This juicy, flavorful pork takes time-a few hours to brine, overnight to marinate, and 7 or 8 hours to smoke. It's mostly hands off, and well worth it. In Jamaica, this is street food that's eaten with rice and peas, grilled corn, or fried cornbread called festival.

1 4- to 5-lb. bone-in pork butt or shoulder
1/2 cup Jamaican dark rum, such as Appleton
3 Tbs. soy sauce
1 oz. kosher salt (3 Tbs. if using Diamond Crystal; 2 Tbs. if using Morton)
3 Tbs. packed dark brown sugar
1-1/2 Tbs. robust unsulfured molasses
1 Tbs. Worcestershire sauce
1 Tbs. minced fresh ginger
1 tsp. ground allspice
1/2 tsp. ground cinnamon
4 medium cloves garlic, crushed
4 whole Scotch bonnet or habanero chiles, stemmed, seeds left intact
1 large yellow onion, quartered
1/2 cup orange juice (from about 2 oranges)
1/2 cup white vinegar
1/4 cup olive oil
1/4 cup soy sauce
3 Tbs. whole dried allspice berries or 2 Tbs. ground allspice
2 Tbs. fresh thyme leaves
5/8 oz. kosher salt (2 Tbs. if using Diamond Crystal; 4 tsp. if using Morton)
1-1/2 Tbs. fresh lime juice
1 Tbs. packed dark brown sugar
1 Tbs. minced fresh ginger
1 tsp. freshly ground black pepper
1 tsp. ground cinnamon
1 tsp. freshly grated nutmeg
1 Tbs. Jamaican dark rum, such as Appleton
2 tsp. robust unsulfured molasses
2 cups pimento or applewood chips

Steps:

  • Place the pork in a large bowl or in a zip-top bag set inside the bowl. In a large measuring cup, combine all the brine ingredients with 3-1/2 cups water. Stir until the salt and sugar dissolve. Pour the brine into the bag with the pork, squeeze out any air, and seal, or cover with plastic wrap. Refrigerate for at least 2 and up to 6 hours.
  • In a blender, purée the garlic, chiles, onion, orange juice, vinegar, olive oil, soy sauce, allspice, thyme, salt, lime juice, brown sugar, ginger, pepper, cinnamon, and nutmeg. Stir the rum and molasses into 1 cup of the mixture and reserve for basting. Remove the pork from the brine and pat dry. Discard the brine. Use a fork or the tip of a sharp knife to poke holes all over the pork. Return to the bag or bowl. Pour the remaining marinade over the pork, squeeze out any air, and seal, or cover with plastic wrap. Refrigerate for at least 8 and up to 24 hours.
  • Prepare a grill for indirect cooking over medium-low heat (300°F to 325°F) following the directions below. Remove the pork from the marinade and place on the cool side of the grill, fat side up. Cover the grill and cook for 2 hours. Using a silicone brush, baste the pork with the reserved basting liquid every 30 minutes until it's used up. Continue cooking until tender when pierced with a fork and an instant-read thermometer registers 190°F in the center, another 5 to 6 hours, checking the temperature on the grill. Transfer the pork to a cutting board. Let it rest until cool enough to handle. Remove teh pork from teh bone, cut into 2-inch chunks, and serve.

1 1/2 teaspoons ground allspice
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3 green onions, chopped
3 cloves garlic, minced
2 scotch bonnet peppers (these are "killer" hot so you may want to use something like a jalapeno)
1 medium onion, chopped
1 lemon, juice of
3 teaspoons oil
2 teaspoons soy sauce
2 teaspoons malt vinegar
1 teaspoon minced gingerroot
3 -4 lbs cubed pork butt (2 inch chunks)

Steps:

  • In a large bowl combine the first 7 ingredients.
  • Mix thoroughly.
  • In a food processor combine green onions and garlic, peppers, onion, lemon juice, oil, soy sauce, malt vinegar and ginger.
  • Blend until very smooth.
  • Place pork in a glass bowl or large freezer bag, combine all ingredients and coat pork well.
  • Cover and stir or flip often.
  • Marinate for at least 8 hours.
  • Take out of the fridge 1 hour before grilling.
  • Preheat grill to medium high, skewer pork, 4 cubes to a skewer.
  • Cook for 6-8 minutes on one side, flip and 6-8 minutes on the other.

6 skinless, boneless chicken breast halves - cut into chunks
4 limes, juiced
1 cup water
2 teaspoons ground allspice
½ teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon brown sugar
2 teaspoons dried thyme
1 teaspoon ground ginger
1 ½ teaspoons ground black pepper
2 tablespoons vegetable oil
2 onions, chopped
1 ½ cups chopped green onions
6 cloves garlic, chopped
2 habanero peppers, chopped

Steps:

  • Place chicken in a medium bowl. Cover with lime juice and water. Set aside.
  • In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil. Blend well, then mix in onions, green onions, garlic and habanero peppers until almost smooth.
  • Pour most of the blended marinade mixture into bowl with chicken, reserving a small amount to use as a basting sauce while cooking. Cover, and marinate in the refrigerator for at least 2 hours.
  • Preheat an outdoor grill for medium heat.
  • Brush grill grate with oil. Cook chicken slowly on the preheated grill. Turn frequently, basting often with remaining marinade mixture. Cook to desired doneness.

