak tomatoes (1/2-inch-thick)
1/4 teaspoon black pepper
salt

Steps:

  • Preheat oven to 375 degrees F.
  • Cook the spinach using package direction; drain.
  • In a large saucepan over low heat, combine the spinach, stuffing mix, butter, onions, 1/4 cup Parmesan cheese, eggs, garlic powder, thyme, and Tabasco sauce.
  • Cook for approximately 25 minutes, stirring frequently.
  • Remove from heat and cover to keep warm.
  • Sprinkle both sides of the tomato slices with pepper and salt.
  • Arrange in a single layer in a large baking dish.
  • Bake 10 minutes; remove from oven.
  • Transfer tomato slices to individual serving plates.
  • Using an ice cream scoop, mound some of the spinach mixture on top of each tomato slice.
  • Sprinkle additional Parmesan cheese over the top.
  • Serve immediately.

Steps:

  • Cook spinach according to package, drain. Combine spinach, stuffing, butter, onion, cheese, eggs, garlic, thyme, and Tabasco in a saucepan and mix well. Cook over low for 25 minutes, stirring. Remove form heat. Cover and keep warm.
  • Sprinkle both sides of the tomatoes with pepper, and salt. Lay in a single layer in baking dish. Make at 375 for 10 minutes. Put a pile of spinach mixture over each tomato. May sprinkle additional parmesan cheese over the top. Serve immediately.

2 packages frozen chopped spinach
4 tablespoons butter
2 tablespoons all-purpose flour
2 tablespoons chopped onion
1/2 cup evaporated milk
1/2 cup spinach liquid
1 (6-ounce) roll jalapeno cheese, cut into small pieces
1 teaspoon Worcestershire sauce
1/2 teaspoon black pepper
3/4 teaspoon celery salt
3/4 teaspoon garlic salt
Ground red pepper
Salt

Steps:

  • Cook spinach according to directions on package. Drain and reserve liquid. Melt butter in a saucepan over low heat. Add flour, stirring until blended and smooth, but not brown. Add onion and cook until soft but not brown. Add evaporated milk and reserved spinach liquid slowly, stirring constantly to avoid lumps. Cook until smooth and thick; continue stirring. Add the cheese, Worcestershire, black pepper, celery salt, garlic salt, red pepper, and salt, to taste. Stir until melted. Combine with cooked spinach. This may be served immediately or put into a casserole and topped with buttered bread crumbs. This flavor is improved if the latter is done and kept in the refrigerator overnight. This may also be frozen.
