This is a little different salad..I guarantee you will get requests for this one..even people in my family who are not fond of beets go for this!!

Number Of Ingredients 8

Ingredients

3 ounces sugar-free lemon gelatin
1 cup boiling water
1 teaspoon salt
2 tablespoons ground horseradish
2 tablespoons vinegar
1 tablespoon chopped onion
1/2 cup beet juice
1 1/2 cups diced beets

Steps:

Mix gelatin and boiling water and stir till gelatin is dissolved.
Add all other ingredients except beets and chill till slightly thickened.
Fold in beets and spoon mixture into a lightly oiled mold.
Chill thoroughly.
At serving time, turn onto a chilled plate.and serve with a sauce of equal parts of mayonnaise and sour cream or yogurt.
NOTE***I use reduced fat products in this.

Don't like beets? This tasty salad may just change your mind! It's a miracle I was able to snap this photo... I couldn't stop eating it!

Ingredients

1/2 c sugar
1/2 c vinegar
1 c beet juice
2 tsp mustard seed
1 Tbsp grated onion
1 c diced celery
2 Tbsp chopped green pepper
1 c beets (shoe string variety) reserve juice
1 pkg lemon jello

Steps:

1. Combine in pan: sugar, vinegar and beet juice from can of beets. Bring to a boil. Take off burner after it starts to boil.
2. Add the package of lemon jello, stir and let cool.
3. ADD: Add the mustard seed, onion, celery, green pepper, and beets to jello mixture and mix well. Place in serving dish and refrigerate until jelled.
