Here's a simple udon salad I picked up from the chef and entrepreneur Bart van Olphen, who elevates canned tuna to the heights of deliciousness. Van Olphen dresses the noodles in what he calls wafu dressing, which translates roughly as Japanese-style: a sweet-salty vinaigrette of soy, sesame oil, mirin and rice vinegar. I add a little sweet miso for texture and taste, and increase the amount of seaweed in the salad as well. Garnish with sesame seeds or furikake, the Japanese seasoning blend, and you have a superior tuna casserole. It is as good served cold as hot.

1/4 cup cut dried wakame seaweed
8 ounces dried udon noodles (or whatever noodles you have on hand)
1 to 2 tablespoons furikake or sesame seeds
10 to 12 ounces tuna in oil, drained
2 scallions, trimmed and thinly sliced
2 tablespoons sesame oil
2 tablespoons canola oil
2 tablespoons rice wine vinegar
1 tablespoon mirin
1 tablespoon soy sauce
1 teaspoon sweet miso

Steps:

  • Bring a large pot of water to a boil over high, and set the wakame in a small bowl. Once the water comes to a boil, ladle or pour enough over the wakame to cover it by 2 inches; let the wakame soak for 10 minutes. Transfer the wakame to a colander to drain and cool; set aside.
  • While the wakame soaks, cook the noodles according to the package instructions.
  • Meanwhile, prepare the dressing: In a measuring cup or bowl, whisk to combine the sesame oil, canola oil, rice wine vinegar, mirin, soy sauce and miso; set aside.
  • In a small skillet, lightly toast the sesame seeds, if using, over medium-low heat until fragrant; set aside.
  • Drain the cooked noodles in the colander, then transfer to a wide, shallow serving bowl. Add the wakame and about 3/4 of the dressing, and toss to coat. Divide the noodles among 4 bowls. Top each portion with tuna, drizzle with the remaining dressing, then sprinkle with the scallions and furikake or sesame seeds. Serve hot, cold or anywhere in between.

I found this recipe online and have made it several times. It is a big hit. I tripled it the first time I made it, so I had to adjust all the recipe measurements to taste.

1/4 cup soy sauce
1/4 cup seasoned rice vinegar
4 tablespoons sesame oil
2 teaspoons hot red pepper flakes (to taste for your spicy level)
2 garlic cloves, minced
2 teaspoons grated peeled fresh ginger
3/4 lb thin linguine
1 cup coarsely shredded carrot
1 red pepper, sliced
1 green pepper, sliced
3 scallions or 3 green onions, cut crosswise into thirds and thinly sliced lengthwise
1/4 cup sesame seeds, toasted

Steps:

  • Stir together soy sauce, vinegar, oil, red pepper flakes, garlic, and ginger.
  • Cook linguine in a large pot of boiling salted water until just tender, then drain in a colander and rinse under cold water until cool.
  • Toss with dressing, carrot, scallions, red pepper, green pepper and sesame seeds in a large bowl.
  • Cooks' note: Toast seeds in a dry heavy skillet over moderate heat, stirring until fragrant and a shade or two darker or toast in a shallow baking pan in a oven, 5 to 10 minutes.
  • Do the night before to allow the salad to marinate.
  • Store in a plastic container in the fridge and shake it occasionally to coat the entire salad.
  • Some of the measurements should be adjusted to taste if you double or triple it (i.e., those who don't like the salty taste of soy sauce should decrease it).
  • This is awesome and it is a real party and/or BBQ hit.

This salad is so amazingly good. I'm totally addicted to it. It looks (and tastes) like something you'd eat in a restaurant. I know, you're thinking spinach with noodles???? But it is SO good. And don't let the long ingredient list scare you. Trust me it's worth the chopping. If I'm making this just for our family, I cut up all my veggies and put them in ziplock baggies. Then I make the dressing and the noodles. I keep all of it in the fridge and just pull it out as much as I want and enjoy the salad 2x in one week! I found it on Pioneer Woman's website (adapted from Jamie Oliver's version) and adapted it to my taste. As a side salad it probably serves more like 8 - 10. But if this is all you're eating then it will serve 4 - 6. It looks like you've got this huge salad and how is it all going to be eaten and then all of a sudden it's gone and people are asking for more!!

