2 jalapeno peppers
2 sticks (1 cup) unsalted butter, at room temperature
2 tablespoons lime juice
1 tablespoon honey
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper
6 ears corn, shucked

Steps:

  • Prepare a grill for medium-high heat or turn on a gas burner.
  • Place the jalapenos directly on the grill or burner and cook, turning, until charred on all sides, about 10 minutes. Transfer to a resealable plastic bag and let steam for a few minutes. Use a paper towel to rub the skins off the peppers, then remove the stems and seeds and finely dice.
  • Mix the diced jalapenos, butter, lime juice, honey and garlic powder in a food processor or by hand until well blended. Season with salt and pepper. Spread a generous amount of jalapeno butter on each ear of corn, then wrap the corn in foil.
  • Place the corn on the grill or in a grill pan and cook on one side for 5 to 10 minutes. Flip and cook for another 5 to 10 minutes, until the kernels are bright yellow and you start to see grill marks.

1 fresh jalapeno pepper
3 Tbsp unsalted butter
1 tsp grated lime zest (green part of the rind)
1 Tbsp honey
1/4 tsp sea salt
6 ears fresh sweet corn, shucked

Steps:

  • 1. Preheat grill to medium-high heat. Place jalapeno on grill rack coated with cooking spray. Cover and grill for 10 minutes or until pepper is beginning to be blackened and charred, turning occasionally. Remove from grill. Place jalapeno in a small paper bag, and fold tightly to seal. Let stand for 5 minutes. Peel and discard skin. Cut jalapeno in half lengthwise. Discard stem, seeds, and membranes. Finely chop jalapeno. Combine jalapeno, butter, lime zest, honey, and salt and pepper in a small bowl. Stir well to mix all.
  • 2. Place corn on grill rack. Cover and grill for 10 minutes or until lightly charred, turning occasionally. Place corn on serving plate. Brush heavily with jalapeno butter and serve immediately.

I wanted to post a recipe that could be enjoyed for Father's Day and I think this grilled corn on the cob would be a hit at any summer table alongside grilled steak, burgers, hot dogs, or whatever else your family likes to eat on a warm summer day.

Cooking spray
1 jalapeno pepper
3 tablespoons unsalted butter, at room temeprature
Zest of 1 lime
2 teaspoons honey
1/4 teaspoon salt
6 ears shucked corn

Steps:

  • Clean grill grates and spray with nonstick cooking spray. Preheat the grill to medium-high heat.
  • Place the jalapeno on the grill and cover. Grill, turning occasionally, until the jalapeno is blackened and charred, about 10 minutes. Remove from the grill and place in a paper bag, folding tightly to seal. Let stand for 5 minutes. Peel and discard the skins then cut the jalapeno in half lengthwise. Remove the stem and seeds then finely chop the jalapeno. In a small bowl combine the jalapeno, butter, lime zest, honey, and salt.
  • Meanwhile, place the corn on the grill. Cover and grill until lightly charred, about 10 minutes. Remove corn to a serving tray and brush with the jalapeno butter.

2 jalapeno chiles
8 tablespoons (1 stick) unsalted butter, softened
1 garlic clove, minced
2 teaspoons minced fresh parsley leaves
Salt and freshly ground black pepper
4 ears fresh corn, husks and silks removed
1 cup crumbled queso fresco cheese*

Steps:

  • Prepare a grill or grill pan to high heat.
  • Grill the jalapenos, turning them occasionally, until charred on all sides, about 10 minutes. Transfer them to a cutting board and let cool for 5 minutes. Keep the grill on high heat.
  • Using a small paring knife, peel the jalapenos. Scrape out and discard the seeds and veins. Coarsely chop the chiles and transfer them to a medium bowl. Add the butter, garlic, and parsley and mash together. Season the jalapeno butter with salt and pepper, to taste. Put a square piece of plastic wrap on a work surface. Spoon the jalapeno butter onto the center and roll it up into a 1-inch-diameter log. Refrigerate it until firm, at least 30 minutes, or up to 1 week.
  • Grill the corn on the hot grill or grill pan, turning occasionally, until it is browned in spots and the kernels are tender, about 15 minutes. Transfer the ears to a platter. Top each ear with a pat of the jalapeno butter, sprinkle with queso fresco, and serve.

This dish puts a spicy, cheesy spin on the classic buttered corn-on-the-cob. The ears are charred on the grill, then rubbed with a feta and jalapeño-flecked butter that melts all over the sweet, blackened kernels. The compound butter is perfectly adaptable. You can substitute other cheeses for the feta, and play around with different kinds of chiles and herbs. Be sure to save any leftover compound butter in the freezer. It's also terrific sliced on top of grilled or roasted chicken, fish or meats.

