This recipe was given to me by my friend Julie. She doubles the recipe and actually cans it in mason jars which she gives to family & friends as hostess gifts. When I made it I tripled it and I would fill jars 3/4 of the way and freeze them. I have also made it with cream sherry. We serve it over whole wheat angel hair pasta. Yum.

2 tablespoons olive oil
1 large sweet onion (chopped)
1 garlic clove (minced)
28 ounces italian crushed tomatoes (canned)
6 ounces tomato paste
28 ounces water
2 teaspoons italian seasoning
1 teaspoon sugar
1/2 cup Burgundy wine
salt & pepper (to taste)

Steps:

  • Saute onion and garlic in olive oil until tender (not brown).
  • In large dutch oven place all ingedients mixing well.
  • Bring to boil; reduce to low and simmer for 2-hours; stirring occasionally.

JUDI'S TEXAS PICANTE SAUCE (CANNING RECIPE OR NOT!)



Judi's Texas Picante Sauce (Canning Recipe or Not!) image

This is a recipe I've developed for my family that is pretty similar (but not quite the same) to the most popular picante sauce on the grocery store shelves here in Texas. We had an abundance of tomatoes and onions from our garden this year and I put up 31 quarts of this stuff, which won't last long because everyone in my family begs me for jars of this spicy, delicious sauce. We eat it virtually everyday at my house, and my uncle likes it so well he eats it out of the jar with a spoon! It's not overly hot, as my 75-year-old mother eats it and it doesn't bother her at all. It has just enough bite, but doesn't bite you back. This recipe is developed for canning, and weighing the main ingredients will give you the same product each time you make it. If you skip the cook time you will have a fresh-tasting salsa that is also great to eat. You can, of course, eat it once it has cooked for the 15 minutes or you can can it to put up. It's great either way, but each tastes different. This is a little work, but well worth the effort and puts all those wonderful tomatoes to use. Hope you enjoy it as much as my family does.

3 lbs ripe peeled, cored, seeded tomatoes (reserve juice from the seeding)
1 lb onion, roughly cut into large pieces (makes processing easier)
1/2 lb jalapeno (stems removed, cut lengthwise, leave seeds and membrane)
1/4 cup white vinegar
2 teaspoons salt
1 1/2 teaspoons garlic powder
1 tablespoon dried cilantro
6 ounces tomato paste (regular can, thickens the tomato juice and adds some extra flavor)

Steps:

  • Starting with just the tomatoes place half the tomatoes and juice in food processor and process until a fairly small texture, but not pureed. Repeat with second half. Then process all the onions and the jalapenos in a single batch. I do all of this with an electric food grinder instead of a food processor and I use the 1/8-inch plate to get the correct ground texture and size, but a food processor will give you the same results.
  • Combine processed tomatoes, onions and jalapenos in a 4-quart pot with the remaining ingredients. Adjust the salt and seasonings to your taste.
  • Bring the mixture to a boil and simmer for 15 minutes Remove from heat and fill 5 clean pint canning jars or 2 quart and 1 pint jar with the heated sauce. Wipe the rims and seal with lids and rings. Boil in a water bath, with 1 inch of water covering the lids, for 45 minutes. Carefully remove the processed jars from the water bath and place on a clean towel and cool jars for at least 12 hours. Label, date and store in a cool, dry place for up to a year.

1 (28 ounce) can tomato sauce
28 ounces water
1 medium yellow onion, minced
2 fresh jalapeno peppers, with seeds,minced
1/4 cup white vinegar
1 teaspoon salt
1 tablespoon dried onion flakes
1/2 teaspoon garlic powder

Steps:

  • Bring all ingredients to a boil in saucepan over med-high heat.
  • Reduce heat and simmer for 30 minutes or until thick.
  • Remove from heat and cool.
  • Store in an airtight jar in refrigerator until serving.

3/4 cup mayonnaise
2 tablespoons cider vinegar
2 teaspoons sugar
1/2 teaspoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper

Steps:

  • For the sauce, mix all ingredients in blender until smooth, about 1 minute.
  • Refrigerate sauce in airtight container for at least 1 hour or up to 2 days.
  • Nice on BBQ grilled chicken.
  • Can reserve some sauce, before you put it in contact with the raw chicken, to pass with the grilled chicken after.

