JASMINE TEA RICE
A side dish of jasmine rice can complete any meal and is simple to prepare.

Steps:
- Bring 2 1/4 cups water to a boil in a medium saucepan. Remove from heat, and add tea; cover, and let steep 5 minutes. Strain; discard tea leaves, and reserve brewed tea.
- Return brewed tea to saucepan; add salt. Bring to a boil over medium-high heat. Add rice; cover, and reduce heat to low. Cook until tea has been absorbed and rice is tender, about 15 minutes. Fluff with a fork. Serve immediately.

Steps:
- Bring water, salt, and butter to a boil.
- Stir in rice with a fork.
- Bring back to a boil, then cut heat to simmer.
- Cover (do not take off lid to check on rice, or stir, you may get gummy rice, if you do!) and cook for 15 minutes.
JASMINE-TEA RICE
Steps:
- In a medium saucepan, bring 2 cups water to a boil. Place the tea in a heatproof bowl. Cover with the hot water and steep for 5 minutes. Strain through a sieve set over the saucepan and cool.
- In a large bowl, rinse the rice with cold water until the water runs clear. Drain and add to the cooled tea. Stir in the salt and let sit for 30 minutes.
- Cover the saucepan and place over medium-high heat. Bring to a boil, then reduce heat and simmer for 17 minutes. Let stand for 5 minutes.

Steps:
- Place rice in a dry saucepan over medium heat.
- Toast the rice until fragrant and lightly golden in color, stirring often, 3 to 5 minutes.
- Meanwhile, brew the tea in the water for 1 minute. Strain the tea.
- Add hot tea to rice in the saucepan.
- Add salt, bring to a boil, reduce heat to a simmer and cover. Cook for 20 minutes or until all liquid is absorbed.
- Allow the rice to rest for a few minutes.
- Fluff with a fork and garnish with green onions and almonds.

JASMINE TEA RICE

Steps:
- Rinse rice thoroughly. Grind tea in a spice grinder until it becomes a fine powder. In a medium pot, add rice and 2 cups cold water. Let soak 30 minutes. Stir rice well, and bring to a boil over high heat. Stir well again, and reduce heat to low. Cover, and let simmer 11 minutes. Remove from heat, and let rest, covered, about 5 minutes. Uncover, and let cool 10 minutes. Stir in tea powder, oil, salt, and pepper with a wooden spoon or spatula.
- Wet hands and rice molds with water to prevent rice from sticking. Fill molds about two-thirds full with rice. Using a gentle rocking motion, evenly compact rice with the mold's press. Push the rice through the mold. Repeat with remaining rice. Serve hot or at room temperature.
ELSWET'S JASMINE RICE
This is jasmine rice as served with Juanita's Seafood Gumbo or Elswet's Pot Roast. It is not overpowering and can be served with any style meat entre from chicken to lasagne to seafood and anything in between. Very versatile.

Steps:
- Deposit the loose tea into a tea ball and drop into the 1/4 cup hot water and let steep.
- Pour 5 cups cold water to a 2 quart pot, add 1 teaspoon salt and rice, and bring to boil.
- Reduce heat and cook until done; approximately 20 minutes.
- When fully cooked, drain rice and deposit into a large bowl.
- Add margarine, garlic powder, Italian seasoning, remaining 1/2 teaspoon salt, and black pepper, stirring well to mix.
- Remove tea ball from 1/4 cup jasmine tea and set aside; pour tea over rice and stir well to mix.
- Serve and enjoy!
