1 tablespoon salt
2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

1/2 cup chopped celery
1/4 cup chopped onion
1/2 cup butter, divided
3 cups crumbled cornbread
3 cups soft bread crumbs
1 jar (2 ounces) diced pimientos, drained
1 cup chicken broth
1 large egg
1/2 teaspoon poultry seasoning
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
2 Cornish game hens (20 to 24 ounces each)
1 garlic clove, minced
1 teaspoon grated lemon zest
3/4 teaspoon chopped fresh mint or 1/4 teaspoon dried mint flakes

Steps:

  • In a large skillet or saucepan, saute celery and onion in 2 tablespoons butter until tender. Remove from the heat. Stir in cornbread, bread crumbs, pimientos, broth, egg, poultry seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper; mix well. , Stuff each hen with 3/4 cup stuffing. Place extra stuffing in a greased 1-qt. baking dish; refrigerate. Place hens breast side up on a rack in a greased 13x9-in. baking dish. Cover loosely with foil; bake at 375° for 45 minutes. , Meanwhile, in a saucepan, melt the remaining butter; add garlic, lemon zest, mint and remaining salt and pepper. Brush over hens. Bake 15-30 minutes longer or until a thermometer reads 180° for hens and 165° for stuffing. Bake the extra stuffing, covered, for 30 minutes.

As a game-day snack, they cannot be beat. Stuffed jalapeños, filled with Cheddar and cream cheese and run through with cilantro, are roasted to sweet intensity in the oven and finished under the broiler or in the dying light of a grill's fire. Consume with beer in advance of a plate of chicken wings, or a nap.

1/4 pound sharp Cheddar cheese, grated
1/4 pound cream cheese
2 tablespoons sour cream
3 tablespoons cilantro leaves, chopped fine
kosher salt and freshly ground black pepper to taste
12 jalapeño peppers, halved
1-2 tablespoons olive oil

Steps:

  • Preheat oven to 375. In a small bowl, combine the grated Cheddar cheese with the cream cheese and sour cream, and use a fork to mash and combine. Add the cilantro, salt and pepper, and mix again to combine. Spoon the mixture into a quart-size plastic freezer bag, and set aside.
  • Wearing disposable latex gloves (or at any rate being very careful not to get the interiors of the jalapeños on your skin or in your eyes or nose), use a knife to split the peppers down the center, and dispose of the seeds and ribs. Rub lightly with oil, and place on a roasting pan.
  • Cut a half-inch triangle from one corner of the bag with the cheese in it, and pipe the mixture into each of the jalapeños. Gently press the cheese mixture into the peppers. Roast until the peppers have softened and the cheese has just started to bubble, approximately 15 minutes. Finish over the grill, if you like.

2 Cornish game hens, about 1 1/2 pounds each
Salt and freshly ground pepper to taste
4 jalapeno chilies, stemmed, halved and seeded
6 slices bacon

Steps:

  • Heat a grill until hot. Season the hens with salt and pepper. Place 4 jalapeno halves in the cavity of each hen. Wrap 3 slices of bacon over the breast on each hen, securing the bacon with toothpicks that have been soaked in water. Place the hens on the grill and cook until well browned on all sides, about 10 minutes. Cover the grill and cook until hens are cooked through, about 40 minutes, turning once. Remove the toothpicks, split the hens in half lengthwise, divide among 4 plates and serve immediately.

2 Cornish game hens, halved lengthwise
8 cilantro sprigs plus 2 tablespoons chopped fresh cilantro
3/4 teaspoon chili powder (preferably chipotle)
1/2 cup hot red jalapeño jelly
2 tablespoons orange juice
2 teaspoons grated orange peel
1/2 cup bottled red salsa

Steps:

  • Preheat oven to 450°F. Slide fingertips under game hen skin to loosen from meat. Insert cilantro sprigs under skin. Sprinkle hens with chipotle chili powder; season with salt. Place hens, skin side up, on rimmed baking sheet. Roast 15 minutes.
  • Meanwhile, stir jelly, orange juice, and orange peel in small saucepan over medium heat until jelly melts, about 2 minutes. Brush hens with some jelly mixture; continue to roast until cooked through and brown, brushing once more with mixture, about 15 minutes longer.
  • Bring remaining jelly mixture to simmer. Stir in chopped cilantro and salsa. Spoon sauce over hens and serve.

