2/3 cup diced peeled papaya
2/3 cup diced peeled mango
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon grated lime rind
2 tablespoons fresh lime juice
1 cup finely chopped red onion
1/2 cup dry breadcrumbs
1/3 cup bottled sweet and sour sauce
1/4 cup finely chopped red bell pepper
1 tablespoon jamaican jerk seasoning (such as Spice Islands)
1 large egg white
1 lb ground turkey
cooking spray
4 (2 ounce) kaiser rolls or 4 (2 ounce) hamburger buns

Steps:

  • For the salsa:.
  • Combine papaya, mango, red pepper, red onion, cilantro, lime rind and juice.
  • Let stand at room temperature at least 30 minutes before serving.
  • Prepare grill to medium heat.
  • For the burgers:.
  • Combine 1 cup onion , breadcrumbs, sweet and sour sauce, red pepper,jerk seasoning,and egg white. Stir well.
  • Add turkey; mix well to combine.
  • Divide turkey mixture into 4 equal portions, shaping each into a 1-inch-thick patty. Cover and refrigerate 20 minutes.
  • Lightly coat patties with cooking spray; place on a grill rack coated with cooking spray. Grill 7 minutes on each side or until done.
  • Cut rolls in half horizontally.
  • Place rolls, cut sides down, on grill rack; grill 1 minute or until lightly toasted.
  • Place 1 patty on bottom half of each roll; top with 1/2 cup salsa and top half of roll.

1/2 teaspoon black peppercorns
1/8 teaspoon ground nutmeg
1/8 teaspoon cinnamon
1/4 teaspoon thyme
1/2 teaspoon salt

1 clove garlic
1 tablespoon vinegar
1/4 cup minced chives
1 lb lean ground turkey or 1 lb ground pork
1 egg
1 cup fresh breadcrumb

Steps:

  • Toast the allspice berries lightly in a dry skillet, then grind them and the peppercorns finely.
  • Mix with the remaining dry spices.
  • Mince the garlic, and add it to the spices, with the vinegar and the minced chives.
  • Add the meat, egg and breadcrumbs, and mix very well.
  • Form into 4 patties and broil on both sides until done; about 15 to 20 minutes.

1 lb ground beef
1 teaspoon soy sauce
1/4 teaspoon pepper
4 pineapple slices
1 teaspoon butter
1/2 cup sweet onion, finely chopped
3/4 cup light brown sugar
1 tablespoon dry mustard
1 cup cider vinegar
1 (8 ounce) can crushed pineapple, undrained
3/4 cup ketchup
1 lime, juice of
1/2 cup pomegranate juice
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1 cup diced mango
1 cup diced papaya
1 cup diced pineapple
3 tablespoons chopped cilantro leaves
1/4 cup diced red onion
jalapeno pepper, seeded and minced, to taste
1/4 cup honey
2 tablespoons lime juice

Steps:

  • Directions: Start the BBQ sauce and Salsa. Mix together egg, ground beef, and soy sauce. Start your Grill. Cut the burgers into 4 quarters. Pat the burgers to make a smooth surface. Sprinkle with pepper and Cook until bottom is nicely browned. Flip the burger and cook until it is brown. Place a pineapple slice each on the bottom half of four buns. Coat the burgers with the BBQ sauce, place them on the buns, and place some fruit salsa on top of them. Try serving with diced pineapple, mango, and/or papaya.
  • Directions For BBQ Sauce: Place sweet onions in butter in a small saucepan and sauté until soft and translucent. Add brown sugar, dry mustard, cider vinegar, pineapple, ketchup, lime juice, pomegranate juice, soy sauce, and Worcestershire sauce. Stir until combined and cook over medium heat until reduced and thickened, 20 to 30 minutes.
  • Directions For Fruit Salsa: In a medium bowl, combine all ingredients and mix well. Refrigerate it for at least 15 minutes.

