Pineapple Upside-Down Cake With Pecans image

By substituting pecans (or other nuts) for the usual maraschino cherries, this twist on a classic upside-down cake is less sweet and crunchier than the usual recipe. Caramelizing the brown sugar in a skillet before adding the fruit gives you a particularly deep, complex flavor. Because of the moisture in the topping, you'll need to bake this cake a little longer than other, similar butter cakes. Underbaked cake will be soggy and apt to fall apart, but an ideal result will have a well-browned surface and dark, slightly crunchy edges.

4 tablespoons/56 grams unsalted butter
1/3 cup/71 grams light brown sugar
1 1/2 to 2 1/2 teaspoons freshly squeezed lemon juice (see Tip)
1/4 teaspoon fine sea salt
1 pound peeled pineapple, cut into 1/2-inch slices (3 cups; see Tip)
1/2 cup coarsely chopped pecans
1/2 cup unsalted butter, melted and cooled, plus more for greasing
1 cup/200 grams granulated sugar
1 tablespoon vanilla extract
1 teaspoon finely grated lemon zest
2 large eggs, at room temperature
1/2 cup/118 milliliters sour cream or plain whole-milk yogurt
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon fine sea salt
1 1/2 cups/195 grams all-purpose flour

Steps:

  • Heat oven to 350 degrees.
  • Make the topping: In an oven-safe 10-inch skillet, melt butter over medium heat. Add the brown sugar, lemon juice and salt, and whisk until the brown sugar melts, 1 to 2 minutes.
  • Let cook, whisking constantly, until the mixture starts to smell like caramel and darkens slightly, about 1 minute longer. (Don't walk away or the mixture may burn.) The mixture will clump and separate, but that's OK.
  • Add fruit and nuts, gently tossing to coat with the caramel. Remove from heat and arrange fruit into an even layer on bottom of skillet. Ignore any sugar clumps; they will dissolve during baking.
  • Make the cake: In a large bowl, whisk together the melted butter, sugar, vanilla and lemon zest until thoroughly combined. Whisk in eggs, one at a time. Add sour cream and whisk until well mixed. Sprinkle in baking powder, baking soda and salt into the batter, one at a time, and whisking vigorously after each addition. Using a rubber spatula, gently fold in flour until just incorporated. The mixture will be lumpy, but that's OK. Don't overmix. Scrape batter into the skillet over the fruit and spread evenly.
  • Bake until surface is deeply browned all over (with darker brown edges) and the fruit is lightly bubbling along the sides of the skillet, about 35 to 45 minutes, rotating halfway through. A toothpick inserted into cake will come out clean.
  • Once the cake is out of the oven, immediately run a butter knife or offset spatula along the edge of the skillet. Let sit for 10 to 15 minutes to cool slightly. Carefully invert cake into serving platter. If some fruit or nuts stick to bottom of the skillet, gently remove them using offset spatula or knife and place back onto cake. Let cake cool until the fruit topping sets, at least 30 minutes to 1 hour, before serving. Cake is best served on the day it is baked.

2 medium shallots, minced
1/4 cup toasted chopped pecans
1 tablespoon maple syrup
1 teaspoon chopped fresh thyme
1/8 teaspoon salt

Steps:

  • Sauté shallots in one tablespoon of the butter until caramelized and almost crisp, and allow to cool.
  • Fold all ingredients together and chill.
  • When almost firm, place flavored butter onto wax paper and roll into a log.
  • Seal in plastic wrap and refrigerate or freeze until needed (can cut off portions of the roll and keep the rest frozen).
  • Let butter soften before using for best flavor.

4 sweet potatoes
2 tablespoons softened butter
2 tablespoons brown sugar
1 1/2 tablespoons finely chopped pecans, toasted

Steps:

  • Try this method for toasting the pecans: Sprinkle chopped pecans on a paper plate and microwave on high for 1 or 2 minutes, they should smell toasted when they are done.
  • Scrub, but do not peel, the potatoes.
  • Pierce them in several places with a fork.
  • Microwave on HIGH for 12 minutes until done.
  • Meanwhile, combine the butter, sugar, and pecans.
  • Once potatoes are done, slice length wise, about 2/3 of the way down (do not cut through) and push end toward each other to "fluff" the potato and create a well for the butter.
  • Place a scoop of butter mixture into the center and wrap in foil until serving.

3 1/2 cups canned pumpkin
1 cup toasted chopped pecans
1 tablespoon pumpkin pie spice
4 1/2 cups sugar
1 box surejell fruit pectin
1/2 teaspoon margarine or 1/2 teaspoon butter

Steps:

  • Measure pumpkin, pecans and pumpkin pie spice into 6- or 8-quart sauce pan.
  • Prepare jars; keep lids hot until ready to fill jars.
  • Measure sugar into separate bowl.
  • Stir fruit pectin into pumpkin mixture.
  • Add butter.
  • Bring mixture to a rolling boil on high heat, stirring constantly.
  • Quickly stir in sugar.
  • Return to rolling boil and boil exactly 1 minute, stirring constantly.
  • Remove from heat.
  • Skim off any foam with metal spoon.
  • Ladle quickly into prepared jars, filling to within 1/8 inch of tops.
  • Wipe jar rims and threads; cover with two-piece lids.
  • Screw bands tightly; place jars in hot water.
  • Boil in water bath for 5 minutes for 8-oz jars.

5 large ripe bananas (about 1 1/2 lbs.)
29 ounces crushed pineapple with juice, drained
6 1/2 cups sugar
6 ounces liquid pectin

Steps:

  • Peel and mash the bananas, then add the pineapple to the bananas.
  • Add the sugar to the fruit mixture and pour it into a large enameled pot.
  • Stir over low heat until sugar dissolves.
  • Bring to a boil over medium heat, stirring continuously.

  • Remove from heat, stir in pectin, and stir for 5 minutes.
  • Skim and seal in hot sterilized canning jars.

Steps:

  • If roasting pecans, place on a greased cookie sheet in preheated 350 degree oven. Spread them out in a thin layer to roast evenly.
  • Roast for 5 minutes, stir, then roast for another 5 minutes until you can smell them. Take care not to scorch them!