1 tablespoon olive oil
1 lb mild Italian sausage
1 sweet onion, chopped
2 (6 ounce) cans tomato paste
1 (28 ounce) can crushed tomatoes
1 garlic clove, minced
1 tablespoon parsley (fresh is preferable)
1 dash kosher salt
1/2 teaspoon italian seasoning
1 teaspoon sugar
3 tablespoons red wine
1/4 cup grated parmesan cheese
4 1/2 ounces sliced mushrooms, drained (optional)
2 1/4 ounces sliced olives, drained (optional)
1 carrot, finely shredded (optional)

Steps:

  • Remove sausage from casings and break up as you brown it in oil with the onion. Drain grease.
  • Add tomate paste and stir into well. Then add remaining ingredients, except parmesan.
  • If you add the carrot it adds a nice depth of flavor without being visible or taste-able. (The kids will never know.).
  • Cover and bring to a gentle boil on medium heat. Stir in parmesan cheese and mushrooms and olives if using them. Add more spices if desired.
  • Serve over pasta.

My mom got this recipe from her friend Norma in Sault Ste Marie. This Spagetti Sauce is fantastic and it makes lots. Be prepared to freeze what you can not use right away. (I divide the sauce into three freezer friendly containers so that I can use it for three different pasta meals without having to thaw the whole batch). Expect to spend the better part of the day doing making this. Your efforts will be rewarded, I get so many compliments that I make a pot just to give it to family members as a Christmas gift. Tip - add chilli powder, hot sauce and kidney beans and voila, it's a chilli !

2 (1 3/8 liter) cans tomato juice
1 (16 ounce) can crushed tomatoes
1 (680 ml) can tomato sauce (large can)
2 tablespoons oregano
2 tablespoons basil
2 chopped garlic cloves
2 tablespoons parsley
1 (369 ml) can tomato paste (or two small cans)
1 chopped onion
1 chopped green pepper
chopped mushroom
salt
pepper
2 lbs hamburger
2 chopped garlic cloves
1/4 teaspoon dried chili
2 carrots
3 bay leaves

Steps:

  • In a LARGE pot add: the two large cans of tomato juice, the lage can of crushed tomatoes and one large can of plain tomato sauce and let simmer on med.
  • In frying pan: put a little oil, oregano, basil, garlic cloves, and parsley.
  • Be sure not to burn. Add to sauce and don't clean the pan.
  • In frying pan: one large can of tomato paste (or 2 small cans), fill each can with water and add to paste. Heat and add to sauce.
  • In frying pan: put a little oil, chopped onion, chopped green pepper, chopped mushrooms, salt and pepper to taste. Saute and add to sauce.
  • In frying pan: brown 2 lbs hamburger, garlic cloves, salt and pepper to taste, dried chili peppers to taste (not to many). When meat is brown add to sauce.
  • In sauce: add 2 carrots (peeled and sliced big) add 3 bay leaves.
  • Simmer 4 hrs, stirring occasionally.

1/2 cup chopped onion
jalapeno, minced (to your taste, I use 3)
1 clove garlic, minced
1 tablespoon peanut oil
2 tablespoons tomato paste
1 cup tomatoes, peeled and chopped
1 3/4 cups chicken broth
1 teaspoon sugar
1/2 teaspoon salt
1 teaspoon vinegar
1 tablespoon flour

Steps:

  • Saute onion, garlic, and hot peppers in oil until the onion is trasparent, but not browned.
  • Add tomato paste and chopped tomatoes.
  • Simmer about 2 minutes; add broth, sugar, salt and vinegar.
  • Simmer until the tomatoes are cooked, then puree in a blender.
  • Re-heat and thicken lightly with flour mixed with 1-2 Tablespoons cold water.
  • Cook, stirring, until sauce comes to a boil.
  • Remove from heat.
  • Top rellenos with sauce.

1 cup white vinegar
3/4 cup sugar
30 ounces tomato paste

Steps:

  • Cut all vegetables and run through food processor .Put all ingredients in a large pot and cook for at least 30-40 min or until desired consistency ( I usually cook it longer) After it is done you can either process it in a hot bath or put it containers and freeze it.
