1 tablespoon olive oil
1 yellow onion, (diced)
2 celery ribs, (diced)
2 bell peppers, (diced (you can also use red, green, yellow, etc.))
salt and fresh ground pepper, (to taste)
3 cloves garlic, (minced)
1 pound boneless skinless chicken breasts, (cubed)
1/4 teaspoon sweet paprika
1 teaspoon oregano
6 ounces andouille sausage, (sliced into ¼-inch rounds)
2 tablespoons tomato paste
2 cups low-sodium fat free chicken broth
1 (14.5-oz can) diced tomatoes
1 cup long grain rice
1 teaspoon cajun seasoning, (or to taste,)
1 pound shrimp, (peeled and deveined)
2 green onions, (thinly sliced, for garnish)
dried parsley, (for garnish)

Steps:

  • In a large Dutch oven heat olive oil over medium heat.
  • Add onions, celery, and bell peppers and season with salt and pepper.
  • Cook for 4 minutes, or until just tender. Stir in garlic and cook for 1 minute.
  • Stir in chicken and add sweet paprika and oregano.
  • Cook for 5 minutes, or until chicken is browned on all sides.
  • Stir in prepared sausage and tomato paste; cook for 1 minute.
  • Add chicken broth, crushed tomatoes, rice and cajun seasoning.
  • Bring mixture to a boil; reduce heat to medium low and cover the pot with a lid.
  • Cook for 20 minutes, or until rice is tender and most of the liquid is absorbed.
  • Add the shrimp and cook for 4 to 5 minutes, or until shrimp is pink and cooked through.
  • Remove from heat.
  • Garnish with sliced green onions and dried parsley.
  • Serve.

1 cup finely chopped onion
1 cup finely chopped green pepper
4 garlic cloves, minced
2 tablespoons canola oil

1 can (28 ounces) diced tomatoes, undrained
1 cup uncooked long-grain rice

1 tablespoon olive oil
1 pound sausage, such as kielbasa or andouille, sliced
1 pound smoked ham, cubed
1 tablespoon butter
1 medium onion, diced
1 cup diced celery
1 green bell pepper, cored and diced
1 red bell pepper, cored and diced
1 cup seeded and diced tomato
3 garlic cloves, minced
1 jalapeno pepper, seeded and minced OR 1/2 teaspoon cayenne
2 teaspoons diced fresh oregano
1 teaspoon diced fresh thyme
2 tablespoons tomato paste
6 cups chicken stock, preferably homemade
3 cups long-grain rice, rinsed
3 bay leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 to 8 dashes hot sauce, optional (recommended: Tabasco)
1/2 cup chopped scallions, divided
3/4 cup chopped fresh parsley, divided
1/4 cup freshly squeezed lemon juice
1 pound medium shrimp, deveined (20 to 24 count)

Steps:

  • Heat the oil in a large Dutch oven or black iron pot over medium heat, add the kielbasa and saute for 8 to 10 minutes, until browned. Remove the kielbasa to a bowl, and set aside. Add the ham to the same pot and cook 8 to 10 minutes, until lightly browned. Remove to the bowl with the kielbasa, and set aside. Add the butter, onion, celery and peppers to the same pot and saute for 8 to 10 minutes, until the onion is translucent. Add the tomato, garlic, jalapeno or cayenne, oregano, thyme, and tomato paste and cook until all the vegetables and herbs are blended well. Add the stock and bring to a rolling boil. Stir in the rice, and add the sausage, ham, bay leaves, salt, pepper and hot sauce. Return to a boil, reduce the heat to low and simmer, covered, for 20 minutes. Add 1/4 cup of the scallions, 1/4 cup of the parsley, the lemon juice and the shrimp, and stir well. Cover the pot, remove it from the heat and allow the jambalaya steam, for 15 minutes, before serving.
  • Garnish with the remaining 1/4 cup scallions and 1/2 cup parsley, and a dash of hot sauce, if desired.

