MOM'S CHRISTMAS JELLO BALLS

- Add the thick cream to a mixing bowl, along with the Jello powder. Stir well to combine.
- Add 1 1/2 cups of the desiccated coconut to the mixture and stir to combine.
- Roll the mixture into 1 tablespoon-sized balls. Roll the balls into the remaining coconut to coat.
- Place balls onto baking sheet and refrigerate for 2 hours.

I have made this good treat for the kids and they always loven them. These popcorn balls are great for the holidays and they can be colored in red for Valentine's, green for St. Patrick's, orange for Halloween, green and red for Christmas, etc. The orange and strawberry are the flavors the kids like the best.

Steps:
- Place popped popcorn in a large bowl, lightly buttered.
- Bring the corn syrup and jello mix to a boil in a saucepan.
- Boil over medium heat until mixture separates into a hard thread when dropped into very cold water, about 6 to 7 minutes.
- Remove from heat and pour over popcorn, mixing quickly to coat well. Let stand for about 3 to 5 minutes and with your hands buttered, shape into 1-1/2 inch balls.
- NOTE: these balls can also be made using Kool-Aid unsweetened drink in any flavor instead of the Jell-O, and it is the same procedure.

MARY'S JELLO POPCORN BALLS

- In a mixer, combine the softened cream cheese with the powdered sugar. Scrape the sides of the mixing bowl and mix until fully combined (and not sticky!). Add more powdered sugar if it's a really hot day and the cream cheese is being temperamental and melting. Separate the mixture into 4 small bowls. Add 1 tablespoon of various powdered Jello to each bowl and mix with a spoon. Pull off small 1/2 inch pieces of the mixture and roll them into balls. Press the balls into a slightly flat shape (seen in the photos below) and then roll it into a bowl of sugar. Store in an airtight container and refrigerate in until ready to eat.
