Peanut butter stands in for butter and oil in this quick bread - and also makes for an indulgent glaze.

Cooking spray
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 cup smooth peanut butter
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
3 very ripe bananas, mashed
1/3 cup smooth peanut butter
3 tablespoons unsalted butter
1 tablespoon confectioners' sugar, sifted
3 tablespoons honey-roasted peanuts, chopped

Steps:

  • For the bread: Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
  • Whisk together the flour, baking soda, cinnamon and salt in a medium bowl.
  • Beat together the peanut butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until smooth. Beat in the egg and vanilla, then fold in the mashed banana. Add the flour mixture, and beat on medium-low until just combined (it's OK if there are some lumps).
  • Transfer the batter to the prepared loaf pan, and bake until the bread is golden brown and has split at the top and a toothpick inserted in the center comes out clean, 1 hour 10 minutes to 1 hour 20 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. (You can tent the bread with foil if it begins to brown too quickly.)
  • For the glaze: When the bread has cooled, combine the peanut butter, butter and confectioners' sugar in a medium microwave-safe bowl, and microwave in 30-second increments, stirring after each, until smooth. Let the glaze sit until it has stiffened up a bit but is still spreadable. Spread over the top of the bread, and sprinkle the peanuts on top. Let sit for 10 minutes to set up before slicing. The bread can be stored at room temperature in an airtight container for up to 3 days.

1 cup mashed ripe bananas (2 to 3 medium)
3/4 cup Jif® Extra Crunchy Peanut Butter
3/4 cup Milk
1/4 cup Canola Oil
1 large egg

Steps:

  • 1. HEAT oven to 350º F. Grease 9 x 5 x 3-inch loaf pan.
  • 2. COMBINE flour, sugar, baking powder and salt in large bowl. Add banana, peanut butter, milk, canola oil and egg. Beat at medium speed of electric mixer, scraping sides and bottom of bowl. Mix just until blended.
  • 3. BAKE at 350º F for 60 to 65 minutes or until toothpick inserted in center comes out clean. (Cover top loosely with foil after 45 minutes to prevent over-browning.)
  • 4. COOL 10 minutes in pan. Remove to cooling rack.

Combine the flour, salt and baking soda; add to creamed mixture. , Transfer to a greased 9x5-in. loaf ban. Bake at 350° for 70-75 minutes or until toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

1 cup white sugar
2 eggs
½ cup peanut butter
2 bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a large mixing bowl, cream together butter and sugar. Add eggs; beat well. Stir in peanut butter, bananas, flour and baking soda until blended. Fold in walnuts. Pour into prepared pan.

A nice variation on a classic food. This recipe was inspired by Banana Bread (with a twist) #17180 posted by Barb Talkington. This does not take the place of regular banana bread, but I recommend it for a break from the beaten path. You can also successfully make this into muffins. Reduce the bake time accordingly.

2 cups whole wheat pastry flour or 2 cups white flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/2 teaspoons baking powder
2/3 cup sugar
4 teaspoons peanut butter
4 teaspoons vegetable oil or 4 teaspoons shortening
2 eggs
1 cup mashed banana (, three or four)
1/2 cup milk
1 teaspoon vanilla

Steps:

  • Preheat the oven to 350°F and grease a 9x4-inch loaf pan.
  • In a large mixing bowl, combine the sugar, peanut butter and oil or shortening and mix until uniform.
  • Add the mashed bananas and beat in the eggs.
  • Stir in the milk and vanilla.
  • In a separate bowl, combine the dry ingredients and mix well.
  • Add the dry ingredients to the wet ingredients, and stir just until all dry ingredients are moistened.
  • Turn into the greased loaf pan and bake for approximately 40 to 45 minutes, or until a toothpick inserted into the middle of the loaf comes out clean.