2 cups hot water
1 cup kosher salt
1/4 cup brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons jamaican jerk spice
4 lbs roasting chickens

Steps:

  • Dissolve salt and sugar in hot water add remaining ingredients and 2 cups of ice cubes to cool it. Place a 4 pound cleaned and dried chicken in a freezer zip lock bag pour brine over chicken and top with water to cover. Close bag trying to remove as much air as possible. Brine in refrigerator overnight 8-12 hours. If not ready to cook remove from brine rinse well and place back in the refrigerator till ready to cook.
  • Proceed with cooking method you desire.
  • Roast, Grill, Rotisserie cooking to internal temperature of 175.
  • Let rest 10-15 minutes before carving.

2 quarts chicken stock, unsalted
1 tablespoon liquid smoke flavoring
1 cup white vinegar
4 scotch bonnet peppers, stemmed and minced

4 garlic cloves, minced
2 tablespoons thyme, fresh

2 tablespoons Jamaican jerk seasoning in a jar (pick a brand with low carbs and sugars)
1/4 cup canola oil
4 pounds boneless pork loin

Steps:

  • Preheat oven to 350 degrees F.
  • Mix jerk seasoning with the oil in a small bowl (this will thin it and cut the heat). Trim any excess fat from the pork loin, leaving a thin-layered wide strip down the center of the top. Evenly rub the entire pork loin with the jerk seasoning mixture. Place pork loin in a shallow greased roasting pan, and bake for 20 minutes. Then reduce the temperature to 300 degrees F and continue baking for about 1 more hour, or until a meat thermometer stuck in the thickest part reads 145 degrees F. Remove from oven and let rest for at least 10 minutes before slicing.

1 tablespoon granulated sugar
1 teaspoon allspice berries
1 Scotch bonnet chile, halved
1 head garlic, halved lengthwise
One 1-inch piece ginger, sliced with skin on
4 ounces ice
2 1/2 pounds skin-on chicken thighs and legs
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons chopped scallions (about 3 scallions)
2 tablespoons fresh thyme leaves
1 tablespoon minced garlic (from about 3 cloves)
1 tablespoon minced peeled ginger
1 tablespoon tamarind paste
1 teaspoon ground allspice
1 teaspoon packed dark brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 bay leaf
1 Scotch bonnet chile, minced (see Cook's Note)
Kosher salt
2 tablespoons canola oil
1 yellow onion, diced
3 cloves garlic, minced
One 1-inch piece fresh ginger, peeled and minced
5 tablespoons reserved Jerk Paste Marinade
1 1/2 cups ketchup
1/2 cup dark brown sugar
Canola oil, for the grill

Steps:

  • For the brine: Add the salt, sugar, allspice, chile, garlic, ginger and 1 quart water to a large pot and stir to combine. Place over medium-high heat, bring to a boil and cook until the salt and sugar have dissolved, about 5 minutes.
  • Pour the brine over the ice in a large bowl and let cool to room temperature. Add the chicken to the brine, cover and refrigerate for 24 hours.
  • For the jerk paste marinade: Stir together the soy sauce, Worcestershire sauce, tamarind paste, scallions, thyme, minced garlic, minced ginger, allspice, brown sugar, salt, cinnamon, cloves, bay leaves and chiles in a medium bowl. Reserve 5 tablespoons for the Jerk BBQ Sauce and set aside.
  • Remove the chicken from the brine; discard the brine. Pat the chicken dry, then toss to coat with the jerk paste marinade, slightly massaging it into the chicken. Cover and refrigerate for 24 hours.
  • For the jerk BBQ sauce: Heat the oil in a medium saucepan over medium-low heat until shimmering. Add the onions, garlic, ginger and the reserved 5 tablespoons of Jerk Paste Marinade and simmer until the onions are translucent, 5 to 8 minutes. Add the ketchup and brown sugar and summer over low heat until the sauce is deep red and caramelized, about 30 minutes. Remove the sauce from the heat and transfer to a blender. Blend until smooth and set aside.
  • To cook the chicken: Preheat the oven to 325 degrees F. Heat a well-seasoned cast-iron grill pan over medium heat until very hot, about 10 minutes, then add some oil to the pan. Working in batches, remove the chicken from marinade (reserve the marinade), place the chicken on the grill pan skin-side down and cook until well charred, flipping them halfway through, about 10 minutes. Transfer the chicken to a rimmed baking sheet and drizzle with the reserved marinade. Continue with the remaining chicken. Transfer the baking sheet the oven and cook until the chicken is tender but not falling off the bone, about 45 minutes. Turn the broiler on for the last minutes and broil until the skin crisps.
  • Remove the chicken from the oven, brush it with some of the Jerk BBQ Sauce and let it rest 10 to 15 minutes. Serve with the remaining Jerk BBQ Sauce on the side.

  • Pour the marinade over the chicken. Cover with foil or plastic wrap and marinate in the fridge for at least 3 hours or overnight.
  • Preheat the oven to 400°F (200°C).
  • Remove the foil or plastic wrap and roast the chicken for 45-50 minutes, until cooked through. Rest for 10 minutes on a cutting board before carving and serving.
