Taxi Stand Jerk Chicken With Pineapple Mango Salsa image

This recipe for jerk sauce is courtesy of Ray's Hideaway Restaurant and Taxi Stand, Montego Bay, Jamaica. It's fiery, but not incendiary, full of flavor, and worth the effort to make it. I got the recipe from The Early Show on CBS. The chicken needs to marinate 4-8 hours so start early. :D

1/3 cup red onion, chopped
4 green onions, green and white parts chopped
1/2 cup olive oil
1/2 cup water
2 limes, juice of
1/4 cup soy sauce
1/2-1 scotch bonnet pepper, stemmed, seeded, and chopped (more or less to taste)
3 large garlic cloves, coarsely chopped
1 cup ketchup
2 tablespoons allspice
1 teaspoon nutmeg
1 teaspoon cinnamon
2 tablespoons ground ginger
1 teaspoon dried thyme
4 (4 -6 ounce) bone-in skinless chicken breasts
1 cup fresh pineapple, chopped
1 cup fresh mango, chopped
2 tablespoons red onions, chopped
1 tablespoon jalapeno, minced (more or less to taste)
1/4 cup fresh cilantro, chopped
1/4 cup lime juice
salt
pepper

Steps:

  • In a food processor or blender, combine the red onions, green onions, oil, water, lime juice, soy sauce, Scotch bonnet chiles, garlic, ketchup, allspice, nutmeg, cinnamon, ginger, and thyme and process until a smooth paste forms. Set aside.
  • Wash the chicken breasts and pat dry. Using rubber gloves cover each breast with the jerk paste.
  • Place the chicken in a zip lock plastic bag and refrigerate for 4 to 8 hours.
  • Prepare a charcoal or gas barbecue for indirect grilling, placing a drip pan under the cool side of the grill rack. Preheat to 350ºF.
  • Make sure the grill rack is clean and oil it thoroughly with nonstick cooking spray.
  • Remove the chicken from the bag and move to the prepared grill rack over direct heat.
  • Cook for 5 minutes per side, then move the chicken to the cool side of the grill and cook for 10 to 15 minutes longer per side, until the internal temperature reaches 160ºF.
  • Remove the chicken from the grill and let stand for 10 minutes, covered.
  • Meanwhile, prepare the salsa by combining the pineapple, mango, red onion, jalapeno, cilantro, and lime juice in a food processor and pulsing 3 or 4 times until the ingredients are chopped, but still chunky.
  • Remove to a bowl, season with salt and pepper, and set aside.
  • Serve each breast topped with a generous portion of salsa. Enjoy!

1 (2 1/2 lb) pork tenderloin
1/2 cup finely chopped onion
1/3 cup finely chopped scallion (4 to 6 scallions)
1/4 cup firmly packed fresh thyme leave, and tender stems chopped
4 garlic cloves, finely chopped
2 tablespoons fresh orange juice
2 tablespoons fresh lime juice
1 -3 scotch bonnet peppers or 1 -3 habanero pepper, seeded and minced, depending on taste
1 tablespoon finely chopped fresh ginger
2 teaspoons ground coriander
2 teaspoons fresh ground black pepper
1 teaspoon ground allspice
1 dash cumin
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 cups fresh pineapple, chopped
1 fresh mango, chopped
1 kiwi, chopped
1/3 cup purple onion, chopped
1/4 cup fresh cilantro, chopped (or to taste)
1 tablespoon fresh ginger, chopped fine (or to taste)
1 tablespoon lime juice
1 tablespoon rum (or to taste)
1 tablespoon jalapenos (or to taste) or 1 tablespoon poblano pepper, chopped fine (or to taste)

Steps:

  • DIRECTIONS.
  • Combine the Jerk Spice ingredients in a small bowl and mix to form a coarse paste. Or blend in food processor.
  • Coat pork tenderloin and Marinate at least 4 hours or overnight. The longer it marinates, the more flavor the pork absorbs.
  • Pineapple Mango-Kiwi Salsa.
  • Put all in a bowl, mix it up, and let it sit for a little bit to allow the flavors to mingle.
  • Grill tenderloin, covered, over indirect medium heat for 10 minutes each side.
  • Juices should run clear or temperature 160 degrees.
  • Let roast sit about 10 minutes to let juices settle.
  • Slice and serve with Pineapple Salsa.

Many years ago, I saw a couple of old Food Network shows where jerk chicken was made and accompanied by various fruits. I took notes and created this meal after several attempts to get it to fit my taste. It is funny to look back to my original recipe, as I actually used Vegetable Oil because I was too cheap to buy Olive Oil. I think we can all conclude that the Olive Oil tastes much better :)

4 boneless pork chops, thick cut
1/2 cup olive oil
1 small red onion, roughly chopped
3 scallions, roughly chopped
1 habanero pepper, stem and seeds removed
1 tablespoon ginger, freshly grated
3 garlic cloves
2 tablespoons red wine vinegar
1 tablespoon dark brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg, fresh ground
1/4 teaspoon clove, fresh ground
1/2 teaspoon allspice, ground
1 lime, juiced
1 teaspoon salt
1 teaspoon black pepper, freshly ground
2 mangoes, peeled, cored, and diced
1/4 cup red onion, minced
2 tablespoons cilantro, fresh chopped
1 lime, juiced
1 tablespoon orange juice
salt, to taste
pepper, to taste

Steps:

  • Wash and Pat dry the Pork chops. Place in a glass or plastic shallow dish (for marinating).
  • Mix together all of remaining jerk ingredients in a blender or food processor until a smooth puree is accomplished. Pour the jerk sauce over the pork chops and marinate for up to 24 hours. Reserve about 1/4 cup of the mixture for basting.
  • Grill Pork Chops until cooked to the desired doneness. Baste with the reserved jerk sauce while grilling.
  • In the meantime, mix together the Mango salsa ingredients. You can also add some Pineapple to the mixture.
  • Serve the Salsa on top of the Pork Chops on a pretty plate for your dinner guests.

1 teaspoon olive oil
1 (1 1/4 lb) pork tenderloin, trimmed
2 teaspoons easy caribbean jerk seasoning
cooking spray
1/2 cup finely chopped onion
2 cups finely chopped fresh pineapple (about 1/2 cored pineapple)
1 tablespoon dark brown sugar
1 tablespoon cider vinegar
1/8 teaspoon salt
1 dash fresh ground black pepper

Steps:

  • To prepare pork, combine first 13 ingredients in a blender; process until smooth. Place green onion mixture in a large zip-top bag.
  • Add pork to bag; seal. Marinate in refrigerator 8 hours or overnight, turning occasionally.
  • Prepare grill.
  • Remove pork from bag; discard marinade. Place pork on a grill rack coated with cooking spray; grill 23 minutes or until a thermometer registers 155° or until desired degree of doneness. Let pork stand 10 minutes.
  • Slice pork into 1/2-inch-thick slices.
  • To prepare relish, combine pineapple and remaining ingredients in a bowl, stirring well. Serve with pork.
