Jicama Salad with Cucumber and Lime image

A nice change from the standard green salad, this crunchy jicama side dish incorporates chopped cucumber, freshly squeezed lime juice and a dash of salt and spice. The longer the salad sits, the more flavorful it becomes. A perfect compliment to fresh grilled fish or a plate of black beans and rice.

2 tablespoons lime juice
1/8 teaspoon chile powder
1 medium cucumber, peeled, seeded, and cut into 1/2-inch cubes
1 medium jicama, peeled and cut into 1/2-inch cubes
cayenne pepper
1/2 teaspoon fine sea salt

Steps:

  • Put lime juice, chile powder, cucumbers, jicama, cayenne, and salt into a large bowl and toss well.
  • Cover and refrigerate for at least 1 hour before serving.

Crunchy Jicama and Mango Salad with Chile and Lime image

1 medium jicama (about 1 pound)
2 small cucumbers
3 medium mangoes
1/4 cup roughly chopped cilantro leaves, plus sprigs, for garnish
2 teaspoons powdered dried chile - any medium heat kind is fine
2 limes, juiced
Kosher salt

Steps:

  • Peel and cut the jicama into long thin strips. Slice the cucumbers in half, scoop out the seeds and then cut into strips similar in size to the jicama strips. Peel the mangoes, cut the cheeks off, then slice into wedges. Combine all the ingredients in a large mixing bowl with the chopped cilantro, powdered chile and lime juice. When ready to serve, season with a little salt and garnish with fresh cilantro sprigs.

  • In a large bowl, combine the jicama matchsticks, cucumber quarters, and avocado pieces. Squeeze lime juice and sprinkle chili powder over vegetables, and mix until everything is well coated. Enjoy!

This is a really great cucumber salad that's light and flavorful and makes a great starter! Tastes fine as it is, but can be salted and peppered to taste, if desired. Just remember to add all ingredients and mix before adding in the tomatoes, as they are extremely delicate and do not withstand stirring very well once they are cut.

  • Stir cucumber, jicama, lemon zest, and lemon juice together in a bowl until salad is evenly mixed. Gently fold tomatoes into salad.

⅛ teaspoon cayenne pepper, or more to taste

Steps:

  • Toss jicama, red pepper, mango, and red onion together in a large bowl. Set aside.

This salad is excellent with any meal. It is crisp and refreshing. I like it because you can prepare it well in advance of the meal.

1 jicama (1 1/4 to 1 1/2 lbs)
1 small cucumber, unpeeled
1/2 cup red onion, slivered
2 tablespoons fresh lime juice
1/2 teaspoon grated lime rind
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon dried chili
3 tablespoons lite olive oil
green leaf lettuce (enough to dress the edges of the bowl)

Steps:

  • Pare the Jicama; cut lengthwise into 8 wedges; cut wedges crosswise into 1/8" slices.
  • Cut cucumber lengthwise and scoop out the seeds.
  • Cut halves crosswise into 1/8"slices.
  • Combine Jicama, Cucumber And Onion in a large bowl.
  • Toss lightly.
  • Mix lime juice, lime rind,garlic, salt, and chili in a small bowl.
  • Gradually add oil continuously whisking until thoroughly blended.
  • Pour dressing over Jicama mixture, toss lightly to evenly coat the salad.
  • Refrigerate 1-2 hours , covered, to blend the flavors.
  • Just before serving line a shallow salad bowl with the lettuce leaves and spoon salad on top.

1/2-1 teaspoon sea salt (to taste)
1/8 teaspoon dried chipotle powder or 1/8 teaspoon chili powder
1 dash cayenne pepper
