1 fresh jalapeno chile pepper, finely chopped
2 cloves garlic, minced
1 small onion, finely chopped
1 pound lean ground beef
4 slices pepperjack cheese
4 hamburger buns

Steps:

  • Preheat grill for high heat.
  • Mix jalapeno pepper, garlic, onion, and ground beef in a medium bowl. Form into four patties.
  • Brush grill grate with oil. Grill hamburger patties 5 minutes per side, or until well done. Top with pepperjack cheese, and serve on buns.

1/4 cup mayonnaise
1 -2 chipotle pepper
2 teaspoons adobo sauce
1 1/3 lbs ground beef, of choice (85/15 good but I like leaner)
salt and pepper
1/4 teaspoon garlic powder
4 red onion rings
4 slices colby-monterey jack cheese
8 slices crispy cooked bacon
16 -20 pickled jalapeno peppers
4 hamburger buns (or grilled) or 4 crusty rolls, toasted (or grilled)
lettuce

Steps:

  • For the Chipotle Mayonnaise:.
  • Mix together ingredients until combined.
  • For the Burgers:.
  • Divide the ground beef into four 1/3 pound burgers. With a light hand, shape into patties. Season both sides with a salt, pepper and garlic powder. Set aside until ready to grill. May, also, be pan fried.
  • Heat grill (or pan) to medium - medium-high heat and grill for a 4-7 minutes on each side until desired doneness. During the last minute of cooking , add a slice of cheese over each burger and close cover until cheese begins to melt. While the burgers are cooking, add the onion slices and allow them to char a bit on each side and begin to soften. Remove burger and onions from grill and allow to rest for 2-3 minutes before serving.
  • Place a burger on each toasted bun bottom, topping with 2 slices of bacon and 4-5 jalapeno slices. Slather some of the chipotle mayo on the top bun and place a grilled onion round on top. Add lettuce, if so desired, and top with the top half of the bun.

1/2 lb lean ground beef
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 -2 jalapeno pepper, thinly sliced
6 slices cooked bacon, drained
2 slices monterey jack cheese
2 hamburger buns

Steps:

  • In a bowl, combine ground beef and seasonings well, but don't overwork the meat! Form 2 patties out of the mixture.
  • Grill burgers to your liking.
  • Just before you take the burgers off the grill, top each burger with the jalapeno slices, a cheese slice, and finally 3 bacon slices. Once cheese starts to melt, remove from grill. (The cheese acts as a glue keeping everything together!).
  • Put burgers on buns and enjoy! ***We like to top our burgers with sliced red onions and a big dollop of guacamole!

  • In a large bowl, gently break up the ground beef, then divide the meat into 8 equal sized portions, each weighing 5 ounces. Form each portion into a patty, roughly 1/2 inch thick by 4 inches wide. Be careful not to overwork the meat – handle it as little as possible – but make sure the edges are well formed to hold the burger together on the grill. (This is where a burger press comes in handy.) Repeat until you have eight burgers. Sprinkle the salt and pepper over the burgers.
  • Set up the grill for direct medium heat, with a section of the grill with no heat (for flareups). On my Weber gas grill, I preheat my grill for 15 minutes with all the burners on high, brush the grates clean with a grill brush, then turn half the burners down to medium, and the other half off.
  • Set the burgers, onions, and jalapeno peppers on the grill over direct medium heat. (On a gas grill, I keep the lid closed as much as possible while grilling.) Total cooking time is about 10 minutes. Grill the burgers, onions, and jalapenos until they are well browned on the bottom, about five minutes. Flip the burgers, onions, and jalapenos, and grill until the burgers are cooked through and browned on the bottom, about five more minutes. If the burgers cause a large flare up, move them to the no heat side of the grill grate for a few seconds to let the flames die down. It’s OK if the jalapenos blacken – you peel the burnt skin off before serving. During the last few minutes of grilling, put the buns on the grill until toasted on the bottom, about 1 minute. (Watch the buns carefully – they will go from toasted to burnt very quickly). Put the buns on a platter, add a slice of cheese on the bottom piece of each bun. Put a slice of onion on the cheese, then the burger on top of the onion
  • Peel any burnt skin off of the jalapenos, trim off the stem end, then cut them lengthwise into quarters. Use a teaspoon to scrape the seeds off of the jalapenos. Top each burger with a spoonful of salsa and two jalapeno quarters. Add a slice of lettuce, put the bun on top, and serve.
