Thanks to a new wave of modern day cave-people, eating healthy, high-protein snacks is all the rage, and while you can find many artisan brands out there, making your own is fun, easy, and using this method, relatively quick. Have your butcher slice the beef for you.

Steps:
- Whisk Worcestershire sauce, soy sauce, paprika, honey, black pepper, red pepper flakes, garlic powder, and onion powder together in a bowl. Add beef to bowl and turn to coat beef completely. Cover the bowl with plastic wrap and marinate in the refrigerator, 3 hours to overnight.
- Preheat oven to 175 degrees F (80 degrees C). Line a baking sheet with aluminum foil and place a wire rack over the foil.
- Transfer beef to paper towels to dry. Discard marinade. Arrange beef slices in a single layer on the prepared wire rack on the baking sheet.
- Bake beef in the preheated oven until dry and leathery, 3 to 4 hours. Cut with scissors into bite-size pieces.

- In a small bowl or cup, mix together the onion powder, garlic powder, and some cracked black pepper. Season the meat lightly, using only part of the mixture. Reserve the remaining spices. Place into an airtight plastic container or bowl, and refrigerate.
- In a saucepan over medium heat, mix together the brown sugar, soy sauce, teriyaki sauce, Worcestershire sauce, balsamic vinegar, liquid smoke flavoring and pineapple juice. Heat until the brown sugar has completely dissolved. Refrigerate marinade until cool.
- Pour cooled marinade over the seasoned meat, and mix by hand to coat. Seal the bowl, and refrigerate for at least 3 hours.
- Arrange the beef strips on the rack of a dehydrator, and sprinkle with a little bit more of the spice mixture and red pepper flakes if using. Dry for 5 hours, or to your desired dryness.

SIMPLE DIY BEEF JERKY
This homemade beef jerky is savory, slightly spicy, and is easy to make with simple ingredients.

Steps:
- Thinly slice the meat* and cut off all visible fat.
- Pound slices with a meat tenderizer mallet until pieces are uniform thickness (aprox nickel width).
- Place the beef strips in a zip-top bag. Mix remaining ingredients and pour over beef.
- Cover & marinate for 12-36 hours. Shake the bag a few times as it's marinating to make sure the beef is evenly coated.
- Spread the meat in a single layer, shaking off any excess marinade, on the dehydrator trays.
- Dry at 165F/74C for 4-6 hours, occasionally blotting off any fat droplets that appear on the surface. Test using a cooled piece. Properly dried jerky, when bent, should crack but not break.
- Package jerky in and air-tight container or vacuum seal (*see storage notes below). Store in a cool, dark & dry place.

- In a bowl, combine the 1lb of ground beef with the other ingredients
- Mix the ground beef and seasonings thoroughly
- If using a jerky gun, load the gun with the ground beef mixture & shoot 4-5" long strips onto a dehydrator tray or on a baking sheet
- If not using a jerky gun, spread the ground meat on a baking sheet, cover with wax paper, and roll with a rolling pin until meat is 1/4" thick
- Slice the pan of beef into jerky strips 4-5" long and 1" thick
- Dry with your favorite jerky making method. I used a dehydrator at 160F for 3 1/2 hours
- Ground jerky is finished when it first starts becoming dry to the touch. It should bend without breaking in half. If it cracks in half when bent a little bit, it was over dried

- Cut off any excess fat on the slab of beef. Slice the beef into 1/8th inch slices, against the grain. Place in a large gallon zip bag.Add all remaining ingredients to the bag. Zip and massage to mix well. Chill for at least 45 minutes, but up to 24 hours.Preheat oven to 175ºF. Line 3 large rimmed baking sheets with foil. Place a metal rack over the foil on each pan.Lay the beef in a single layer across the racks. Bake for 3 to 4 hours, checking at the 3-hour mark for texture. Let a tester piece cool, then tug and taste. If it's perfect take all the beef jerky out of the oven. (Bake 2-3 hours in a convection oven.)Store in an airtight container at room temperature for 1 to 2 weeks.

- Cut the beef leg into strips no thicker than 2 3/4″ (7 cm). Place them in a brine with 1/3 cup (80 g) of salt per 4 1/5 cups (1 liter) of water. Leave for 7 days in a refrigerator or in a room with a temperature up to 46°F (8 °C). On the seventh day, remove it and desalt for 4 hours in a large container under running cold water.
- Remove the meat from the water, pierce from one end with a thick thread and allow to drain for about an hour. Place the drained beef between 2 boards and fasten firmly with a wide, tight rubber band.
- After 1 day, remove it and thoroughly smear both sides (with a brush if possible) with a special seasoning for jerky, made from 3 tablespoons paprika , 1 1/3 tbsp (20 g) salt, 2/5 tsp (2 g) sugar, 1 tsp oregano , 1 tsp fenugreek, 15 grains finely ground black pepper, 15 grains ground fenugreek seeds, 6 cloves pressed garlic, the strained juice of a medium lemon and 3 1/3 tbsp (50 ml) of red wine .
- Mix all of this in a suitable container and gradually add the white wine to obtain a homogenous mixture with the density of a runny sauce. Hang the spiced meat to dry in a ventilated area for 24 hours, then place it between the boards again and fasten with the elastic.
