Steps:
- In food processor, pulse garlic.
- Add beans, lime juice and salt.
- Puree.
- Slowly add olive oil and blend until thick, 1-2 minute.
- Add cilantro and jalapeno, pulse 10 seconds.
- Transfer to bowl, and chill a few hours to allow flavors to meld.

Before I joined the Lunch Bunch at work, I would make hummus for lunch. One batch would last Monday through Thursday. (We go out on Fridays)... a box of crackers, maybe some salami, and hummus. Perfect healthy lunch!

- Combine all ingredients in the bowl of a food processor, except for the reserved garbanzo bean juice. Pulse until the ingredients have been finely blended.
- With the processor running add the reserved garbanzo bean juice slowly until you reach a paste consistency. Scrape down the bowl and continue to process for one minute.
- Transfer the hummus to a serving bowl, cover well and let stand until all the flavors are infused, at least 1 hour. Preferrably make one day ahead of time.
- Garnish with your desired toppings (cucumbers, olives, jalapeños, etc. Or transfer to a sealed container and refrigerate for up to 7 days.

- Roast jalapeño peppers. Place the oven rack on the top shelf or 3-4 inches from the broiler. Preheat the broiler at the high setting.
- With disposable gloves on, cut the jalapeños lengthwise, remove the stems and scrap out the seeds *(see second note). Place the halved jalapeño peppers skin side facing up on a baking sheet and place under the broiler for 3-4 minutes until the skin gets blistered and charred.
- Remove from the oven and place the jalapeños on a cutting board with a bowl over top of the peppers to create steam. Let it sit for at least 5 minutes before removing the charred skin. Coarsely chop the peppers. Set aside.
- Make the hummus. Drain and rinse the chickpeas with cold water. Optionally, remove the white skin on each chickpea (it is not necessary, but will produce a creamier hummus).
