1/2 medium head of cabbage, shredded
4 1/2 cups fresh bean sprouts
2 cups sliced fresh white mushrooms
1/2 cup slivered almonds, toasted (see Tip)
1/4 cup raw sunflower seeds
2 tablespoons sesame seeds, toasted (see Tip)
2 green onions, chopped
1/2 cup cooking oil (or olive)
3 tablespoons white vinegar
8 tablespoons soy sauce
1 tablespoon granulated sugar
1 teaspoon salt
1/2 teaspoon pepper
1 (3 ounce) package instant chicken-flavored ramen noodles
1 1/2 cups dry chow mein noodles

Steps:

  • Put first 7 ingredients into large bowl. Toss.
  • Asian Dressing: Empty seasoning packet into jar with tight-fitting lid. Add next 6 ingredients. Shake well. Makes about 3/4 cup dressing. Drizzle over salad. Toss well.
  • Just before serving, break up instant noodles. Scatter over top. Sprinkle with chow mein noodles.

FOR THE SALAD:
1 head iceburg lettuce, small or 1/2 large head
1 bunch arugula, stemmed, rinsed, and dried
2 tomatoes, medium, fresh and ripe
2 eggs, hard-cooked, shelled
1 red bell pepper, medium, stemmed and seeded
1 cup beet, cooked, diced
2 ribs celery, medium sized, thinly sliced
1 (14-ounce) can heart of palm, drained and thinly sliced
FOR THE DRESSING:
2 teaspoons Dijon style mustard
1 tablespoon red wine vinegar, or more to taste
1 tablespoon lemon juice, fresh
1/2 teaspoon salt, or more to taste
1/2 cup olive oil, extra-virgin
1/2 tablespoon black pepper, freshly ground, or to taste

Steps:

  • 1. Core the lettuce and cut it crosswise into 1/4-inch slices. Gently toss the lettuce with the arugula in a bowl. Arrange this mixture in the bottom of 6 shallow salad bowls, mounding it toward the center.2. Cut each tomato into 12 wedges. Cut each hard-cooked egg into 6 wedges. Cut the pepper into 18 thin strips. Arrange the tomato and hard-cooked egg wedges and pepper strips on top of the lettuce in a sunburst pattern (radiating away from the center like the spokes of a wagon wheel), alternating colors.3. Drain off any liquid that may still remain on the beets and blot dry with paper towels. Mound the beets, celery, and hearts of palm in the center of each portion of salad (see Note).4. Prepare the dressing. Combine the mustard, vinegar, lemon juice, and salt in a small bowl and whisk until the salt is dissolved. Whisk in the oil and pepper. Correct the seasoning, adding salt or vinegar as necessary the salad should be highly seasoned. Pour the dressing over the salads and serve immediately.Serves 6Note: The salads can be prepared ahead to this point. Cover loosely with plastic wrap and refrigerate until ready to serve.

ITALIAN-STYLE ROAST CABBAGE WEDGES WITH TOMATO LENTILS



Italian-style roast cabbage wedges with tomato lentils image

Roast cabbage for a veggie centrepiece, with crisp, caramelised leaves on the outside and a soft, sweet centre. Serve with our Italian-inspired lentils and golden roast new potatoes

100ml extra virgin olive oil
4 garlic cloves , crushed
2 small winter green cabbages , outer leaves removed, each cut into 6 wedges
750g baby new potatoes
1 tbsp olive oil
2 lemons , zested
1 tbsp olive oil
2 onions , finely chopped
2 celery stalks, finely chopped
250g red lentils
400g can chopped tomatoes
2 vegetable stock cubes
3 tbsp sundried tomato purée
1 tbsp red wine vinegar
small bunch of basil , finely chopped, plus a few whole leaves to serve
2 tbsp olive oil
1 garlic clove , crushed
½ -1 tsp chilli flakes
3 thick slices stale crusty bread or sourdough, crusts removed then blitzed into breadcrumbs (about 120g)
1 lemon , zested
100g Kalamata olives , pitted and roughly chopped

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Bring a large pan of water to the boil and blanch the potatoes for 10-12 mins until tender, then drain and leave to cool.
  • For the cabbage, mix together the oil and garlic, rub all over the wedges, season, then spread out on a large baking tray. Roast on the top shelf for 15 mins.
  • While the cabbage is cooking, put the new potatoes onto a large baking tray and gently crush with the back of a spoon or a masher, so they split open slightly. Drizzle over the oil and some seasoning, then stir in the lemon zest. Once the cabbage has had 15 mins, put the potatoes on the top shelf of the oven and move the cabbage to the bottom. Cook for 45 mins, turning everything halfway through.
  • For the lentils, heat the oil in a medium saucepan and fry the onions and celery until soft and translucent, about 10-15 mins. Tip in the lentils, tomatoes, 450ml water, stock cubes, tomato purée and vinegar, bring to the boil and simmer uncovered for 30-35 mins, stirring occasionally until the lentils are soft and cooked through. If the mixture gets a little dry, add a splash of water to stop it sticking. Stir in the basil and an extra 50ml boiling water to loosen the mixture. Season well.
  • While the lentils are cooking, make the pangrattato. Heat the oil in a large frying pan, fry the garlic and chilli for 30 seconds, then add the breadcrumbs. Toast until golden and crunchy, then tip in the lemon zest and olives and fry for a further 3 mins. Set aside to cool.
  • To serve, spoon lentils onto each plate, put a cabbage wedge on top and sprinkle over the pangrattato. Garnish with the extra basil and serve the potatoes on the side.