Other combinations of fruits will also taste great in this colorful salsa. Try adding diced melon, such as cantaloupe, honeydew, or musk. Diced mango is delicious also, or, for a truly tropical and exotic salsa, add sliced star fruit (also known as carambola). 1/2 cup diced fresh papaya
1/2 cup sliced banana
1/2 cup diced pineapple
1/4 cup diced kiwi fruit
1/4 cup green bell peppers or 1/4 cup yellow bell pepper, diced
1/4 cup diced red onion (purple)
1 habanero pepper, deseeded and destemmed, minced
2 tablespoons orange juice
1 tablespoon lime juice
2 tablespoons extra virgin olive oil
2 tablespoons pomegranate arils (juice sacs)
2 tablespoons minced fresh cilantro

Steps:

  • Combine fruits in a large bowl.
  • In a small bowl, mix together the orange and lime juices and oil. Drizzle over the fruits and toss gently to mix well.
  • Allow to sit for 2 hours. Just before serving, add the pomegranate arils and toss well. Garnish with the cilantro.

Can't be in the tropics but you'll feel like you are when you're enjoying this salsa made with tropical fresh sweet mangoes, papaya, crisp red peppers and ginger mixed with aromatic spices and herbs topping the grilled jerk chicken that is well seasoned with the same mixture of herbs and spices.

2 lbs chicken breasts
1 teaspoon olive oil
1 lime, juice and zest of
2 1/2 ounces minced red onions
2 -3 garlic cloves
1 tablespoon grated gingerroot
1/3 cup minced fresh parsley or 1/3 cup minced fresh cilantro
1/2 tablespoon fresh thyme leave
1/2 teaspoon grated nutmeg
1/4 teaspoon hot red pepper flakes
1/4 teaspoon scotch bonnet pepper, minced (optional)
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon cumin
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1 lb diced fresh papaya (two cups)
1 mango, peeled cored and diced
1/2 cup diced red pepper

Steps:

  • Mix the Spice Mixture in a mini food processor pulsing to a chunky mixture. Or finely chop all together.
  • Coat chicken with 1 1/2 tablespoons of mixture rubbing in and marinade for 1/2-1 hour in refrigerator.
  • Add the rest of the spice mixture to the salsa ingredients. Chill.
  • Heat grill to medium high.
  • Rub the chicken with the oil.
  • Place on hot grill and cook 4-5 minutes pre side till done. Depending on how thick the breasts are. May be pan fried or broiled as well.
  • Plate chicken and top generously with salsa.
  • Serve with rice or on a bed of salad greens.

4 (8 ounce) mahi mahi fillets (can sub tilapia or cod)
2 tablespoons canola oil
caribbean jerk seasoning (I used Dry Jerk Seasoning)
1 cup fresh pineapple, diced
1 cup fresh mango, diced
1 cup fresh papaya, diced
1/4 cup finely chopped cilantro
1 tablespoon grapefruit juice, can sub lime juice
1 tablespoon white rum
1 scotch bonnet peppers or 1 habanero pepper
1/4 cup finely chopped red onion
1 -2 teaspoon honey
1 garlic clove, finely minced
salt and pepper
8 soft flour tortillas or 8 soft corn tortillas
2 avocados, thinly sliced with
1/2 lime, juice of
2 cups red cabbage, finely shredded
1 cup jicama, finely julienned
2 cups sour cream
1 teaspoon fresh lime juice
1 teaspoon fresh lime zest
cilantro (to garnish)

Steps:

  • Brush fillets with canola oil and sprinkle evenly both sides, with jerk rub seasoning.
  • *Use 1 teaspoons seasoning per side per each fillet. More or less to taste.
  • Rub into fish evenly to coat.
  • Place fillets on hot grill and grill 3-5 minutes per side or til done and flakes easily with a fork.
  • Warm tortillas on grill.
  • Cut fillets into chunks, or coarsely shred with a fork.
  • Divide fish evenly onto 8 warmed tortillas.
  • Top each with fruit salsa, a slice of avocado, shredded cabbage, jicama, and top with lime sour cream.
  • Lime sour cream:.
  • Mix sour cream, lime juice and zest in small bowl.
  • Garnish with additional cilantro if desired.
  • *Note: If scotch bonnet or habanero peppers are too hot for your tastebuds, a red jalapeno can be substituted! They are actually quite mild.
