COPYCAT WHOLE FOODS JUMBLE NUT COOKIES
The ultimate large, soft, and chewy everything cookie! Filled with almonds, chocolate, cranberries, oats, raisins, walnuts, and white chocolate.

Steps:
- In the bowl of an electric stand mixer fitted with the paddle attachment, cream together the sugars and butter. Scrape down the sides.
- Add egg and vanilla. Mix on medium until combined. Scrape down sides.
- In a medium mixing bowl, whisk together the salt, cinnamon, nutmeg, baking powder, baking soda, flour, and oats.
- With the mixer on low, add the flour mixture all at once. Mix on low until almost combined. Add in the chocolate chips, white chocolate chips, raisins, cranberries, almonds, and walnuts. Mix on low or with a spatula until combined and no more flour is visible.
- Chill the bowl with the dough in the refrigerator for at least two hours.
- Preheat the oven to 350 degrees F. Line two large baking sheets with parchment paper.
- Scoop 5 tablespoon portions of chilled dough on to the parchment paper lined baking sheets. Press each ball of dough gently with the palm of your hand to flatten into a cookie disc.
- Bake the cookies for 14-15 minutes until golden around the edges. Let cookies cool on sheet.

- Preheat oven to 350 degrees .
- In a bowl, beat butter and sugars until light and fluffy .
- Add egg .
- Combine flour and baking soda; blend into creamed mixture .
- Stir in M & M's baking bits, raisins and nuts .
- Drop rounded tablespoonfuls (1 1/2 inch balls) about 2 inches apart onto greased cookie sheets .
- Bake 13 to 15 minutes .
- Cool 2 to 3 minutes on cookie sheet before transferring to wire racks to cool thouroughly .
- Store in tightly covered container .
JUBILEE JUMBLE COOKIES
This light, cake-like cookie with a delicious glaze (I prefer it without nuts). We only make these during Christmas time, but you can make these whenever.

- For Cookies: Preheat oven to 375º. Mix shortening, sugar, and eggs thoroughly. Blend in sour cream and vanilla. Combine flour, salt, and baking soda in a separate bowl, then add to the mixture. Mix thouroughly and chill dough if too soft to handle. Drop rounded teaspoons full of dough onto a greased cookie sheet approximately 2 inches apart. Bake for 10 minutes or until there are no more imprints in the dough.
- For Glaze: Melt butter until golden brown, remove from heat. Mix in powdered sugar and vanilla. Add hot water to obtain glaze consistency; glaze should spread/flow smoothly on cookies(Should not be as thick as for icing). Glaze cookies.
JUMBLES
Steps:
- Grease two baking trays. Preheat oven to 400 degrees F (205 degrees C).
- In a large bowl, cream the butter or margarine with a wooden spoon until soft, but not oily. Add the sugar, and continue beating until light and fluffy. Beat in the egg. Sift and add the flour. Add in the grated lemon rind and the almonds.
- Form the mixture into three rolls, each about 1/5 inch wide. Cut these into 4 inch long pieces, and form them into 'S' shapes.
- Place on baking trays. Bake for about 12 minutes, or until risen and pale brown. Cool for a few minutes, then transfer to a wire rack.

JUMBLE BISCUITS
Get your doublet and hose ready for a right Tudor knees-up. These traditional Tudor biscuits are flavoured with prized spices - caraway, aniseed and mace.

Steps:
- Line two large baking trays with baking parchment.
- Place the caraway seeds in a spice grinder or a pestle and mortar and grind to a powder. Sieve the caraway, flour, aniseed and mace together into a bowl.
- Rub the butter into the flour until it resembles fine breadcrumbs, then stir in the sugar and lemon zest. Add the eggs and bring the mixture together to form a soft dough.
- Divide the dough into four balls weighing 65g/2½ and four balls weighing 85g/3oz (you might have a little leftover). Place the dough balls on one of the prepared trays, cover with cling film and chill in the fridge for 30 minutes.
- Preheat the oven to 180C/160C Fan/Gas 4.
- Knead the four smaller pieces of dough on a lightly floured surface and roll using your fingertips into a 30cm/12in rope. Knot into double knots and place on one of the lined trays.
- Shape the remaining four larger pieces of dough into long ropes and cut away a quarter of each rope. Lay out (as pictured) into Celtic knots, using the reserved dough to make the rings that sit on top. Place them directly onto the other lined tray. (The double knots will take an extra 5-10 minutes longer to bake, so don't mix shapes on the baking trays.)
- Brush with beaten egg and sprinkle with caster sugar. Bake the Celtic knots for 15-20 minutes, until golden-brown and the double knots for 20-25 minutes. Remove from the oven and leave to cool on a wire rack.
OATMEAL JUMBLE COOKIES
I combined a favorite bar recipe and cookie recipe to come up with these cookies. They stay chewy and keep well.

- In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses and vanilla. Combine the oats, flour, baking powder, salt and cinnamon; gradually add to creamed mixture and mix well. Stir in walnuts, chips and cranberries., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until edges are lightly browned.
