CELERIAC REMOULADE
Steps:
- Cut the celeriac in half through the top and slice each half into 1/8- inch thick slices. Cut the slices, stacked 2 or 3 together into 1/8 inch wide julienne. In a mixing bowl, toss the julienne with the lemon juice. In another mixing bowl combine the mayonnaise with the mustard and season to taste with salt and pepper. Stir this sauce with the celeriac and parsley. Taste and adjust seasoning.

Julienne Salad is a delicious low carb lunch or light dinner. What could be healthier than a platter of sliced meats, cheeses, vegetables and leafy greens? It is simply dressed with a tangy lemon Dijon vinaigrette.

Steps:
- Make the dressing- combine the ingredients in a jar or bottle with lid. Shake well, taste for seasoning. Store in refrigerator until ready to serve salad.
- Wash, chop and dry the lettuce. Wash and slice all vegetables.
- Slice the meats and cheeses.
- To serve: Remove dressing from refrigerator and let it warm to room temperature. Shake to mix.
- Place the lettuce on a large platter and layer the veggies, meats and cheeses on top.
- Pass dressing with the salad. Enjoy!

- Combine the mayonnaise, mustards, lemon juice, salt and pepper. Mix and thin with the cream.
- Peel the celery root and cut into julienne strips about one-eighth inch thick and one inch long. Add the celery root to the mayonnaise and toss well. Leave to marinate in the refrigerator for at least an hour or more before serving. When ready to serve, sprinkle with parsley.
