JAMAICAN CURRY CHICKEN

I couldn't find a recipe I liked, so here is my family's version of 'curried' chicken. It brings back memories of a childhood spent enjoying food there, where there were very few dishes I wouldn't eat, vegetables or not. This dish is traditionally served on white rice or in a roti, but feel free to get creative!

¼ cup curry powder, divided
2 tablespoons garlic powder
1 tablespoon seasoned salt
1 tablespoon onion powder
2 teaspoons salt
1 sprig fresh thyme, leaves stripped
1 pinch ground allspice, or more to taste
salt and ground black pepper to taste
2 ¼ pounds whole chicken, cut into pieces
3 tablespoons vegetable oil
3 cups water
1 potato, diced
½ cup chopped carrots
2 scallions (green onions), chopped
1 (1 inch) piece fresh ginger root, minced
1 Scotch bonnet chile pepper, chopped, or to taste

Steps:

  • Whisk 2 tablespoons curry powder, garlic powder, seasoned salt, onion powder, salt, thyme leaves, allspice, salt, and pepper together in a bowl. Add chicken and coat with curry mixture until curry mixture is wet and sticks to chicken.
  • Heat oil and 2 tablespoons curry powder in a large cast-iron skillet over high heat until oil is hot and curry powder changes color, 2 to 3 minutes. Add chicken to the hot oil mixture and reduce heat to medium. Add water, potato, carrots, scallions, ginger, and chile pepper to skillet.
  • Cover skillet and simmer until chicken is no longer pink in the center and gravy is thickened, allowing chicken to cook undisturbed for last 15 minutes of cooking, 30 to 40 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove chicken to a serving dish; continue simmering gravy, uncovered, to thicken (if needed). Serve chicken with gravy.

Jamaican Patties; Beef, Chicken, or Lamb image

These are delicious curry-flavored pastries found in the Caribbean islands, particularly in Jamaica. Great as a snack or as a Jamaican meal compliment. I also enjoy them with a spinach, corn, and bean salad. I have used pre-packaged Crescent rolls (2 cylinders rolled out and cut into 10 circles or phyllo dough (15 sheets cut lengthwise to make 30 triangles) as a time saver. Not as good or as spicy as the handmade pastry, but sometimes there's just not enough time. Store in the fridge for up to 5 days an reheat in microwave on medium heat.

2 cups all-purpose flour
1 teaspoon turmeric powder
1/2 teaspoon curry powder
1 dash salt
1/4 cup margarine
1/4 cup shortening
1/3 cup water
1 tablespoon olive oil
4 -6 garlic cloves, finely chopped

1 lb lean lean ground beef
1 tablespoon curry powder
1/2 teaspoon cumin powder or 1/2 teaspoon turmeric powder

1/2 teaspoon ground black pepper
1/2 cup dry breadcrumbs
1/2 cup chicken stock
2 green onions, finely chopped

Steps:

  • FILLING:.
  • Heat oil in skillet over medium heat.
  • Add onions and cook for 10 minutes stirring occasionally until soft and translucent.
  • Add garlic, cook 2 minutes.
  • Add beef, curry, cumin, salt, and pepper.
  • Cook until browned stirring constantly.
  • Stir in stock and breadcrumbs.
  • Simmer until liquid is absorbed. (aprox.10 minutes) Texture should be soft and moist. Add green onions.
  • PASTRY:.
  • In a large bowl, combine flour, turmeric, curry, and salt.
  • Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs.
  • Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections.
  • Roll each section into a six inch circle (approximately 1/8 inch thick). Cover with damp towel.
  • Spoon equal amounts of filling into each pastry circle. Fold over making a half circle and press edges together. Use a fork to press edges, and brush the top of each patty with beaten egg.
  • Cook for 25- 30 minutes.

3/4 cup olive oil
2 lbs lamb, cut into 1/2 inch cubes
4 garlic cloves, chopped
5 scallions, chopped
2 1/2 tablespoons curry powder
2 large onions, diced
1 teaspoon fresh ginger, grated
1 scotch bonnet pepper, seeded and diced
1 pinch allspice
2 sprigs fresh thyme, picked and chopped
parsley
1 teaspoon salt
1 teaspoon pepper
2 ounces lime juice
2 tablespoons coconut cream
2 teaspoons sweet basil, cut into thin strips
3 1/2 cups chicken stock
2 ounces butter

Steps:

  • Place a large stock pot with olive oil over a medium high heat
  • Season the cubed lamb
  • Place in pot
  • Add garlic, scallions and curry powder. Mix well
  • Next add onions, ginger, scotch bonnet
  • Add all spice and fresh thyme, add parsley
  • Add salt and pepper
  • Next add lime juice and coconut cream. Stir
  • Next evenly add the curry and mix well
  • Let simmer for approximately 3 minutes
  • Place your sweet basil into the pot and stir
  • Add butter and mix until it's melted
  • Add the chicken stock and stir
  • Cover and let simmer for approximately 25-30 minutes
  • Serve over rice .

