NUTTY GRANOLA
A very easy-to-make granola recipe that is delicious and the best snack ever. All the girls at my office eat this with yogurt every day. It's awesome! If you don't have some of the dry ingredients, just add more of what you do have. Walnuts are a fine substitute for pecans. You can also try dried blueberries instead of or with the cranberries.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Stir oats, almonds, coconut, pumpkin seeds, sunflower seeds, pecans, and salt, together in a large bowl.
- Stir butter and honey together in a small saucepan over low heat until the butter is fully melted.
- Stir vanilla extract into the melted butter.
- Pour butter mixture over oats mixture; stir until evenly coated.
- Spread the mixture onto 2 large baking sheets into single, even layers.
- Bake in preheated oven 10 minutes. Remove from oven and gently turn the granola. Continue baking until golden brown, about 10 minutes more.
- Set granola aside to cool to room temperature; transfer to a large bowl.
- Gently fold cranberries into the granola.

NUT-AND-SEED GRANOLA
We left the oats out of this low-carb, low-sugar granola. Our taste testers were split on the level of toastiness: Some liked the granola golden brown, while others liked a deeper, more robust version. Just follow the recipe's visual cues (and your nose) for your preferred doneness.

Steps:
- Position an oven rack at the bottom of the oven, and preheat to 325 degrees F.
- Whisk the maple syrup and oil together in a large bowl. Add the almonds, pecans, coconut, sunflower seeds, sesame seeds, flaxseed and salt, and toss to coat.
- Spread the mixture out on a baking sheet, and bake for 20 minutes. Remove it from the oven, and scrape and toss the mixture around. Continue to bake until golden and still slightly sticky, 10 to 12 minutes more. Or, for a deeper, toasted version, bake until deeply golden (you may start to smell the toasted nuts), 13 to 15 minutes more. Let cool. (The granola can be stored in an airtight container at room temperature for up to 5 days.)

NUTTY GRANOLA
With no added fat and just maple syrup to sweeten, this is a very easy, healthful granola. Not to mention tasty! Be sure to serve with lots of vanilla non-dairy milk (try recipe#221261) and sliced banana!

Steps:
- Preheat oven to 225°F.
- Mix first six ingredients together and spread evenly on a couple of cookie sheets.
- Bake for 15 minutes, then remove and stir. Bake another 15 minutes. While it bakes, assemble the other ingredients. (coat the 1/4 cup measure with oil before using it for maple syrup).
- Immediately transfer oat mixture to a large bowl and stir in the dried fruit and cinnamon. Slowly, pour in the maple syrup and stir to mix well.
- Let it cool and store in an airtight container where, my guess is, it'll keep up to a month. Like it'll last that long :-).

NUTTY GRANOLA

- Preheat the oven to 300 degrees F. Spray a large baking sheet with cooking spray.
- In a medium bowl combine the oats, nuts, maple syrup, salt, cinnamon and the raisins, if using. Spread the mixture onto the baking sheet and bake until golden brown, stirring occasionally, about 30 minutes. Transfer the sheet to a cooling rack and let cool completely. Store in the refrigerator in an airtight container.
NUTTY FENNEL GRANOLA
Steps:
- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- Combine the oats, coconut, nuts, cranberries, raisins, candied ginger, egg white, olive oil, honey, maple syrup, fennel seeds, salt, cinnamon, ginger and nutmeg in a large bowl. Spread out on the prepared baking sheet.
- Bake until toasted, 40 to 45 minutes, removing the tray from the oven every 10 minutes to stir the granola for even toasting.
- Serve with Greek yogurt, citrus slices, a drizzle of honey, fresh mint and flaky sea salt. Enjoy.
NUTS & SEEDS GRANOLA

- Heat the oven to 180C/160C fan gas 4. Line a large baking sheet with baking parchment to prevent the granola from sticking. Put all of the dry ingredients in a large mixing bowl. Whisk together the almond extract, vegetable oil and maple syrup in a jug, then pour into the bowl with the dry ingredients.
- Mix together well, making sure that all the dry ingredients are well coated and that there are no dry bits. Tip the mixture onto the lined baking sheet and spread out in an even layer. Cook for about 25-30 mins until golden. You will need to give the mixture a few turns every 8-10 mins to make sure it dries out evenly and doesn't clump together too much. Keep an eye on it as nuts can burn easily.
- Remove from the oven and leave to cool completely on the tray. Break up any large clumps of granola with a wooden spoon. Will keep for up to one month in an airtight container. Serve with milk or yogurt, and fresh seasonal fruit, if you like.

NUTTY FRUIT FREE GRANOLA
I don't like fruit (weird I know!) so buying granola/museli is a bit hard. I was looking for a recipe that didn't include fruit and found one from Feasts and Fotos (http://feastsandfotos.wordpress.com/2008/11/04/homemade-granola/). I've adapted it a bit.

Steps:
- Preheat oven to 275F/135°C.
- In a large bowl toss oatmeal, coconut, nuts, and sunflower seeds together.
- In a separate bowl whisk together oil, honey, cinnamon, and vanilla.
- Pour liquid mixture over oats and stir until everything is coated.
- Pour mixture into a large rimmed baking sheet. I also cover the baking sheet with baking paper but it's not necessary if you have a non-stick pan.
- Bake for approximately 20-25 minutes, stirring once or twice. Keep an eye on it so it doesn't burn.
- Let it cool completely. Blend in cornflakes if using.
- Store in an airtight container.
