JUICY BARBECUED CHICKEN THIGHS RECIPE
These BBQ chicken thighs are so tender and flavorful. I love that you can prep them ahead of time and just toss 'em on the grill when you're ready; making them perfect for parties. You'll want to marinate the chicken at least 6 hours and it's best to let them marinate overnight.

Steps:
- Season both sides of chicken thighs to taste. I used a total of 1 tsp sea salt, 1/4 tsp pepper, 1 tsp Mrs. Dash Seasoning, 1/2 tsp garlic powder. Turn the chicken to coat evenly with seasoning.
- Stir in 1 Tbsp Mayo and mix the chicken until evenly coated.
- Add thick-sliced onion and toss everything together. Cover tightly with plastic wrap or a lid and marinate 6 hours or overnight.
- Preheat the grill and generously brush grill plates with oil. Reduce heat to low and place chicken thighs with a smooth side up.
- Cover the grill and cook for 12-15 minutes. I rotated them once to make criss-cross grill marks. Before flipping the thighs, baste them with BBQ Sauce.
- Flip thighs over, baste the flip side with BBQ sauce then cover and cook for another 12-15 minutes, rotating once to make grill marks. Check for doneness by cutting the thicker part of the chicken. If juices run clear then its done. Flip the chicken again, coat it with BBQ sauce and remove from the grill. Let the chicken rest for 5-10 minutes before serving.
- Place Chicken thighs flat with the smooth side up on a large rimmed baking dish, spaced out in a single layer. Bake at 400˚F for 30 mins.
- Increase heat to 450 and Remove chicken from oven to brush the tops and sides generously with BBQ sauce. Return chicken to the oven another 5 minutes or until glaze has dried slightly onto the chicken.
JUICY CHICKEN
This chicken is a variant on the popular Japanese snack yakitori. It makes the juiciest chicken I've ever tasted. If you are using bamboo skewers, soak them in water for 30 minutes before using so they do not catch on fire.

- In a small saucepan, combine the soy sauce, sherry, chicken broth, ginger, garlic powder and green onions. Bring to a boil, and immediately remove from heat. Set aside.
- Preheat your oven's broiler. Thread chicken pieces onto metal or bamboo skewers. Arrange on a broiler pan that has been coated with cooking spray. Spoon 1 or 2 tablespoons of the sauce over each chicken skewer.

BEST EVER BBQ CHICKEN
The BBQ sauce on this juicy grilled chicken is out-of-this world! We "wow" people with this recipe every summer during outdoor entertaining. I always double the sauce recipe to have extra on the side for dipping. The original recipe calls for 2 small boiler chickens quartered but we prefer using bone-in, skin on chicken breasts. Slow cooking on the grill gives it the best flavor. I hope you enjoy this as much as we do - it's a favorite at this house.

- In a saucepan, saute the garlic in butter until tender.
- Add the next 8 ingredients.
- Bring to a boil, stirring constantly.
- Remove from the heat and set aside.

- Preheat the oven to 300 degrees F.
- Cover the chicken with plastic wrap or place in a large resealable bag. Pound the chicken to an even thickness with a meat mallet or the bottom of a heavy skillet. Sprinkle the chicken liberally with salt and pepper.

- Preheat your grill by turning it on as high as it will go for a few minutes.
- After it's heated, turn one side off and one side on medium low or low.
- Clean the grates and lightly dip a paper towel in oil and brush the grate, holding the paper towel with tongs.
- Using a pastry brush, brush one side of the chicken with a light layer of BBQ sauce and place that side down over the heated part of the grill.
- Brush the top side with BBQ sauce.
- Cook with the lid down until grill marks are just starting to appear, if your grill is the correct temperature this should take about 5 minutes.
- Brush top with another light layer of BBQ sauce, flip and brush again.
- Continue this process of brushing with BBQ sauce and flipping the chicken about every 5 minutes until the internal temperature reaches 160 degrees F. This will take about 20 minutes.
- When the internal temperature is 160 degrees, brush with a final layer of BBQ sauce and turn the grill off.
- Let rest for 5 minutes with the lid down on the side of the grill where the heat was off originally. After 5 minutes, the internal temperature should register 165 degrees F.

- Combine water, kosher salt, and sugar in a resealable zip-top bag; add chicken breasts. Remove air from the bag, seal, and refrigerate for 30 minutes.
- Remove chicken from the bag; discard brine. Return 1 chicken breast at a time to the bag, partially seal, and pound with a rolling pin or similar object until thickness is even. Transfer to a plate and continue with remaining chicken breasts.
- Return chicken to the bag and add olive oil, vinegar, paprika, garlic, lemon zest, oregano, chili powder, thyme, and black pepper. Seal and let marinate in the refrigerator for 30 minutes.
- Remove chicken from the marinade and rest on a plate for 10 to 15 minutes.
- Meanwhile, preheat an outdoor gas grill for high heat and lightly oil the grate. Turn 1 burner off and keep the other on high heat.
- Grill chicken over the mid-point on the grill for 2 minutes, then rotate 90 degrees and cook for 2 minutes more. Flip and proceed the same way on the other side until browned and no longer pink in the center, 4 to 5 minutes total. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Move to the cooler part of the grill if you need to cook a little longer.
- Tent chicken with foil and let rest for 5 to 10 minutes before slicing and serving.

- For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (if you've only got 15 minutes, that's fine) to allow the salt and seasonings to penetrate the chicken.
- Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme and cook slowly 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly without coloring for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving along side the chicken at the table. The rest of the barbecue sauce will be used for basing the legs.
- Preheat oven 375 degrees F.
- Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry on paper towels. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce.
JUICY GRILLED CHICKEN BREASTS
We had the family over for a Fourth of July BBQ, and I wanted to serve grilled chicken breasts that tasted really chicken-y! So I came up with this marinade that is almost like a brine. These chicken breasts were a hit with the family! Very juicy and flavorful. The Honey-Mustard Glaze was very subtle and accented the chicken nicely. I didn't add any additional salt because, for us, the broth and McCormick seasoning are salty enough. Feel free to play around by using other herbs, as well.

- Place first 6 ingredients in a gallon-sized plastic zipper bag then add the chicken breasts to the marinade. Seal the zipper bag, getting as much air out as possible.
- Marinate for at least 24 hours in the refrigerator.
- Grill chicken breasts over medium heat until done. Discard the used marinade. While chicken is cooking, stir the glaze ingredients together in a bowl. When chicken breasts are nearly done, brush both sides with the glaze then cook for 1 more minute to set the glaze.
- Enjoy!
- Cooking times are approximate and do not include marination time :).
- I'm sure this would also work for baked chicken breasts, but I have not yet tried it.