Curried goat is a popular dish in the West Indies, but lamb makes a fine substitute here in the United States, where goat meat is hard to find. This version, by the chef Martin Maginley from the Round Hill resort in Jamaica, is deeply flavored with allspice and Scotch bonnet peppers, but not overwhelming spicy. If you have time to make it the day before, it gets better as it sits, and gives you a chance to scoop some of the fat off the top of the stew before reheating over a low flame. And if you can procure goat, use it here in place of the lamb.

3 pounds boneless lamb (or goat) stew meat, cut into 2-inch chunks
1 tablespoon plus 2 teaspoons curry powder
1 tablespoon kosher salt, more to taste
1 teaspoon ground ginger
1 teaspoon black pepper
1 large white onion, coarsely chopped
2 scallions, coarsely chopped
4 garlic cloves, smashed and peeled
1/2 inch fresh ginger, peeled if desired and coarsely chopped
4 whole allspice berries
2 thyme sprigs, leaves stripped
4 tablespoons extra-virgin olive oil, more as needed
1 1/2 cups diced potato
1 cup diced carrots
1 to 2 small Scotch bonnet peppers, seeded and chopped
Cooked white rice or coconut rice, for serving (see note)
Lime wedges, for serving
Mango chutney or mango pickle, for serving
Fresh cilantro leaves, for serving

Steps:

  • Pat lamb dry with paper towels and place in a large bowl. In a small bowl, combine 1 tablespoon curry powder, the salt, the ground ginger and the black pepper. Add spice mix to large bowl and toss with lamb.
  • Combine onion, scallion, garlic, fresh ginger, allspice, thyme leaves and 2 tablespoons oil in a blender; purée until smooth. Scrape mixture over lamb and toss to combine. Cover with plastic wrap and refrigerate at least 2 hours or overnight.
  • Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Stir in 2 teaspoons curry powder and heat until fragrant, about 30 seconds. Working in batches to avoid overcrowding the pot, brown the meat on all sides. Drizzle in additional oil, if needed, to prevent meat from sticking to the bottom of the pot. Transfer browned meat to a plate as it browns.
  • Once all the meat has been browned, return it to the pot, along with any juices on the plate. Add enough water to just cover meat. Bring liquid to a simmer, covered, then uncover the pot and cook gently for 45 minutes.
  • Stir potato, carrot and pepper into pot. Simmer until vegetables are fork tender and meat is cooked through, about 30 to 45 minutes longer.
  • Using a slotted spoon, transfer meat and vegetables to a bowl. Simmer cooking liquid until it has reduced and thickened to a saucy consistency (to taste), about 15 minutes. Taste sauce and add more salt if needed. Pour sauce over meat. Serve over rice, topped with a squeeze of lime, a dollop of mango chutney or pickle and fresh cilantro.

1/4 cup vegetable oil
6 -8 tablespoons curry powder
1 tablespoon allspice (see step 1)
3 lbs goat meat (can use lamb or beef if you can't find goat)
salt
2 onions, chopped
1 habaneros or 1 jalapeno pepper, seeded and chopped
1 teaspoon ginger, garlic
1 tablespoon garlic, minced
1 (8 ounce) can coconut milk
1 (15 ounce) can tomato sauce or 1 (15 ounce) can crushed tomatoes
1 tablespoon dried thyme
3 -4 cups water
5 yukon gold potatoes, peeled and cut into 1-inch chunks

Steps:

  • If you can find Jamaican curry powder, use it and omit the allspice. If not, use regular curry powder and add the allspice to it. Add 6 tbsp of curry powder, more if you like it more spicy.
  • Cut the meat into large chunks, maybe 2-3 inches across. Feel free to add the bones if you have them; you can remove them later.
  • Heat the oil in a large pot over medium-high heat. Mix in 2 tablespoons of the curry powder and heat until fragrant.
  • Pat the meat dry and brown well in the curried oil. Do this in batches and don't overcrowd the pot. It may take a while to do this, maybe 30 minutes or so. Set the browned meat aside in a bowl. (When all the meat is browned, if you have bones, add them and brown them, too.).
  • Add the onions and pepper to the pot and sauté, stirring from time to time, until the onions just start to brown, about 5 minutes. Sprinkle some salt over them as they cook. Add the ginger and garlic, mix well and sauté for another 1-2 minutes.
  • Put the meat (and bones, if using) back into the pot, along with any juices left in the bowl. Mix well. Pour in the coconut milk and tomatoes and 4-5 tablespoons of the curry powder. Add 4 cups of water. Stir to combine. Add the thyme.
  • If you want to cook on the stove, bring to a simmer and let it cook until the meat is falling-apart tender, which will take at least 2 hours. Longer if you have a mature goat. If you want to cook in a crockpot, transfer the mixture to the crockpot and cook on low for 8-10 hours.
  • If you have cooked the meat on the stove, add the potatoes when the meat is close to being done - tender but not falling apart. Cook about 30 minutes or until the potatoes are done. Then, skim the fat off the top of the pot if needed.
  • If you cooked the meat in the crockpot, boil the potatoes until tender. Skim the layer of fat off the top of the curry, if needed, and mix in the potatoes.
  • If you used bones, remove them before serving.

  • Once mutton is lightly browned and the onions are clear, add the rest of the ingredients except the carrots. Add enough water to cover and simmer for 1 1/2 hours.
  • Add the carrots and simmer til carrots are tender.
  • Serve with rice and fresh fruit salad.
