4 tablespoons sushi vinegar

  • Beat with a wire whisk till smooth. Pour into a glass jar and store in the refrigerator.
  • Shake before using.

This sauce is found in many teppanyaki style Japanese steak houses in the U.S. I first had this type of cooking in Okinawa in the late 60's and fell in love with the sauce. I tried different versions of this mustard sauce, and after numerous attempts, came up with this version I like the best. This sauce goes well with grilled teppanyaki style meats and seafood.

This fabulous dipping sauce is known by many names. Hibachi Mustard Sauce, cream sauce, or magic mustard sauce as it is known to many fans of Benihana's Japanese steakhouse restaurants!

1/3 cup sesame seeds ((toasted, ground))
2 cups soy sauce
1 tsp ground mustard ((dissolved in 1 tsp water))
1 pinch garlic powder
1 cup heavy cream

Steps:

  • Toast your sesame seeds in a dry skillet or frying pan over medium high heat until golden and fragrant. Remove from heat.
  • Combine toasted sesame seeds, soy sauce, ground mustard ( mixed with 1 tsp water ) and garlic powder in a blender or food processor bowl. Combine until smooth, about 15 - 30 seconds.
  • In a small saucepan, bring the heavy cream to low heat and add the blended sesame seed, soy, and mustard mixture. Continue to cook for about 2 - 3 minutes, or until completely heated through, stirring occasionally.
  • Remove from heat and serve warm.
