EASY FRUIT TART RECIPE
This easy Fruit Tart Recipe is no bake and made with a graham cracker crust and no bake cheesecake filling!

- Make the crust: stir together the graham cracker crumbs with the melted butter and sugar. I like stirring with a fork so it's nice and sandy. Pour mixture into a 10-inch tart pan with removable bottom. Press into the bottom and up the sides, chill until ready to fill.
- Make the filing: add heavy whipping cream to a large bowl and beat with a hand or a stand mixer until stiff peaks form. Refrigerate while making filling.
- Add cream cheese, sugar and vanilla to another large bowl. Mix using a hand or a stand mixer until smooth and creamy.
- Add whipped cream to the cream cheese mixture and use a spatula to fold it in. This will take a while, fold it gently being careful not to break the whipped cream. Do not stir or beat, fold it carefully.
- Press filling into prepared crust. Chill while preparing fruit. Don't top with fruit until within a few hours of serving.
- Slice fruit and arrange on top of cheesecake. Add the jam to a small bowl and microwave until smooth, about 30 seconds, then stir in the lime juice or water. Use a pastry brush to brush the glaze over the fruit to make it shiny.
- Serve chilled within one day. You can make the cheesecake up to 24 hours ahead, just don't top it until the day of serving.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine almonds, sugar, butter, flour, and egg for filling in a food processor; process until fine. Set aside.
- Combine graham cracker crumbs, sugar, and melted butter for crust in a food processor and process until fine.
- Press graham cracker mixture into the bottom of a 9-inch springform pan. Pour almond filling into the pan and spread evenly. Place sliced pears in a ring around the top of the tart.
- Bake in the preheated oven until almond filling is set and not jiggly, about 40 minutes. Remove from the oven and let cool.
- Meanwhile, melt apricot jam in a small saucepan over medium heat. Brush over the top of the tart.

- Put the flour, butter and a pinch of salt in a bowl and rub them together with your fingertips (or you can pulse these ingredients together in a food processor if you have one). When the mixture looks and feels like fresh breadcrumbs, stir in the egg and vanilla seeds, if using, with a cutlery knife. Add 1 tbsp cold water, then start to bring the dough together in one lump with your hands - try not to knead it too much. Add 1 more tbsp of water if it's not coming together, but try not to add more than that. Wrap in cling film and chill in the fridge for 30 mins.
- Heat oven to 200C/180C fan/gas 6. Butter a 12-hole tart tin, then dust your work surface with flour. Unwrap and roll out the chilled pastry so it's about the thickness of a £1 coin, then use a straight or fluted round cutter to cut out 12 circles, big enough to line the holes in the tin. Dollop 1-2 tsp of your chosen filling into each one and, if you like, cut out little pastry hearts (perfect for Valentine's Day) and pop them on top.
- Bake for 15-18 mins or until golden and the filling is starting to bubble a little. Leave to cool in the tin for a few mins then carefully transfer to a wire rack to cool completely.

- Position a rack in the center of the oven and heat the oven to 350°F
- Have ready an ungreased 9 1/2-inch fluted tart pan with a removable bottom.
- In a medium bowl, mix the crumbs and sugar with a fork until well blended.
- Drizzle the melted butter over the crumbs and mix until evenly moistened.
- Put the crumbs in the tart pan (I like to use a piece of plastic wrap between my hands and the crust) and use your hands to spread the crumbs so that they cover the bottom of the pan and sides.
- Use your fingers to pinch and press some of the crumbs around the inside edge of the pan to cover the sides evenly and create a wall about a scant 1/4 inch thick.
- Redistribute the remaining crumbs evenly over the bottom of the pan and press firmly to make a compact layer.
- Bake the crust until it smells nutty and fragrant, about 10 minutes.

- In a mixer bowl fitted with the paddle attachment, beat butter and sugar on medium speed for 3-4 minutes until creamy. Beat in vanilla extract. In a small bowl combine flour and salt, then add it to the butter mixture, and beat on low speed just until combined. Do not overmix the dough.
- Measure out about 3/4 cup of the dough. This would be streusel dough for the topping. Place it briefly in the refrigerator or freezer. Sprinkle remaining crumbs into the bottom of a 9-inch tart pan (I use a pan with removable bottom) and press firmly to form an even layer with the edges being a little bit higher than the center. Place briefly in the refrigerator before continuing.
- Once dough has set a little bit and isn’t too soft, toss the streusel dough with your fingers until large clumps of dough are formed.