Add rice, and stir about 3 minutes until lightly toasted.
  • Add tomatoes, and stir until juices are absorbed. Add broth, thyme, and bay leaves. Bring to a boil; reduce heat to medium-low. Cover, and cook for 15 minutes or until rice is tender.
  • In a medium bowl, combine shrimp, 1 teaspoon salt, ½ teaspoon black pepper, paprika, cayenne, and parsley. Add shrimp to rice mixture, and stir until combined. Cook for 2 minutes or until shrimp are pink and firm. Add remaining 1 teaspoon salt and ½ teaspoon black pepper.
  • Garnish with green onion, if desired. Serve immediately.

1 ½ cups white rice
1 pound andouille sausage, diced
1 large sweet onion (such as Vidalia®), chopped
3 green onions, or to taste, chopped
1 cup chopped celery
1 large green bell pepper, chopped
2 tablespoons Creole seasoning (such as Tony Cachere's®)
2 tablespoons minced garlic
1 teaspoon hot sauce (such as Frank's® RedHot ®)

1 pound shrimp, peeled and deveined
1 cooked whole chicken breast, shredded

Steps:

  • Bring 3 cups chicken broth and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.

1/4 teaspoon black pepper, ground
1 (28 ounce) can whole tomatoes
1 medium onion, chopped

2 boneless skinless chicken breast halves
4 tablespoons olive oil (or as needed, divided)
Salt and freshly ground black pepper
2 tablespoons Cajun seasoning (preferably salt-free, divided)
1 bag (16-ounce) cauliflower "pearls" (also called riced cauliflower) (or 1 large head cauliflower, grated)
1 large onion (finely chopped)
2 stalks celery (chopped)
1 medium red bell pepper (chopped)
4 cloves garlic (minced)
1 tablespoon Hungarian paprika
1 package (14-ounce) Andouille sausage (sliced)
1 can (15-ounce) petite diced tomatoes (undrained)
1/2 pound large shrimp (peeled and deveined)
Tabasco sauce (to taste)
1/4 cup chopped fresh parsley (divided)

Steps:

  • Preheat oven to 375 degrees. Place chicken breasts on a nonstick baking sheet. Drizzle with 1 tablespoon olive oil. Season evenly with salt, pepper and 2 teaspoons Cajun seasoning. Bake for 22 - 25 minutes or until cooked through to 165 degrees.
  • Place cauliflower on a nonstick baking sheet (or line a baking sheet with nonstick aluminum foil or parchment paper). Drizzle with 1 tablespoon olive oil and season with salt, black pepper and 1 teaspoon Cajun seasoning. Toss so that seasonings are evenly distributed. Roast for 15 minutes alongside the chicken.
  • Meanwhile, heat remaining 2 tablespoons oil in a large skillet or saute pan over medium-high heat. Add the onion, reduce heat to medium and cook 4 - 5 minutes. Add the celery and red bell pepper and continue cooking another 7 - 8 minutes or until very soft. Keep heat at medium.
  • Add the garlic, paprika, remaining Cajun seasoning Andouille sausage and cook 2 minutes. Add tomatoes and shrimp and cook, stirring often until shrimp is cooked through and translucent.
  • Cut the chicken into 1/2-inch pieces and toss with any juices on the baking pan. Add the chicken to the pan along with cauliflower and heat through. Adjust seasonings and add Tabasco sauce to taste.
  • Add half the parsley. Transfer to a serving platter and garnish with remaining parsley.

1 large red bell pepper, cut into a large dice

1/4 teaspoon kosher salt
Freshly ground black pepper
2 large tomatoes, cored, peeled, seeded, and chopped
1 pound medium shrimp, peeled
1 pint shucked oysters
2 bay leaves
3 cups long-grain rice, soaked in 3 changes of water
3 cups shrimp stock or water
2 bunches green onions, thinly sliced
1/4 teaspoon hot sauce, or to taste

Steps:

