JERK SPICED PUMPKIN / SQUASH VOL AU VENTS

Jerk Spiced Pumpkin / Squash Vol Au Vents image

This recipe is from the cookbook "The Accidental Vegetarian" by Simon Rimmer where is was originally titled Jerk-spiced pumkin pie. (But to my American ears, it sounded like dessert...) This makes an excellend savory main dish and you can adjust the spices to your tastes.

  • Divide mixture between pastry shells and warm in the oven for about 5 minutes.
  • Curry Sauce:.

  • Slice the plantain thinly and fry in oil until golden on each side.
  • To serve, put a filled pastry shell on a plate, spoon on some curry sauce and top with a few slices of plantain. Garnish with some fresh green herbs such as cilantro.

CHICKEN AVOCADO AND MUSHROOM STUFFED VOL-AU-VENTS

Chicken Avocado and Mushroom Stuffed Vol-Au-Vents image

This is so simple to make and very yummy, I usually serve this in the really large vol-au-vent shells, but I could not get any, so I had to serve in medium ones. These are not ideal as you can not get much filling into them, I ended up pouring some of the filling over after taking a photo, so we were not eating just pastry cases with no filling, which is ok but does not look the most appealing. I usually buy the 12.5cm cases just so you can get an idea of the size compared to the ones in the photo.

Categories     Chicken Breast

Time 50m

Yield 4 serving(s)

Number Of Ingredients 11

4 (12 1/2 cm) pastry vol-au-vent cases (read note above with regards to the ones used in the photo.)
olive oil
700 g chicken breasts, cut into chunks
3 garlic cloves, crushed
300 g mushrooms, sliced thinly
1 leek, sliced thinly
1 (60 g) packet cream of chicken soup (The one I buy makes up 1 liter)
2 cups milk
1 cup chicken stock or 1 cup vegetable stock
1 teaspoon dried tarragon
1 large avocado, chopped

Steps:

  • Pre-heat oven to 180 degrees Celsius.
  • Heat oil in a pan cook chicken in batches until browned, remove and set to one side.
  • Heat a little more oil in the same pan, add leeks, garlic and mushrooms, cook until leeks and mushrooms have softened, return chicken to pan and removed from heat.
  • In a saucepan whisk soup powder with milk and stock, bring to the boil to thicken, stir in tarragon. (my packet mix requires one more cup of liquid than I use, so that I end up with a thicker version than a soup, to use as the sauce, so bear this in mind.).
  • Pour soup mix into pan with chicken and mushroom mix, stir to combine, gently stir in avocado.
  • Place spoonfuls of chicken mix into pastry cases, bake in oven for about 5-8 Min's until hot.
  • I served our with honeyed carrots and buttered spinach.

OYSTER VOL-AU-VENTS

Oyster Vol-Au-Vents image

These tasty appetisers are made from bottled oysters in a béchamel sauce which are the filling for vol-au-vent pastry cases. Such appetisers were extremely popular in Australia, long before the many patés, cheeses and dips which are now so popular had even appeared on our culinary horizons. A tad old-fashioned perhaps, but still delicious. When I checked on Zaar there were very few similar recipes, so perhaps it was just here that they were so popular. This is another recipe I have adapted from the Australian publication by Reader's Digest of a book jam-packed with traditional Australian recipes: 'Family Recipe Scrapbook: tried and trusted recipes for today's cooks'. I bought the book in preparation for the 2005 Zaar World Tour, so I could track down familiar recipes I've eaten often. What I love about the recipes in this book is that from whatever decade past they belong, they have been updated to suit C21st tastes. The 20 minutes cooling time is not included in the preparation and cooking times below. The proportions in the recipe are for 24 (38x12mm) vol-au-vent cases.

Time 30m

Yield 24 Oyster Vol-au-vents

Number Of Ingredients 13

1 cup milk
1 small bay leaf
2 slices onions, thin slices
5 black peppercorns
1 small celery rib, sliced
30 g butter
1 1/2 tablespoons plain flour
sea salt, to taste
fresh ground white pepper, to taste
1 pinch nutmeg
24 small bottled oysters, drained
24 small vol-au-vent cases
1 tablespoon chives, to garnish

Steps:

  • Pat the oysters dry with paper towels and set aside.
  • Prepare béchamel sauce by combining the milk, bay leaf, onion, peppercorns and celery in a small, heavy-based saucepan, over a medium heat until bubbles form around the edge of the saucepan. Remove from the heat and stand at room temperature for 15 minutes to cool. Strain and reserve the milk.
  • Melt the butter in a small saucepan until hot and bubbling. Add the flour and stir constantly for 1 minute. Remove from the heat and gradually add the milk, whisking constantly to avoid the sauce from becoming lumpy.
  • Return the saucepan to the heat and cook the sauce, stirring constantly on a medium-high heat until it comes to the boil and thickens. Season to taste with salt, pepper and nutmeg.
  • Preheat the oven to 200ºC.
  • Spoon 1 teaspoon of béchamel sauce into the base of each vol-au-vent case, top with an oyster and spoon over a little extra béchamel sauce.
  • Bake in the oven for 8-10 minutes, or until the pastry is crisp and hot. Just before serving, sprinkle with chopped chives.
  • Note: These vol-au-vents can be prepared a few hours in advance and put in the oven just before they are required.

  • Shrimp Vol-au-Vent. I should probably start with this: there’s no need to make puff pastry from scratch for any of these recipes. Store-bought, frozen puff pastry will do just fine, and in most larger stores, you can even buy vols-au-vent pre-made.
  • Mushroom and Sausage Vols-au-Vent. These might not look as appealing as the recipe above, but get a load of the ingredient list! Ground sausage, onions, diced cremini and portobello mushrooms, cream cheese, parmesan, and lots of herbs and spices.
  • Brie and Cranberry Vol-au-Vent. If you love a sweet and savory profile as much as I do, these bite-sized vols-au-vent will make your taste buds go wild.
  • Chicken and Mushroom Vol-au-Vent. If you’re in the mood for something earthy and creamy, you can’t beat chicken and mushrooms. This vol-au-vent is made extra special by a rich buttery roux, adding a level of luxury you won’t want to share.
  • Turkey Vol au Vent Shells. Let’s take a moment to appreciate how stunning this vol-au-vent is. It’s incredible how a simple scattering of pomegranate arils can make a dish look breath-taking, don’t you think?
  • Strawberry Vol-Au-Vent Dessert. My goodness, this strawberry vol-au-vent is a thing of beauty! Think strawberry and whipped cream parfait, but instead of a glass, it’s layered inside a hollowed-out, cronut-like puff pastry cup.
  • Homemade Mushroom Vols Au Vent. Garlic mushrooms will always be a hit, but you might want to watch your fingers when adding a cream sauce to the mix because I don’t think these will last long!
  • Shrimp Etouffee Vol au Vents. Here’s another seemingly complicated dish, but again, don’t let its name intimidate you. Let’s break this down, shall we?
  • Prawn and Avocado Vol-au-Vents. If your goal is to impress classy party guests, this vol-au-vent recipe is the ticket. First of all, look how pretty! These puff pastry apps definitely got that elegant look down.
  • Bouchée à la Reine (Vol-au-Vent) Classic vols-au-vent (or more formally known as bouchee a la Reine) use a filling of pureed poultry. While that sounds good, let’s go ahead and use bacon instead.
