Categories     Dessert

Time 5h10m

Yield 8

Number Of Ingredients 10

1 1/4 cups graham cracker crumbs (about 10 whole graham crackers)
1/4 cup butter, melted
1 tablespoon sugar
2 packages (8 oz each) cream cheese, softened
3/4 cup sugar
1 tablespoon all-purpose flour
1 teaspoon grated lemon zest
2 tablespoons heavy whipping cream
1 teaspoon vanilla
2 eggs

Steps:

  • Heat oven to 325°F. Line 9x5-inch loaf pan with cooking parchment paper, leaving enough hanging over sides to easily remove cheesecake from pan.
  • In small bowl, stir Crust ingredients until well mixed. Firmly press mixture in bottom of loaf pan.
  • In large bowl, beat cream cheese, 3/4 cup sugar, the flour and grated lemon zest with electric mixer on medium speed about 1 minute or until smooth. On low speed, beat in whipping cream, vanilla and eggs just until blended. Pour filling into crust, and smooth top.
  • Place loaf pan inside 13x9-inch baking pan. Pour very hot water into baking pan around loaf pan until water is about halfway up sides of filling in loaf pan, to create water bath.
  • Carefully place in oven. Bake 55 to 65 minutes or until cheesecake is set at least 1 inch from long edge of pan but center of cheesecake still jiggles slightly when moved. (Cheesecake will become firm during refrigeration.) Turn off oven; leave cheesecake in oven with door closed 15 minutes. Carefully remove from oven; cool in pan (with water) on cooling rack 30 minutes. Remove pan from water bath.
  • Refrigerate about 3 hours, or until completely chilled. Using parchment ends, carefully remove cheesecake from pan. Carefully pull sides of parchment paper away from cheesecake. To cut cheesecake, use long, thin-bladed, non-serrated knife. Dip knife into hot water after each cut, cleaning off with paper towel. Serve topped with your favorite toppings, if desired. Store cheesecake loosely covered in refrigerator.

CREAMY SMALL BATCH CHEESECAKE

Creamy Small Batch Cheesecake image

If you don't want to make a big regular cheesecake, try this easy creamy small batch cheesecake with only 5 slices!

Provided by Sally

Categories     Cheesecake

Time 6h

Number Of Ingredients 9

1 and 1/3 cups (160g) graham cracker crumbs (about 10-11 full sheet graham crackers)
3 Tablespoons (45g) unsalted butter, melted
1 Tablespoon (12g) granulated sugar
two 8-ounce blocks (454g) full fat cream cheese, softened to room temperature
1/2 cup (100g) granulated sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1 teaspoon fresh lemon juice
optional for serving: strawberry sauce topping, cherry topping, or even salted caramel!

Steps:

  • Lower the oven rack to the lower third position and preheat oven to 325°F (163°C). Line a 9×5-inch loaf pan with parchment paper with enough overhang on the sides to easily remove the cheesecake from the pan. Set aside.
  • Mix all of the crust ingredients together. Pour into prepared loaf pan and using medium pressure, press the crust mixture down with your hand so it's compact in the pan. Bake the crust for 20 minutes or until lightly golden brown on the edges and top.
  • While the crust is pre-baking, prepare the filling. In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the cream cheese on high speed until completely smooth. Beat in the sugar, egg, vanilla, and lemon juice until completely combined and smooth, about 2 minutes. Scrape down the sides and up the bottom of the bowl and beat again as needed.
  • Pour the batter on top of the warm crust and smooth into an even layer. It will look like a lot of cheesecake batter, but it will sink down as it bakes.
  • Bake the cheesecake for 40-45 minutes, until the entire surface is set. A toothpick inserted into the center of the cheesecake should come out *mostly* clean.
  • Remove from the oven and allow to cool completely in the pan set on a wire rack. Once cool, refrigerate the cheesecake for 4 hours and up to 1 day.
  • Remove the chilled cheesecake from the pan using the overhang on the sides. Slice and serve with optional toppings, if desired.

WHITE CHOCOLATE BERRY CHEESECAKE

White chocolate berry cheesecake image

A stunning no-cook pudding bursting with summer flavours - great for relaxed entertaining

Provided by Good Food team

Categories     Dessert

Time 6h25m

Number Of Ingredients 9

2 x 150g bars white chocolate
2 x 300g tubs soft cheese (we used Philadelphia)
284ml pot double cream
50g caster sugar
170g punnet raspberries
5 tbsp raspberry jam
85g amaretti biscuits
200g small strawberries
a few blueberries (optional)

Steps:

  • Break the chocolate into a glass bowl, then put it over a pan of just simmering water to melt, making sure the bottom of the bowl doesn't touch the water. Line a lightly oiled 900g loaf tin with cling film.
  • Whisk the cheese, cream and sugar together, preferably with electric beaters, then stir into the almost-cool melted white chocolate until well combined.
  • Stir 50g raspberries with 2 tbsp of the jam. Spoon half the cheese mixture into the loaf tin, then spoon the jammy raspberries down the centre. Top with the rest of the cheese mixture, level the top, then press in the biscuits. Cover and chill for 6 hrs or overnight.
  • Set aside about 6 strawberries. Halve the rest, then warm in a pan with the remaining jam until soft. Whizz in a food processor or with a hand blender, then rub through a sieve to remove the seeds and make a sauce. Add a drop of water if the sauce is too thick.
  • To serve, carefully turn the tin onto a plate, lift it away and strip off the cling film. Halve the remaining strawberries, then arrange on top of the cake with the remaining raspberries and blueberries (if using). Pour over a little sauce and serve the rest separately for drizzling over.