375 g linguine, cooked, rinsed, and cooled (I've used whole wheat and it's good too.)
1/2-1 head napa cabbage, sliced
1/2-1 head purple cabbage, sliced
150 g Baby Spinach (about 1/2 a bag)
1 red bell pepper, sliced thin
1 yellow bell pepper, sliced thin
1 orange bell pepper, sliced thin
2 cups bean sprouts (or one small bag)
3 green onions, sliced
1/4 cup cilantro, you can do as much as you like though
1/4 cup sunflower seeds
1/2 cup cashew nuts, roasted
1/2 cup olive oil
2 tablespoons sesame oil
6 tablespoons soy sauce
1/4 cup brown sugar (I've left out the sugar altogether and it's just as yummy, in my opinion)
3 tablespoons fresh ginger, chopped (I've also used the powder, but fresh does taste better)
2 garlic cloves, chopped
1 lime, juice of

Steps:

  • Mix together salad ingredients. I don't usually measure, I just keep add as much as I want of each ingredient until it looks like the picture.
  • Put dressing ingredients in a jar. Shake well and pour over salad. You can also add jalapenos to the dressing if you like it spicy.
  • Mix with tongs or hands and serve in a large pasta bowl. I always use my hands to mix this. It's so much easier.
  • As a side salad it probably serves more like 8 - 10. But if this is all you're eating then it will serve 4 - 6.

1/2 cup white miso paste
3 teaspoons low-sodium soy sauce
2 tablespoons mirin
2 tablespoons canola oil
2 tablespoons seasoned rice vinegar
1 teaspoon sesame oil
Kosher salt
10 ounces sugar snap peas, julienned into matchsticks
12 ounces buckwheat soba noodles
2 medium organic carrots, peeled and julienned into matchsticks
2 tablespoons canola oil, plus more for brushing
1 tablespoon sweet soy sauce
2 teaspoons yuzu
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
3 pounds good-quality ahi (or yellowfin) tuna, sushi-grade if possible
1/4 cup black sesame seeds
1/4 cup white sesame seeds
4 scallions, thinly sliced on the bias, for garnish
Special equipment: 8 bamboo skewers soaked in water for 10 to 15 minutes

Steps:

  • For the noodles and dressing: Begin by making the dressing. In a large bowl, combine the miso, soy sauce, 1/4 cup hot water, mirin, canola oil, rice vinegar and sesame oil. Whisk together well and set aside.
  • In a large pot of salted boiling water, blanch the sugar snap peas until bright green and just tender, 10 to 15 seconds. Set aside. Add the soba noodles to the hot water and cook for 2 to 3 minutes. Then strain and rinse under cold running water (this will stop the cooking process and gives the soba noodles their distinctive springy texture). Toss the noodles in the dressing and fold in the sugar snap peas and julienned carrot. Set aside until ready to serve.
  • For the seared ahi tuna: In a large mixing bowl, make a quick marinade of the canola oil, sweet soy sauce, yuzu, sesame oil and ginger. Whisk together to combine. Carefully cut the tuna into 1 1/2-inch cubes and place in the marinade and toss to coat well (it will be a very light coating/marinade as the tuna shouldn't be too wet when searing).
  • Thread 4 pieces of tuna per bamboo skewer (4 cubes per skewer, 8 skewers total). Mix the sesame seeds together and spread out on a flat platter. Take each skewer and press the tuna into the sesame seed mixture so it is well coated on all 4 sides.
  • Heat a flat grill plate to high heat. Brush lightly with some oil to clean the grates and create a nonstick surface. Grill the tuna skewers just a few seconds on each of the 4 sides so the sesame seeds are toasted and crunchy and the tuna is rare in the middle, 30 to 35 seconds.
  • Serve the tuna skewers on a bed of the dressed soba noodles and garnish with some sliced scallions.

  • Next, in a large bowl, combine the egg noodles, onion/celery mixture, peas, mushroom soup, milk, cheese, tuna, and parsley. Mix until thoroughly combined and then add the mixture into a casserole dish. Spread the topping over the entire dish. Bake for about 20-22 minutes or until the cheese is bubbling. Add fillets; cook about 3 minutes. Turn; cook until desired doneness, about 3 to 4 minutes for rare. Slice the tuna into 1-inch thick strips.
  • Mix the greens together and spread out on a platter. Add the green onions, rice noodles almonds, and orange segments. Lay the tuna strips on top then drizzle with the vinaigrette. Season with salt and pepper and serve immediately.
