SPICY JALAPEñO CHEESEBURGERS



Spicy Jalapeño Cheeseburgers image

This jalapeño cheeseburger recipe is perfect for those who enjoy burgers with a bit of a kick. Steak seasoning and soup mix give the meat rich flavor.

1 to 2 pickled jalapeno peppers (finely chopped), plus extra for topping if desired
1/2 package dried onion soup mix
1 1/2 teaspoons steak seasoning
1 teaspoon kosher or sea salt, or to taste
1/4 cup Worcestershire sauce
3 pounds ground beef
6 slices American cheese (or cheese of choice)
6 hamburger buns (toasted)
Optional: condiments like mayonnaise, ketchup, mustard
Optional: toppings of your choice, such as lettuce, tomato, onion

Steps:

  • Gather the ingredients.
  • Mix the jalapenos, soup mix, steak seasoning, salt, and Worcestershire sauce with the ground beef in a large mixing bowl.
  • Form the mixture into six 1/2-inch-thick patties. Preheat the grill to high heat.
  • Place the burgers on the grill and cook for 3 to 4 minutes on each side, or until the desired level of doneness is achieved. During the last minute of cooking, place 1 slice of cheese on each burger.
  • Once the burgers are cooked through and the cheese is melted, remove from the grill and place on the toasted hamburger buns. Top with additional sliced jalapenos, if desired, and condiments and toppings.
  • Enjoy.

8 slices bacon, chopped
1 red onion, diced
2 to 3 jalapenos, diced
3 cloves garlic, minced
1 pound ground chuck
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
12 ounces elbow macaroni
3 1/2 cups beef broth
2 tablespoons grainy mustard
A few dashes Worcestershire sauce
2 cups grated Cheddar
2 tablespoons chopped fresh parsley
1/4 cup pickled jalapenos, optional

Steps:

  • Heat a large skillet over a medium heat. When the skillet is hot, add the bacon and cook until crisp, 8 to 10 minutes. Remove with a slotted spoon to a paper towel-lined plate. Drain all but 2 tablespoons of the bacon grease from the skillet and place back on the heat.
  • Add the onion, jalapenos and garlic to the skillet and stir. Add the ground chuck and season with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Stir in the tomato paste and cook for about 30 seconds.
  • Add the macaroni, broth, mustard and Worcestershire sauce. Give it a big stir and bring to a simmer. Cover and cook, stirring often, until the pasta is al dente and the sauce has thickened, about 10 minutes. Stir in the Cheddar. Sprinkle over the cooked bacon, parsley and pickled jalapenos, if using. Remove from the heat and serve.

1 cup mayonnaise
1 cup sour cream
1/2 cup chopped fresh cilantro
6 tablespoons fresh lime juice (not the bottled stuff)
4 green onions, finely chopped
2 tablespoons minced seeded jalapeno chile
1/2 teaspoon cayenne pepper
2 lbs ground beef (use sirloin)
1 1/4 cups onions, chopped
1/4 cup chopped fresh parsley
2 tablespoons Worcestershire sauce
1 tablespoon chopped seeded jalapeno chile
1 teaspoon salt
1 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/3 cup light corn syrup
2 tablespoons Worcestershire sauce
2 tablespoons ketchup
1 teaspoon instant coffee crystals
2 teaspoons packed golden brown sugar
3 tablespoons butter
16 slices bacon
nonstick vegetable oil cooking spray
8 hamburger buns, split horizontally or 8 square focaccia rolls, 3-4 inches, split horizontally
8 lettuce leaves
2 cups coarsely shredded sharp white cheddar cheese
tomatoes
onion, slices (grilled)
sauteed mushroom

Steps:

  • SPICY SAUCE RANCH DRESSING:.
  • Whisk all ingredients in medium bowl to blend. Season sauce with salt and pepper.
  • BURGERS:.
  • Gently mix all ingredients in large bowl. Form mixture into eight 1/2- to 3/4-inch-thick patties. Place on small baking sheet. Cover and chill at least 2 hours and up to 1 day.
  • GLAZE:.
  • Stir first 5 ingredients in small saucepan over medium heat until coffee is dissolved. Remove from heat. Whisk in butter. Season glaze to taste with salt and pepper.
  • GRILLING:.
  • Prepare barbecue (medium-high heat).
  • Working in batches if necessary, cook bacon in large skillet over medium-high heat until crisp and brown.
  • Transfer bacon to paper towels to drain.
  • Spray grill rack with nonstick spray.
  • Toast buns until golden, about 2 minutes per side.
  • Transfer buns, cut side up, to plates.
  • Place lettuce on each bun bottom.
  • Grill burgers 5 minutes, basting with glaze.
  • Turn burgers, baste with glaze, and grill until cooked to desired doneness, about 5 minutes longer for medium.
  • Press cheese atop each burger and allow cheese to melt.
  • Place some sauce, then 1 burger on each bun bottom.
  • Top each with 2 slices bacon and desired additional toppings.
  • Cover with bun top.
  • Serve with remaining sauce.

4 hamburger buns, split

Steps:

  • Preheat a grill for high heat.
  • In a large bowl, combine the ground beef, jalapeno peppers, blue cheese, onion powder, garlic powder, tamari and salt. Mix well using your hands. Pat lightly into 4 large fat patties.