This recipe came from my sister (a Home Economics teacher as they were called back in the 60's and 70's). It is as much fun as it is delicious. You line up all of the ingredients on a buffet or counter and then, adding them one by one in order, build a 14 layer dinner! This is written for 6 servings, but can be increased to serve any size crowd! The sizes are approximates since you can add more or less of each layer as you prefer. She would say you can only leave out 2 layers, but I am more flexible! : ) If this is for a party where your guests ask, "what can I bring",have them bring prepared ingredients in serving bowls and your prep time is now next to nothing!

3 cups cooked rice, served hot (1/2 cup cooked rice per serving)
2 cups chopped cooked chicken, served hot
2 cups chow mein noodles
2 cups gravy (gravy recipe ( 2 cans cream of chicken soup mixed with one can of water and heated through)
2 tomatoes, sliced
1 1/2 cups celery, chopped
1 1/2 cups green peppers, chopped
1 1/2 cups onions, chopped
20 ounces crushed pineapple, well drained
2 cups cheddar cheese, grated
2 cups gravy (same recipe as above)
1 cup slivered almonds, toasted
1 cup flaked coconut
6 maraschino cherries

Steps:

  • Line up the above ingredients, in given order, in serving bowls on a counter or buffet table. Your guests take a plate and begin building their "dinner" using the rice as the base, sprinking on as much or little of each layer, finishing with a cherry on top! We were always encouraged to try every layer, leaving off no more than 2 in case there is something you are allergic to or just do not like. It is amazing how good this is and fun to make.

1 bunch Chinese long beans (1 1/4 lb), trimmed and cut into 2-inch pieces
3 large shallots (6 oz), sliced lengthwise and fried
2 large shallots (4 oz), thinly sliced
4 large garlic cloves, thinly sliced and fried
1 tablespoon sesame seeds, toasted
2 tablespoons salted roasted peanuts, finely chopped
1 tablespoon peanut oil
Garnish: fresh cilantro leaves and lime wedges

Steps:

  • Cook beans in a large pot of boiling salted water until crisp-tender, 4 to 5 minutes. Drain, then plunge into a large bowl of ice and cold water to stop cooking. Drain beans well and pat dry.
  • Toss beans with remaining ingredients and season with salt.

5 slices bacon
3/4 cup onion, chopped
1 cup mayonnaise
1/4 cup vinegar
1 tablespoon sugar
2 tablespoons parsley flakes
1 teaspoon oregano

32 ounces kidney beans, rinsed and drained
1 cup celery, diced

Steps:

  • Cook bacon, drain and reserve 1/4 cup drippings. Saute onion in bacon drippings until tender and remove from heat.
  • Stir in mayonnaise, vinegar, sugar, parsley, oregano, salt, and pepper and mix well.
  • In a large bowl, crumble the bacon and add shredded cabbage, celery, and beans.
  • Mix well and add mayonnaise mixture. Stir well.
  • Serve chilled on crisp greens surrounded by tomato slices or as a side dish.

2 dried Thai chiles, soaked for 2 minutes in warm water, drained
3 small garlic cloves, crushed
1/4 lime, cut into 3 wedges
1 tablespoon palm sugar or granulated sugar
1 tablespoon dried tiny shrimp
9 long beans (2 1/2 ounces) or green beans, trimmed, cut into 2 1/2" lengths
2 kirby cucumbers or 1 English hothouse cucumber, coarsely chopped into 1" pieces
2 tablespoons Thai fish sauce (nam pla)
2 tablespoons fresh lime juice
6 cherry tomatoes, halved
2 tablespoons crushed roasted, unsalted peanuts

Steps:

  • Place first 4 ingredients in a clay mortar and pound with a wooden pestle until mashed into a fine paste, about 5 minutes. Add shrimp; mash until pulverized and well combined, about 2 minutes. (Alternatively, process in a mini-processor until finely chopped.)
  • Add long beans to mortar; lightly crush with pestle to bruise. Add cucumber pieces, fish sauce, and lime juice. Mix well. Add tomatoes, lightly crush, and mix in. (Alternatively, place beans and tomatoes in a resealable plastic bag. Roll a rolling pin over bag to bruise vegetables; transfer to a bowl with the cucumber, fish sauce, lime juice, and chile dressing.) Let marinate for 10 minutes. Stir in peanuts.
