- Spray the grill rack with nonstick spray; prepare the grill.
- PREPARE GLAZE:.
- In a small saucepan, bring the marmalade, lime juice, and shallot to a boil. Boil 2 minutes. Allow to cool, then transfer half of the glaze to a small bowl.
- PREPARE RUB:.
- In a small bowl, blend the chili powder, sugar, 1/2 teaspoon salt, and the Chinese five-spice powder.
- PREPARE PORK:.
- Rub the rub all over the pork.
- Grill 5 inches from the heat, turning and brushing with half of the glaze, until an instant-read thermometer inserted in the center of the pork reaches 160°F, 20-25 minutes.
- PREPARE SUGAR-SNAP PEAS:.
- In a saucepan of boiling water, cook the sugar-snaps until crisp-tender.
- Rinse under cold water and drain.
- Toss the sugar-snap peas with the oil, vinegar, ginger, the remaining 1/4 teaspoon salt, and the pepper. (Be sure to add the vinegar to the sugar-snap peas just before serving, or the veggie's color will dull.).
- ASSEMBLE FOR SERVING:.
- Gently warm the remaining glaze over low heat.
- Slice the tenderloin, drizzle with the glaze, and serve with the sugar-snap peas.
JASMINE RICE WITH GREEN ONIONS, PEAS, AND LEMON

- Combine 1 3/4 cups water, rice, and salt in large saucepan. Bring to boil over high heat. Reduce heat to low; cover and cook until rice is tender, about 15 minutes. Remove from heat. Let stand covered 15 minutes. Fluff with fork. Cool.
- Cook peas in medium saucepan of boiling salted water 1 minute. Drain. Rinse under cold water. Drain.
- Heat oil in large nonstick skillet over medium-high heat. Add all but 2 tablespoons green onions; sauté 30 seconds. Add rice and sauté until heated through, stirring to break pieces, about 4 minutes. Add peas, lemon juice, parsley, and lemon peel. Sauté 2 minutes to blend flavors. Transfer to serving bowl. Sprinkle with remaining green onions.
GRILLED VEGETABLE AND JASMINE RICE SALAD WITH HERBS AND CASHEWS RECIPE
Inspired by Thai grilled beef salad, this salad replaces the meat with smoky grilled vegetables and adds fragrant jasmine rice. It's loaded with fresh herbs and dressed with a bracing, fish sauce-lime vinaigrette.

- For the Vinaigrette: Whisk ingredients together in a small bowl. Reserve.
- For the Salad: Light one chimney full of charcoal . When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate.
- Toss onion slices, carrots, snap peas, peppers, and jalapeños with oil in a large bowl. Season with salt and pepper. Thread snap peas on one skewer; thread mini bell peppers, if using, and jalapeños on second skewer.
- Grill vegetables directly over the flames, turning once, until browned on both sides, about 4 minutes total.
- When snap peas, peppers, and jalapeños are cool enough to handle, remove skewers. Stem and seed peppers and jalapeños, and discard stems and fibrous strings from snap peas. Chop vegetables coarsely, place in a large bowl and toss with 2 tablespoons of vinaigrette. Let stand for 5 minutes. Then, add cilantro, mint, basil, rice, and cashews and toss well. Dress with vinaigrette to taste and toss well again. Serve slightly warm or at room temperature, passing additional vinaigrette at the table.

Steps:
- In a large nonstick skillet, heat 1 tablespoon oil over medium high heat.
- Add ginger, garlic, scallops & shrimp and sauté just until firm and opaque in the center, 2-3 minutes.
- Transfer to a plate.
- Cook onions, peppers, sugar and snow peas in 1 tablespoon olive oil till tender crisp.
- Add scallops and shrimp back to pan for 2 more minutes.
- Season with sesame oil and soy sauce.
- Plate over jasmine rice and top with toasted almonds.
- Garnish with Cilantro.

- Cook the rice as the label directs. Set aside off the heat, 5 minutes, then fluff with a fork.
- Meanwhile, toss the chicken with 1 tablespoon cornstarch and 2 teaspoons soy sauce in a large bowl; set aside 5 minutes. Stir together the hoisin sauce, remaining 2 tablespoons soy sauce, the vinegar, sugar, ginger, garlic, remaining 1 teaspoon cornstarch and 1 tablespoon water in a separate bowl until smooth; set aside.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the chicken in a single layer and cook, stirring once or twice, until golden and almost fully cooked through, 5 minutes. Transfer to a plate, leaving any drippings behind. Add the snap peas to the skillet and cook until bright green, 1 to 2 minutes. Stir in the cashews to lightly toast, about 1 minute.
- Return the chicken to the skillet and pour in the hoisin sauce mixture. Cook, stirring, until the sauce thickens slightly and coats the chicken and vegetables, 1 to 2 minutes.
- Divide the rice among plates or shallow bowls. Top with the chicken mixture and sauce.

JASMINE RICE SALAD WITH SNAP PEAS
Steps:
- Heat the oil in a large saucepan until almost smoking. Add the onions and cook until soft. Add the garlic, cumin, nutmeg, coriander and ginger and cook for 1 minute. Add the rice and coat with the oil and spices. Add the water, bring to a boil and season with salt and pepper to taste. Reduce the heat, cover the pot and cook for 15 to 18 minutes. Remove from heat, fluff with a fork and fold in snow peas, carrots and parsley. Serve at room temperature.

- Heat an oven to 400°F. Place the hazelnuts on a sheet tray and toast in the hot oven, shaking tray occasionally, 6–8 minutes or until browned and fragrant. Remove from the oven and pour the nuts into a clean hand towel; using the towel, rub the nuts to remove the skins and set aside to cool. Coarsely chop.
- Meanwhile, slice the shallot very thin and separate into rings. In a salad serving bowl, submerge the shallots in the vinegar and add ½ teaspoon salt, a pinch of cracked black pepper and the sugar. Stir to combine and set aside to “quick pickle.”
- Remove the strings and trim the stems from the sugar snap peas. Using a sharp knife, slice them in half lengthwise on the bias. Set aside. Using your fingers, fish out the shallot rings from the vinegar (shaking and squeezing all the liquid out) and drain on paper towels. Stir the mustard into the vinegar, then slowly whisk in 2 tablespoons olive oil. Taste the dressing for seasoning and add more salt or olive oil if needed.
- When ready to serve, chop the hazelnuts coarsely. Toss the peas, shallots, nigella seeds and herbs with the dressing, crumble in the feta, add the nuts and toss again. Serve immediately.