1/2 cup unsalted butter (1 stick), softened
1 jalapeño, seeded and finely chopped
1/4 cup crumbled feta
2 tablespoons chopped fresh cilantro, basil or dill
1 large garlic clove, finely grated or mashed to a paste
1/2 teaspoon fresh lime or lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon ground coriander
6 ears corn, shucked
Olive oil, for grilling

Steps:

  • To prepare the jalapeño-feta butter, in a small bowl, mash together the butter, jalapeño, feta, cilantro, garlic, lime or lemon juice, salt and coriander.
  • Divide the butter equally onto six pieces of parchment paper large enough to wrap them snugly (6-inch squares should do it), form into logs, and wrap well, twisting the ends like candy wrappers. Chill for at least 2 hours and up to 3 days before using, or freeze for up to 3 months.
  • Light the grill or heat the broiler, arranging the rack about 4 inches from the heat source. Brush corn lightly with oil. Grill until charred on all sides, 3 to 6 minutes total.
  • Transfer corn to plates, and serve each ear with a log of jalapeño-feta butter for rubbing onto the ear.

1 stick butter
4 Tbsp honey
1 c heavy cream
2 jalapenos seeded and sliced
salt and butter for serving

Steps:

  • 1. In a large pot enough to hold the ears of corn. Add water just enough to cover. Mix in the butter, honey, heavy cream and jalapenos. Bring to a boil and reduce the heat. Once the butter is melted add the corn and cook until the corn is done about 5 to 7 minutes. Remove the corn and discard the liquid.Serve salted with a pat of butter

This technique for grilling corn uses a side pan of honey butter to thoroughly drench the corn in flavor while keeping it hot and juicy until you're ready to eat. If you are feeling creative, change the ingredients of the liquid bath: Add a couple of tablespoons of Korean gochujang and a few minced garlic cloves to the base mixture, then finish the corn with toasted sesame seeds for a sweet-hot version. Add a half-cup of sake, two tablespoons of light miso paste and two tablespoons of soy sauce for a sake-miso glaze. Blend a couple of canned chipotle chiles with a few tablespoons of lime juice, add it to the bath and finish the corn with freshly minced cilantro or mint. To complete this recipe, you'll need a disposable aluminum 9-by-13-inch baking pan, or a similarly sized stovetop-safe vessel that you don't mind getting a bit dirty.

2 teaspoons mild chile flakes, such as gochugaru (see Tip)

6 ears corn, shucked
Small handful of minced fresh parsley leaves or chives

Steps:

  • Combine the honey, butter, chile flakes, 1 cup water and 1 teaspoon of salt in a deep disposable 9-by-13-inch aluminum tray.
  • Adjust the burners on a gas grill or arrange the hot coals on a charcoal grill to build a fire that is hot on one side and medium-low on the other side. Place the aluminum tray on the cooler side. Cover and let heat for a few minutes, swirling the butter occasionally until it is all melted and the liquid simmers gently.
  • Add the corn to the hot side of the grill and cook, turning occasionally, until the kernels are lightly blackened in spots all over, 5 to 10 minutes.
  • Transfer the corn to the aluminum tray and turn to coat in the liquid. Keep turning as the liquid reduces to a shiny glaze, 10 to 12 minutes. (You can also cook other foods over the hot side while the corn stays hot in the tray. Once glazed, you can continue to hold the corn in the pan for up to another 30 to 45 minutes, turning it occasionally and topping up with ¼ cup water as necessary to prevent the honey and butter from burning.)
  • When ready to serve, coat a final time, sprinkle the corn with the minced parsley or chives and transfer to a serving platter.

1/4 cup 2% low-fat milk
1 tablespoon canola oil
1 (8 3/4 ounce) can whole kernel corn, drained
1 jalapeno pepper (minced, and use 1/2 if less of a kick is wanted)
1/4 cup butter
2 tablespoons honey

Steps:

  • Preheat oven to 400°F.
  • In a small bowl combine first 7 ingredients.
  • In another bowl, combine the egg, sour cream, milk and oil. Stir into dry ingredients just until moistened. Stir in jalapeño and corn.
  • Coat muffin cups with nonstick spray, fill 2/3s full with batter. Bake at 400°F for 14-16 minutes until tester comes out clean.
  • In a small bowl combine honey and butter; serve with warm muffins.
