PITMASTER WINGS WITH ALABAMA WHITE BARBECUE SAUCE
Steps:
- For the wings: Preheat a grill to 300 degrees F.
- Combine salt, brown sugar, chili powder, garlic powder, onion powder and black pepper in a mixing bowl. Reserve 1 teaspoon for the barbecue sauce, then add hot sauce and chicken wings and mix by hand until fully incorporated. Allow wings to marinate at room temperature for 1 hour or refrigerated up to 24 hours.
- For the Alabama white barbecue sauce: Place mayonnaise, vinegar, gochujang, salt, Worcestershire, mustard powder, cayenne, black pepper, garlic, ginger and reserved spice mix in a food processor or blender and puree until completely smooth. Transfer to a serving dish and refrigerate until ready to serve.
- Grill wings, turning every 10 minutes to prevent the sugars from burning, until they reach an internal temperature of 165 degrees F, about 1 hour. (Be sure to take the temperature on both the drummettes and flats, as they have different cooking times.) Serve with Alabama white barbecue sauce.
WHITE BBQ SAUCE (ALABAMA STYLE)
Steps:
- Whisk together the mayonnaise, vinegar, lemon juice, honey, horseradish, onion powder, pepper and salt to taste in a medium bowl.

- For the sauce, mix all ingredients in blender until smooth, about 1 minute.
- Refrigerate sauce in airtight container for at least 1 hour or up to 2 days.
- Nice on BBQ grilled chicken.
- Can reserve some sauce, before you put it in contact with the raw chicken, to pass with the grilled chicken after.

GRILLED CHICKEN PIZZA WITH ALABAMA WHITE SAUCE

- Mix together all the ingredients for the sauce until well combined; set aside.
- Preheat grill to 400 degrees F.
- Brush olive oil on both sides of the pizza crust. Place the crust top side down on the grill and grill for 2-3 minutes. The crust should just start to brown. Carefully remove from grill and flip over.
- Spread the sauce on the cooked side of the crust and top with chicken, tomatoes and then cheese.
- Place back on the grill and grill for 2-3 minutes. Move pizza to indirect heat and finish grilling another 4-5 minutes or until the cheese has melted and is nice and bubbly. Carefully remove from grill and allow to cool. Add chopped basil, slice and serve. Enjoy!

- Mix all ingredients together and refrigerate for 8 hours for best result (you can use it pretty quickly however in a pinch). Brush lightly or marinate over chicken, turkey or pork. If brushing lightly do last few minutes of grilling. Can be used as a dipping sauce as well.
- This amount easily covers 6 pieces of chicken so you can adjust accordingly if you are marinating or just brushing it on.

ALABAMA WHITE BBQ SAUCE
This recipe is a variation of Steve Raichlen's. It is amazing on chicken and can be added at the very end. I used this on slow smoked chicken pieces that were smoked in hickory, rubbed with just salt and pepper and basted with a little olive oil.