  • Heat the canola oil in a Dutch oven or heavy-gauge pot over high heat. Add the sausage and cook, stirring occasionally, about 6 minutes. Add the bell pepper, onion, celery, and garlic, and season with cayenne pepper and salt and pepper, to taste. Cook stirring, until well browned, about 8 minutes. 1 lb chicken breast ( cut into pieces)
½ lb shrimp deveined
½ lb andouille sausage ( sliced into half-inch-thick pieces)
2 tbsp cajun spice
4 tbsp olive oil
¾ cup onion (diced)
3 cloves garlic (minced)
1 bay leaf
1 medium tomato (diced)
8 ounces tomato sauce
½ tsp red pepper flakes (or cayenne powder)
½ cup red bell peppers (diced)
½ cup green bell peppers (diced)
1 tsp thyme
1 tsp oregano
1 cup chicken broth
Salt and pepper (to taste if necessary)
Parsley (for garnish)

Steps:

  • Cook pasta until al dente, drain but do not rinse. set aside
  • Lightly season the chicken and shrimp (separately) with the cajun seasoning.
  • Heat oil in a large pot on medium heat and cook the chicken until cooked through. Set aside.
  • Add the shrimp to the same pan and cook on both sides until they are opaque (about 3-5 minutes). Remove from heat and set aside.
  • Add andouille sausage and brown on both sides.
  • Still in the same pan, add onion, garlic, and bay leaves and cook until the onion is translucent.
  • Add the chicken, diced tomato, tomato sauce, red chili flakes, thyme, oregano, cajun seasoning, chicken broth, salt, and pepper.
  • Bring to a boil, then stir in the shrimp and pasta. Leave to get heated through for 1-2 minutes.
  • Garnish with parsley if desired.

1 small green bell pepper
8 oz. mushrooms
1 lb. shrimp
1 c. shredded fresh basil
freshly grated Parmesan cheese (optional)

Steps:

  • In a large pot, cook penne according to package directions. Drain noodles, reserving 1/2 to 1 cup of the pasta cooking water.
  • Coat a large, deep nonstick skillet with olive oil cooking spray and heat over medium heat. Add sausage and cook 2 to 3 minutes or until lightly browned. Drain on a paper towel; wipe down skillet.
  • Melt butter in same skillet. Add Cajun seasoning and cook 1 minute. Add onion; cook until softened, about 3 minutes. Add garlic; cook 1 minute. Add bell peppers and mushrooms; cook, stirring frequently, 5 minutes. Add shrimp and cook until opaque, 2 to 3 minutes.
  • Add pasta and sausage to skillet, along with enough pasta water to make it a little saucy. Stir; top with basil and grated Parmesan, if desired. Serve hot.

2 pounds medium gulf shrimp, peeled and deveined, shells reserved
Extra-virgin olive oil
1 pound andouille sausage, cut into rounds
2 green peppers, seeded and cut into 1/4-inch dice
3 ribs celery, cut into 1/4-inch dice
1 Spanish onion, cut into 1/4-inch dice
Kosher salt
Pinch crushed red pepper
3 cloves garlic, smashed and finely chopped
1 (28-ounce) can diced tomatoes
1 teaspoon cayenne pepper
2 cups long-grain rice
2 fresh bay leaves
1 bundle fresh thyme
5 scallions, whites and greens thinly sliced, for garnish

Steps:

  • For the shrimp stock: toss the shrimp shells in a large pot and fill with water. Bring the water to a boil, turn off the heat and let sit for at least 15 to 20 minutes, although longer is fine. Strain the shells and discard.
  • Coat a large, wide pot with olive oil and bring to medium-high heat. Add the andouille and cook for 4 to 5 minutes, or until the sausage starts to brown. Add the peppers, celery, and onion to the pan, season with salt and a pinch crushed red pepper. Cook 7 to 8 minutes or until the mixture has softened and is very aromatic. Toss in the garlic and cook for 2 to 3 more minutes. Add the tomatoes and cayenne. Stir in the rice.
  • Add 4 cups shrimp stock, bay leaves, and thyme bundle. Season with salt and taste it to make sure you are on the way to something delicious. Cover and cook over medium heat for 25 minutes.
  • Stir in the shrimp and cook for another 5 to 7 minutes or until the shrimp turn pink. Serve garnished with chopped scallions.
