Here's a fresh idea for this nutrient-filled fruit: Turn it into ice pops!

2 3.5-ounce packets frozen acai puree (from a 14-ounce bag), thawed
1 banana
1/2 cup frozen mango chunks
1/2 cup frozen pineapple chunks
1/2 cup coconut water
1 cup vanilla yogurt, plus more for dipping
1 cup granola, large clusters broken up

Steps:

  • Combine the acai, banana, mango, pineapple and coconut water in a blender. Puree until smooth.
  • Layer the fruit puree and yogurt in 10 ice pop molds, starting and ending with the puree (2 or 3 layers of each). Swirl slightly with a skewer. Add sticks and freeze until solid, at least 6 hours.
  • Line a baking sheet with parchment paper. Place the granola on a large plate. Fill a short wide glass with about 2 inches of yogurt (about 1/2 cup). Remove the pops from the molds and lay on the prepared pan (return to the freezer if they begin to soften). Working quickly, dip each pop in the yogurt at an angle, then dip in the granola and return to the pan. Freeze until the yogurt hardens, about 1 hour.

4 bananas, cut in half widthwise
2 cups vanilla or strawberry Greek yogurt, or about 1 cup of each
1 cup toppings, such as trail mix, mini chocolate chips, mini peanut butter chips, chopped nuts, breakfast cereal, chopped strawberries or coconut flakes, or a combination of toppings

Steps:

  • Line a baking sheet with aluminum foil or wax paper.
  • Insert a popsicle stick into each halved bananas. Place the yogurt in a shallow bowl, or in individual shallow bowls if using more than one flavor. Place the toppings in another shallow bowl, or in individual bowls if using more than one kind.
  • One at a time, cover the bananas first in the yogurt, then dip them in your topping of choice, rolling to coat. Place on the prepared baking sheet and repeat until all the bananas are coated. Freeze until firm, at least 1 hour. If not eating right away, you can wrap each banana pop in aluminum foil and keep frozen.

2 cups cubed leftover fruitcake
2 3/4 cups white chocolate chips
1/4 cup coconut oil

Steps:

  • Place the fruitcake in the bowl of a food processor and grind to fine crumbs.
  • Melt 3/4 cup of the white chocolate chips in the microwave, and then add to the fruitcake crumbs. Roll into 1 1/2-inch balls, about 12 total.
  • Melt the remaining 2 cups white chocolate chips with the coconut oil in the microwave.
  • Dip the tip of a lollipop stick in the melted chocolate mixture and stick in a cake ball. Place the pop on a waxed-paper-lined-baking-sheet, and repeat for the remaining pops.
  • Freeze for 30 minutes.
  • Dip the pops into the melted chocolate mixture to coat. Transfer to the baking sheet and rest until the chocolate hardens, about 3 minutes.

BLUEBERRY YOGURT POPS

1/2 cup blueberry preserves
1 1/2 cups lowfat plain Greek yogurt

Steps:

  • Put the blueberry preserves into a quart-size heavy resealable plastic food bag and squeeze it into one corner. Put the yogurt into the bag and squeeze it gently with your hands to lightly mix; swirls of blueberry throughout the yogurt are fine.
  • Arrange 6 mini paper drink cups on a small baking sheet. Using scissors, cut about 1/2 inch off the corner of the bag and squeeze the swirled yogurt mixture into the cups, filling them about two-thirds full. Gently insert a 6-inch lollipop stick into each cup. The thickness of the yogurt should help the sticks stand upright.
  • Freeze for at least 2 hours before peeling off the paper cups and serving.

  • Mix together the yogurt, granola and maple syrup in a large bowl. Pour the mixture into ice-pop molds and add a stick to each. Freeze until the pops are completely frozen, at least 5 hours.
