JOLLOF RICE
This staple dish in West Africa has hundreds of variations! It is claimed by many West African countries as "our own", yet it is widely made in Senegal, Nigeria, the Gambia, Sierra Leone, Liberia, Ghana, the Ivory Coast, and neighboring countries. Jollof Rice has many incarnations: it can be made with red meat, fish, chicken or seafood, and it's also often made with whatever seasonal vegetables are available. Jollof rice as a dish has one good thing in common: it's always made in one cooking vessel! You'll have to decide about the rice: some recipes use 4 cups raw rice, which is really a lot (maybe too much for the Western way of eating). It is therefore not a recipe with exact ingredients and quantities.

Steps:
- Heat the oil in a very large pan, soup pot, or large wok. Stir-fry the chicken pieces until browned on all sides. Remove the pieces from the vessel and keep aside.
- Add the onions, salt and pepper, hot pepper (to taste), garlic, thyme, ginger and cinnamon to the pot. Give it a stir and let it start cooking. Add the rice, chopped tomato, peppers, carrots and green beans to the pot.
- Stir the tomato paste into the broth/water, and add to the pot. (Remember to calculate the liquid according to the number of cups of rice you use).
- Bring all this to a boil, and simmer. About halfway through cooking this, add the chicken back into the pot.
- Cover (can cook uncovered as well) and cook over a low heat until the rice and vegetables are cooked. Stir the stew occasionally, carefully, to prevent burning at the bottom. If necessary, add a few glugs more liquid during cooking.
- Can be garnished with sliced hard-boiled eggs.

WEST AFRICAN JOLLOF RICE
West African Jollof Rice is superb! My parents are nigerian. I grew up eating this rice and every eaten at every party where the host is west african. Every west african country has its own version, however this is the best! Enjoy!

- Method.
- Add oil and butter in a heat resistance pot, then add the chicken breast, paprika, cayenne, onion, celery, green pepper, garlic and ginger. Saute for about 3 minutes.
- Add the chopped carrots next and saute for a minute with little salt.
- Add the tomato paste, tomatoes along with curry powder, bay leaf & thyme. Cook until tomatoes get slightly soft. For about 3 minutes until you see the oil getting red. Then add frozen veggies. . Add the rice next. Saute for another 2 minutes or so.
- Add 3 cups of vegetable stock/water, bouillon cube, required salt,close the lid and cook until 90% cooked, for about 30 minutes.
- Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer.
- If rice is still lil hard, add 1/4 cup water and cover with foil, which will allow it to steam through. Check back at 5 min and It should be ready. You want your rice not too soft.
- Garnish with cilantro/parsely and serve.

Steps:
- Season chicken with salt and black pepper.
- In a large frying pan, heat oil over medium-high heat for 4 to 5 minutes.
- Add chicken pieces and brown on both sides.
- Place chicken in a kettle and set aside.
- Add onions and salt pork to oil in frying pan and saute until onions are trans- parent.
- Add onions and pork to kettle.
- Set frying pan aside. (Do not discard oil.).
- Add bouillon cubes, red pepper, thyme, 1-1/2 cups water, and tomato paste to kettle and stir well.
- Simmer over low heat for about 10 minutes.
- Add rice to frying pan and stir to coat with oil.
- Add rice and vegetables to kettle, stir well, and cover.
- Cook over low heat 35 to 40 minutes or until vegetables and rice are tender.
GHANA JOLLOF RICE (WITH CHICKEN AND HAM. FULL MEAL!)
In Jollof, the rice is cooked along with other ingredients, rather than as a separate starch. Jollof contains just about everything you need for a one-dish meal. I think this recipe is so flavorful and delicious. I find myself going back for seconds of the rice with veggies. Don't skip the cabbage (unless your really hate cabbage) because it really adds flavor to the rice. Yum!! I omit the ham. Recipe from chef Angela Shelf Medearis.

- Pour the water into a large pot. Add the chicken, tomatoes, salt and pepper. Cover and bring to a boil. Reduce the heat and simmer for 30 minutes.
- Stir in the ham, rice, onion, cabbage, green beans, cinnamon and cayenne pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer until the chicken is fork-tender and the rice is cooked - about 25 to 30 minutes. *You can choose to simmer it longer if you want to cook out more of the liquid. It's up to you. Enjoy!
AFRICAN SIERRA LEONE JOLOF RICE
Tasty dish with ham hock, chicken, stewing beef with spices and rice. This is medium heat recipe add more chile and cayenne if you like it more spicy.

- Put ham hock in deep pot with chicken bouillon and beef bouillon and simmer covered for an hour. While hock is simmering, heat oil in heavy stew pot and brown chicken and beef. Remove from pot and reserve. Saute onions and garlic for a few minutes. Add tomatoes, tomato paste, chilies, salt and cayenne. Stir and cook for 5 minutes. When ham hock is tender, remove it from bouillon, discard skin and bones and return pieces of ham to bouillon. Add bouillon, ham and beef to stew and simmer covered for an hour. Add chicken and simmer covered for another 15 minutes. Add rice. Stir well. Cover and simmer for another 20 minutes or until rice is cooked and chicken tender. Let stand for 15 minutes before serving so rice will absorb the liquid. Prepare cabbage and eggplant and pumpkin by boiling or steaming and serve as side dishes.

Posting this for ZWT 2006, this is a West African entree rich dish that I myself can't wait to make; it sounds really good and not difficult at all. Don't let the long directions throw you; it is mostly browning and stirring steps.

Steps:
- Dry the chicken and beef with paper towels and sprinkle with salt and pepper.
- In a large heavy bottomed pan over moderate heat, heat 3 tbsp of the oil until a drop of water sizzles when dripped into it; brown the chicken in the oil a few pieces at a time until golden brown, turning as needed; when done transfer to a plate and set aside.
- Add the last 3 tbsp of oil to the pan and brown the beef in it, turning them frequently until they are well browned; add them to the chicken and set aside.
- Pour off all but a thin film of fat from the pan and add the onions; stirring up the browned bits from the meat, stir and cook the onions until soft and lightly browned; do NOT burn as it will add an acrid taste to the finished dish.
- Add the tomatoes, tomato paste, garlic, chili pepper, ginger and bay leaf.
- Raise the heat to high and still stirring cook for five minutes or until most of the liquid has evaporated and the mixture is thick enough to hold its shape almost solidly in a spoon.
- Stir in the broth and water and return the beef to the pan; add the ham and turn the meats in the sauce until the pieces are evenly coated.
- Bring to a boil again then reduce the heat to low and simmer partially covered for 30 minutes.
- Add the chicken and any liquids around it, baste it with the sauce and let it simmer for ten minutes longer; then gently stir in the rice.
- Return the mixture to a simmer, cover partially and cook for 20 to 30 minutes or until the beef is tender and almost all the liquid in the pan has been absorbed by the rice.
- Remove the pan from the heat, cover tightly and let rest for 15 minutes before serving.
- Jollof rice is traditionally served with hot boiled cabbage or spinach and slices of hard boiled egg.
