MOM'S CHEESY MACARONI SALAD

Steps:
- Cook macaroni and cheese dinner as directed on package.
- Let cool.
- Meanwhile, in a bowl, combine green onions, celery, green pepper, and if desired eggs.
- Add macaroni dinner.
- Toss lightly to combine.
- In a seperate bowl, combine sweet relish, mustard, and salad dressing.
- Stir to mix thoroughly.
- Add to macaroni and vegetable mixture.
- Toss lightly.
- Sprinkle with shredded cheese, and season with salt and pepper.
- Toss lightly, but thoroughly together.
- Chill for 4-6 hours.

Steps:
- Combine all ingredients except butter and onion rings. Shape into patties. Melt butter in skillet over medium to med-high heat. Fry in melted butter until desired doneness, about 10-12 min per burger.
- Remove and keep warm. Fry onion rings in pan drippings until golden. Place burger on bun, with whatever condiments you like. Put fried onion on top of burger, enjoy!

A family favorite that on busy days I cook completely in the microwave. On days that I have more time I may finish by baking in the oven.

Steps:
- Melt butter in 1 quart glass measure on full power for 45 seconds.
- Stir in flour, salt, and pepper to make a paste.
- Slowly whisk milk into measure and cook on power level 8 for 6 to 8 minutes or until thickened. Stir several times as it thickens.
- Mix in cheese and stir until melted.
- Mix the cheese sauce and macaroni together in a greased 1 1/2 quart casserole.
- Top with bread crumbs and paprika.
- Cook on full power for 3 minutes or until bubbling.
- If you would like you could bake in the oven on 350°F for 20-25 minutes or until bubbling and golden brown.

- Preheat oven to 350 degrees Fahrenheit. Melt butter in large saucepan over medium-high heat.
- Stir in flour, salt, dry mustard and pepper until smooth. Gradually stir in milk and heavy cream, stirring continuously until thickened, about 10 minutes.
- Remove from heat. Stir in cheeses (a little at a time) and mix until smooth and cheese has melted.
- In a large bowl, pour cheese mixture over macaroni, mixing well. Place mixture into a greased 9x13 baking pan. Sprinkle seasoned bread crumbs on top. Bake for 25-30 minutes.

Steps:
- In saucepan over low heat, mix flour and butter together until blended, making a roux. Cook about 3 minutes. Blend in chicken stock and milk. Continue to cook on low about 6 minutes. When sauce begins to thicken, add garlic, mustard, sea salt, pepper, colby and Parmesan cheeses, and add 3 cups of cheddar cheese (reserve 1 1/2 cups cheddar for topping). Cook about 5 more minutes on low. Set sauce aside while macaroni cooks.
- In a pot over high heat, bring water to a boil, and add salt. After salt dissolves, add macaroni. Cook about 8 minutes, stirring occasionally. Drain macaroni noodles, and add them to the sauce.
- Place mixture in buttered casserole dish, and top with 1 1/2 cups shredded cheddar cheese. Bake at 375 F about 30 minutes or until it reaches an internal temperature of 165°F.

- Preheat oven to 350 degrees F and have ready a 8 inch round deep sided baking dish. An equivalent size will do.
- In a large saucepan set over medium heat the olive oil and about half of the garlic. Stir for a minute and add the leeks. Cook, stirring occasionally for about 5-8 minutes. Remove leeks from pan and reserve pan.
- In the reserved saucepan set over medium to high heat, melt butter with remaining garlic until sizzling. Whisk in flour until you have a paste. Gradually start whisking in your milk. Continue doing this until you have added all the milk and you have a slightly thickened sauce. Reduce heat to medium low and add most of the cheese, reserving a little for the top. Stir really well until all the cheese has melted into the sauce. Season with a little bit of salt and pepper and add the oregano. Stir and remove from heat.
