This pasta salad is hearty and creamy, loaded with bacon and spicy cream cheese dressing! Incredibly easy and satisfying, this pasta salad is perfect for summer potlucks, backyard barbecues and as a regular weeknight summer dinner. Read on for my time-saving tips to make this summer favorite in less than 30 minutes!

16 oz campanelle pasta
6-8 thick cut bacon strips
3 jalapeños
1 (7.5oz) tub Spicy Jalapeno Cream Cheese Spread (Note 1)
1 cup shredded cheddar cheese
1 tablespoon dried parsley
1 teaspoon black pepper
1 teaspoon garlic powder

Steps:

  • Cook pasta according to package directions in salted water. Reserve 1 cup of pasta water. Drain the pasta, but don't rinse. (Tip: The dressing will stick to pasta better if it's not drained.)
  • Cut bacon strips into small pieces and cook in a large skillet until nice and crispy.
  • Cut jalapeños in half, scoop out the seeds and ribs. Then cut into small pieces. (Note: If you don't like too spicy food, make sure to remove all the white ribs inside, because that's where most of the heat comes from.)
  • In a large bowl (I used 4qt bowl), whisk together cream cheese spread, reserved pasta water, parsley, black pepper and garlic powder. It doesn't have to be completely smooth.
  • Add hot pasta, bacon, chopped jalapeños and cheese. Mix well. Refrigerate until ready to serve. Serve warm or at room temperature.

1 pound pasta (rotini or other)
4 ounces cream cheese (half a bar)
¼ cup mayonnaise
¼ cup sour cream
2 Tablespoons red wine vinegar
½ teaspoon pepper
½ teaspoon garlic powder
¼ cup pickled jalapenos
5 slices bacon (cooked and chopped into crumbles)
½ cup cheddar cheese (cubed)
½ cup pepper jack cheese (cubed)
1 Tablespoon cilantro (minced, divided)
1 jalapeno (thinly sliced)

Steps:

  • In a large pan, cook the pasta according to package directions. Then drain and rinse with cold water. Place them in a large mixing bowl.
  • In a small mixing bowl, combine the cream cheese, mayonnaise, sour cream and red wine vinegar. Mix well by hand or with a hand mixer. Make sure there are no lumps, then add the pepper, garlic powder and pickled jalapenos.
  • Add the cooked bacon, cheddar cheese, pepper jack cheese and 2 teaspoons of cilantro to the pasta. Toss to combine.
  • Pour the sauce over the pasta and combine.
  • Serve with a sliced jalapeno and a sprinkle of cilantro.

1/2 cup mayonnaise
1/2 cup sour cream
1 lemon, juiced
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon white pepper
1 cup jarred jalapeños, chopped
1 cup Monterey Jack cheese, shredded; or pepper jack, if you're feeling spicy
6 slices bacon, cooked and chopped
2 cups croutons, chopped

Steps:

  • Cook bacon until crisp. Transfer to a paper towel lined plate. Cook pasta according to package directions. Drain. Run cold water over pasta until cooled. Whisk mayonnaise, sour cream, lemon, salt, garlic powder, pepper together in a bowl. Stir cooled pasta, jalapeños and bacon into the dressing. Toss to combine. Refrigerate for 30 minutes. Sprinkle croutons over the pasta salad right before you serve. Enjoy!

We didn't just turn a favorite appetizer into a one-skillet dinner-we made it as easy (and cheesy) as we could! This hearty pasta gets a shortcut from Hamburger Helper™ and just the right amount of heat from pickled jalapeños.

1 tablespoon butter
1/2 cup Progresso™ plain panko crispy bread crumbs
4 slices bacon, cut into 1/2-inch slices (4 oz)
1 lb lean (at least 80%) ground beef
2 cups milk
1/2 cup hot water
1 box Hamburger Helper™ cheeseburger macaroni
4 oz cream cheese (half of 8-oz package), cut into cubes and softened
1/3 cup sliced pickled jalapeños (from 16-oz jar)
2 green onions, thinly sliced

Steps:

  • Heat 12-inch nonstick skillet over medium heat. Melt butter in skillet. Add bread crumbs; cook and stir 2 to 5 minutes or until toasted. Transfer to small bowl; wipe out skillet.
  • Heat same skillet over medium-high heat. Add bacon; cook 5 to 7 minutes, stirring frequently, until crisp. Transfer to plate lined with paper towels.
  • Add beef to bacon drippings in skillet; cook over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain. Return beef to skillet.
  • Stir in milk, hot water, and uncooked pasta and sauce mix (from Hamburger Helper™ box). Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 10 to 12 minutes, stirring occasionally, until thickened.
  • Remove from heat; stir in cream cheese until melted. Top with bread crumbs, bacon, jalapeños and green onions.

