Coco bread is a coconut milk bread that is popular in Jamaica as well as in other areas of the Caribbean. It is often stuffed with a Jamaican patty.

4½ cups all-purpose flour (, divided)
2 tablespoons sugar
1 teaspoon salt
2½ teaspoons quick-rise yeast
14 oz. coconut milk
4 tablespoons butter (, melted)

Steps:

  • Mix 4 cups (500g) flour, sugar, salt and yeast together and set aside.
  • Warm coconut milk until it is more than lukewarm but not too hot. You can test it on the back of your hand or use a thermometer to reach 114F/45C.
  • Add 2 tablespoons (30g) of melted butter to the warm coconut milk and stir.
  • Add the liquid to the dry ingredients and combine to make a soft, sticky dough.
  • Flour working surface and place the dough on top.
  • Knead dough, flouring the surface as needed, until dough is smooth and soft (about 10 minutes).
  • Brush bowl with melted butter and place dough inside. Cover with plastic wrap or parchment paper and a damp tea towel.
  • Place bowl in warm spot for 60 to 90 minutes or until it doubles in size.
  • Preheat oven to 375F/180C. Roll dough and cut into smaller squares to make individual coco breads.
  • Roll each square until ⅛ inch (3mm) thick; brush dough with melted butter and fold over. Use a medium bowl to cut in a semi-circle.
  • Repeat last step to make more; place each on parchment-lined baking sheets and brush the tops of the dough with melted butter.
  • Place baking sheets in warm spot for 10 minutes so dough can rise; place sheets in oven for 15 to 20 minutes or until golden brown.

2 packages yeast
1 teaspoon sugar
1/4 cup warm water
3/4 cup warm milk
1 1/2 teaspoons salt
1 egg, lightly beaten
3 cups flour
1/2 cup butter, melted

Steps:

  • Dissolve yeast and sugar in water then stir in milk, salt and egg.
  • Add 1/2 of the flour and stir, continue to add flour until you have a dough that can be turned out of the bowl.
  • Knead the dough for 10 minutes until smooth but firm.
  • Oil a clean bowl and turn the dough in it until coated.
  • Cover with a damp towel and let it rise for 1 hours Cut into 10 portions and roll each piece into a 6 inch diameter circle.
  • Brush with melted butter then fold in 1/2.
  • Brush with more butter and fold in 1/2 again.
  • Set breads on a oiled baking sheet and let them rise until they double in size.
  • Preheat oven to 425 F set a pan of hot water on the lowest oven rack.
  • Bake for about 12- 15 minutes or until golden brown (on upper rack, set to middle).

Coco bread is the Jamaican version of buttery and sweet yeast-risen dinner rolls. In New York City, they are often sold wrapped around a Jamaican beef patty with a slice of American cheese, but at Miss Lily's in Manhattan, the chef Adam Schop serves them with garlic butter flavored with thyme, a commonly used herb in the Caribbean. Note that the origin of the name coco bread is up for debate: Some say original recipes called for coconut milk, others that the dish is named after a similarly named brand of Jamaican butter.

1/2 cup/1 stick/113 grams unsalted butter
4 garlic cloves, minced
10 sprigs of thyme
2 packages/18 grams active dry yeast
1 teaspoon sugar
3/4 cup/180 milliliters whole milk, warmed
1 teaspoon salt
1 egg, beaten
3 cups/460 grams all-purpose flour
6 tablespoons/85 grams unsalted butter, melted
Oil, for baking sheet

Steps:

  • Make the garlic butter: Melt butter over low heat and add garlic. Raise the temperature slightly and cook just until butter is frothy; do not let the garlic brown. Remove from heat, add thyme and let steep for 5 to 10 minutes.
  • Make the bread: Dissolve the yeast and sugar in 1/4 cup/60 milliliters warm water and then stir in milk, salt and egg.
  • Add half the flour and stir, continuing to add the remaining flour until dough can be turned out of the bowl. (You may not need all of the flour.)
  • Turn out the dough onto a floured work surface. Knead dough for 10 minutes until smooth but firm. Transfer dough to an oiled, clean bowl. Cover with a damp towel and let rise for 1 hour.
  • Cut dough into 10 portions and roll each piece into a 6-inch diameter circle. Brush each piece with melted unsalted butter and fold in half. Lightly flatten each piece with the palm of your hand, brush again with melted unsalted butter, then fold in half again.
  • Place pieces on an oiled baking sheet, cover loosely with lightly greased plastic wrap and let them rise in a warm place until they double in size, about 1 hour.
  • Heat oven to 425 degrees and set a pan of hot water on the lowest oven rack. Bake bread on upper rack for 12 to 15 minutes or until golden brown. Use pastry brush to apply melted garlic butter to the coco bread while still hot.

1 teaspoon granulated sugar
1/4 cup warm water
1 egg
1 cup milk, warm
1 teaspoon salt
3 1/2 cups all-purpose flour, divided
1/2 cup unsalted butter, melted, divided

Steps:

  • Mix yeast, sugar & water together, then beat the egg & stir it into the yeast mixture.
  • Stir in the milk & salt, & then add 2 cups of the flour. Slowly add more flour, but stopping when the mixture becomes stiff.
  • Knead the dough until it is smooth, about 10 minutes.
  • Transfer dough to a clean bowl containing 1/4 cup of the melted butter. Roll dough around in the bowl until it is entirely coated in butter.
  • Cver with a damp towel & let rise for 1 hour.
  • When dough has risen, preheat oven to 425 degrees F & grease a large baking sheet.
  • Divide dough into 10 pieces & roll each piece into a circle, about 1/4" thick.
  • Brush each circle of dough with melted butter & then fold each one in half.
  • Place folded pieces of dough on prepared baking sheet & place on the bottom rack of the oven.
  • Bake about 15 minutes or until golden brown.

  • Preheat oven to 350°F, placing rack in middle position. Punch down dough, and transfer to a lightly floured surface. Using a bread knife or bench scraper, cut dough in half; cut each half into 4 equal portions. Shape each portion into a ball, and roll each into a 6- to 7-inch oval about the size of your hand. Oval should be about 1/4-inch thick. Brush surface of each oval with melted coconut oil, and fold in half crosswise to form a semicircle. Brush tops with more melted coconut oil. Place folded dough 1 to 2 inches apart on prepared baking sheet; let rest at room temperature 15 minutes. Bake in preheated oven until light brown, about 17 minutes. Let cool 5 minutes before serving. Serve warm.