6 tablespoons unsalted butter, divided
1 small leek, white part with 1 inch of green, finely chopped and rinsed
1 small apple (about 4 ounces), peeled, cored, and diced
1 1/2 teaspoons minced fresh sage, plus sprigs for garnish
1 tablespoon minced flat-leaf parsley, plus sprigs for garnish
2 cups cubed day old cornbread
3/4 to 1 cup chicken broth, homemade or low-sodium canned
Kosher salt and freshly ground black pepper
4 Cornish hens, giblets discarded, patted dry

Steps:

  • In a medium skillet, heat the 2 tablespoons of the butter over medium-low heat. Saute the leeks for 8 to 10 minutes, until softened. Add the apples and cook for 3 minutes more. In a medium bowl combine the leek mixture with the sage, parsley, cornbread and enough broth to moisten. Season with salt and pepper to taste.
  • Preheat the oven to 400 degrees F. Stuff the birds with the cornbread mixture and tie the legs of each hen together with kitchen twine. Melt the remaining butter. Brush the birds all over with butter and season with salt and pepper. Put the hens on a rack in a large roasting pan, breast-side up. Roast until an instant read thermometer inserted in the thigh registers 170 degrees F., about 80 minutes. Set the birds aside at room temperature, loosely covered with foil, for 10 minutes before carving. Split the hens in half through the breast with a sharp knife or poultry shears, and keep the stuffing intact. Arrange birds skin-side up, on a platter, garnish with sprigs of herbs and serve.

4 Cornish hens (I used frozen ones- but fresh would be just as yummy)
2 sprigs fresh basil
2 sprigs fresh rosemary
2 sprigs fresh thyme
1/2 garlic clove (diced or chopped)
1/4 cup unsalted butter (I cheated and bought some fresh "poultry" herbs- just picked out what I needed)
4 ounces extra virgin olive oil (extra virgin olive oil)
2 tablespoons of fresh diced red peppers
4 jona gold apples (sliced or diced whichever you prefer)
1 (8 ounce) bag of butter & herbed croutons
1/2 cup unsalted butter (melted)
2 sprigs fresh rosemary
1/2 garlic clove (freshly chopped)
1 small vidalia onion (finely chopped)
1/4 cup scallion (chopped- 1-inch pieces so it adds color & flavor)

Steps:

  • 1- Prep hens- make sure you clean them well.
  • 2- Combine all of the MARINADE mixture and marinate the hens for 2 hours.
  • 3- Combine all of the STUFFING ingredients- melt the butter and pour it over the croutons, add garlic, onion and rosemary add the chopped/diced apples last to the mixture before stuffing the hens.
  • 3- Preheat the oven to 425- Arrange marinated hens in a large glass baking pan- prior to stuffing them make sure that you add some salt & pepper also set aside some of the marinade so that you can brush/baste a couple of times while they are cooking.
  • 4- Cook for about an hour and a half checking on them every 1/2 hour ( I covered my hens with foil until the last 20 minutes because I wanted the hens to have a nice color)
  • For those who like more robust flavor add additional herbs (to taste).

1/2 cup butter
1 jar jalapeno jelly, 7.5 oz
2 tbsp. lime juice
6 rock cornish game hens
salt and pepper

Steps:

  • 1. Mix the butter and jalapeno jelly in a pan. Stir until melted on medium high heat. Stir in lime juice. Set aside.
  • 2. Cut hens in half. Rinse and pat dry. Place birds, bone side down, side by side, on racks in 10 by 15 inch baking pans. Brush with jelly mixture and sprinkle lightly with salt and pepper.
  • 3. Bake at 400 uncovered, until done, about 30 to 40 minutes ( I cooked mine a little longer). Cut to test. Bate occasionally, using all of the jelly mixture. (As I made a lot of the basting sauce, I had some left over. Glad I did, too. It's great to use as a dipping sauce.) Serves 6
