CHEESY JALAPEñO-BACON PULL-APART BREAD

Cheesy Jalapeño-Bacon Pull-Apart Bread image

Assembling this bread is a little messy and it will look very full, but don't be afraid to really stuff between the cuts so all the flavor and melting cheese can soak into the loaf.

Categories     side-dish

Time 45m

Yield 4 servings

Number Of Ingredients 7

1 1/2 cups shredded mild yellow cheddar cheese (about 4 ounces)
1 1/2 cups shredded pepper jack cheese (about 4 ounces)
3 slices bacon, cooked and finely chopped
1/4 cup finely chopped pickled jalapenos
2 scallions, finely chopped
1 round loaf white or sourdough bread (14 to 16 ounces)
6 tablespoons unsalted butter, melted

Steps:

  • Preheat a grill to low and medium: On a gas grill, turn the center burner(s) to low and the side burners to medium; on a charcoal grill, bank the coals to the sides with a few coals in the center.
  • Combine the cheddar, pepper jack, bacon, jalapeños and scallions in a medium bowl.
  • Slice the bread with a serrated knife in 1-inch intervals, cutting almost all the way through. Rotate the bread 90 degrees and repeat to create a crosshatch pattern. Set the bread on 2 large stacked sheets of heavy-duty foil.
  • Gently spread the bread open and brush between the cuts with 4 tablespoons melted butter. Stuff the cheese mixture into the spaces. Press the bread back together and brush the outside with the remaining 2 tablespoons melted butter; wrap in the foil.
  • Once the grill registers 350˚ F to 375˚ F, set the bread in the center of the grill over low heat, cover and cook until warmed through, about 15 minutes. Pull back the foil to expose the surface of the bread (do not remove). Continue to grill, covered, until the top of the bread is crisp and the cheese melts, 10 to 15 minutes. Serve warm.

JALAPENO POPPER PULL APART BREAD

Jalapeno Popper Pull Apart Bread image

I've become fanatical about the sour dough pull apart bread appetizers posted all over the blog world. Soooooo, here's an original one from Plain Chicken's blog.

Provided by gailanng

Categories     Cheese

Time 35m

Yield 10 serving(s)

Number Of Ingredients 7

1 (16 ounce) round sourdough loaf, unsliced
8 ounces cream cheese, softened
2 tablespoons pickled jalapeno pepper juice
1 teaspoon garlic powder
1/4 cup diced picked jalapeno pepper
3 tablespoons bacon bits
1 cup monterey jack cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Using a sharp bread knife, cut the bread into about 1 inch slices from side to side going into both directions, repeating until entire loaf is cut. Do not cut through the bottom crust. It should look something like an onion mum.
  • Mix together cream cheese, jalapeno pepper juice and garlic powder. Spread cream cheese mixture inbetween cuts. Sprinkle diced jalapeno peppers and bacon bits on bread, making sure to lodge most inbetween cuts. Top bread with cheese, again, stuffing in between cuts.
  • Wrap in foil the entire loaf and place on a baking sheet. Bake for 15 minutes; unwraping foil packet enough to expose the bread. Bake for an additional 10 minutes or until cheese is melted.

  • For the bread dough: Combine the milk, butter, sugar, and salt in a glass bowl or measuring cup. Heat in the microwave for 1 - 1 1/2 minutes or in a saucepan until the butter melts. Let the mixture cool to lukewarm.
  • Place the milk mixture to a large mixing bowl or the bowl of a stand mixer fitted with the kneading hook. Add the eggs, yeast, 4 cups of the flour and the potato flour/flakes, if using. Mix to form a shaggy dough. Knead the dough (by hand, with a stand mixer or alternately in your bread machine set on the dough cycle) until it's smooth, adding a bit more flour if needed.
  • Place the dough in a greased bowl, cover with plastic wrap and let it rise for about 90 minutes - to 2 hours, until it's puffy though not necessarily doubled in bulk. *Note that this dough is very slow rising. It won't seem very vigorous and will not really double as usual.