20 fresh jalapenos, 2 to 3 inches in size
Two 8-ounce packages cream cheese, slightly softened
1 pound thin (regular) bacon, slices cut in half

Steps:

  • Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
  • If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
  • Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
  • Serve immediately, or they're also great at room temperature.

3 pounds russet potatoes (about 5 medium), cut into 1-inch pieces
1/2 teaspoon kosher salt, plus more for the boiling water
6 slices bacon
2 cups shredded Cheddar (about 8 ounces)
1 cup mayonnaise
1/4 cup chopped pickled jalapenos plus 2 tablespoons brine
3 tablespoons yellow mustard
1/2 teaspoon freshly ground black pepper
4 hard-boiled eggs, chopped
4 scallions, thinly sliced, plus more for topping
3 sweet gherkins, chopped (about 1/4 cup)

Steps:

  • Put the potatoes in a large pot and add enough water to cover them by an inch. Season with salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 15 minutes.
  • Drain the potatoes and return them to the pot, then mash briefly with a potato masher, so that there is a mix of mashed and chunky potatoes.
  • Meanwhile, heat a nonstick skillet over a medium heat until hot, then add the bacon and cook, turning every so often, until crisp, about 8 minutes.
  • Drain the bacon on a paper towel-lined plate, then chop.
  • Tip the potatoes into a large bowl. Add the salt, cheese, mayonnaise, jalapenos and jalapeno brine, mustard, pepper, eggs, scallions and gherkins. Fold everything together.
  • Serve the potato salad warm, or cover and refrigerate until chilled, at least 1 hour or up to overnight.
  • Top with the bacon and more scallions before serving.

12 jalapeno chillies (we used jalapeno but other mild green chillies would work)
150g full-fat cream cheese
50g grated mozzarella
30g plain flour
2 large eggs , lightly beaten
100g fresh breadcrumbs
oil for deep frying
To serve lime wedges (optional)

Steps:

  • Take one whole chilli and using a small sharp knife make an incision along the length without cutting all the way through. Open up the cavity and using the end of a teaspoon scrape out and discard the seeds and the membrane. It's very good idea to wear gloves when you're preparing chillies in this way, and make sure you wash your hands thoroughly afterwards. Repeat with all the other chillies.
  • Mix the cream cheese with the mozzarella, season with salt and pepper then use it to fill the chillies. Push them gently to close them up and wipe off any excess.
  • Put the flour, egg and breadcrumbs in separate shallow bowls or dishes and roll the stuffed chillies first in the flour then egg then breadcrumbs then repeat so they get a good double coating.
  • Heat the oil in a large saucepan until it reaches 160C. Carefully lower the chillies into the oil using a slotted spoon and deep fry in batches for around 2-3 mins or until deep golden brown. Transfer to a plate lined with kitchen paper to soak up the excess oil.
  • Once the chillies are fried season them with pepper and salt and spread out on a plate or board so everyone can help themselves. Great with beer and a movie.

2 jalapeno peppers
8 slices bacon
1 cup chopped onion
½ cup chopped jalapeno pepper
2 tablespoons all-purpose flour
1 cup milk
1 cup chicken broth
6 ounces Neufchatel cheese, softened
1 teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 cup grated pepper Jack cheese, divided
1 cup grated sharp Cheddar cheese, divided
4 cups cooked farfalle pasta
2 cups shredded rotisserie chicken

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish. Slice one whole jalapeno lengthwise into slivers; slice remaining jalapeno into rounds. Set aside.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Let cool enough to touch; crumble and divide into two equal parts. Set aside.
  • Heat bacon grease in the same pan over medium-high heat. Saute onion and 1/2 cup chopped jalapeno in the hot grease until onion is soft and translucent, 5 to 6 minutes. Add flour and cook for 2 minutes. Stir in milk and chicken broth until well combined. Stir in Neufchatel cheese until completely melted. Season with salt and pepper. Turn off heat and stir in 1/2 cup pepper Jack cheese and 1/2 cup sharp Cheddar cheese until melted. Add pasta, chicken, and 1/2 of the bacon.
  • Pour 1/2 of the pasta mixture into the prepared dish and top with jalapeno slivers. Add remaining pasta mixture and top with remaining pepper Jack and sharp Cheddar cheese.
  • Bake, covered, in the preheated oven for 30 minutes. Remove cover and add jalapeno slices and remaining bacon. Bake for an additional 10 minutes.
