ALMOND SHRIMP WITH AMARETTO BUTTER

A fabulous, romantic dish for two - and it's quick and easy! I adapted the recipe from a Junior League of Lafayette, LA recipe; they say that it is the creation of Sous Chef Bryan Richard of Chez Marcelle. The original recipe calls for an entire stick of butter, but I think you'll agree that 3 tbsp. is plenty. If you like Amaretto, you'll love this! It can be served with angel hair pasta, but I like to eat it without so as not to interfere with the delicious flavors.

3 tablespoons butter
1/2 medium onion, finely minced
1 lb large shrimp, cleaned
1/2 cup amaretto liqueur
1/2 cup slivered almonds
1/2 teaspoon salt

Steps:

  • Heat butter in skillet until golden brown, then saute onion in butter until translucent and barely browned.
  • Add shrimp and saute about 5 minutes.
  • Add amaretto, almonds and salt and cook on medium heat for another 4 to 5 minutes.
  • Serve alone as an elegant appetizer, or over angel hair pasta as an entree.

This was one of the first recipes I found (who knows where?) when I decided years ago that I really liked shrimp. I usually serve this over rice for a very pretty, colorful dinner. It's also good when made with scallops instead of shrimp.

3 tablespoons rice wine
2 tablespoons soy sauce
2 tablespoons cornstarch
1/2 teaspoon sugar
1/2 teaspoon garlic salt
1/4 teaspoon ground ginger
1 lb shrimp, deveined and peeled
2 tablespoons canola oil, divided
1/2 cup slivered almonds
1/2 cup thinly sliced green onion
1/2 cup thinly sliced green peppers or 1/2 cup red pepper
1 1/2 cups frozen peas
2 tablespoons water

Steps:

  • Combine marinade ingredients and pour over shrimp.
  • Let shrimp marinate for 10 minutes while assembling remaining ingredients.
  • Heat 1 T oil in a large frying pan.
  • Add almonds to oil and stir-fry for 2 minutes or until browned and crisp, then remove almonds from pan.
  • Add green or red pepper to pan and stir-fry for 2 minutes.
  • Add green onion to pepper and stir-fry for an additional 2 minutes.
  • Remove pepper and onion from pan and set aside.
  • Heat remaining 1 T oil in skillet until hot.
  • Remove shrimp from marinade (reserve marinade) and stir-fry for 2- 3 minutes or until shrimp turns pink.
  • Add reserved marinade, pepper and onions, peas, and water, and stir-fry for an additional 2 minutes more, until peas are heated through.
  • Top with reserved almonds before serving.

1 can (11 ounces) mandarin oranges
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 tablespoon reduced-sodium soy sauce
1 package (6 ounces) frozen snow peas, thawed
1 cup sliced fresh mushrooms
1 small onion, thinly sliced
1 teaspoon canola oil
1/2 pound uncooked medium shrimp, peeled and deveined
1 small garlic clove, minced
3 tablespoons slivered almonds, toasted
Hot cooked rice, optional

Steps:

  • Drain oranges, reserving juice; set oranges aside. In a small bowl, combine cornstarch, salt, ginger and reserved juice until smooth. Stir in soy sauce; set aside., In a large nonstick skillet or wok, stir-fry the peas, mushrooms and onion in oil for 2-3 minutes or until crisp-tender. Add shrimp and garlic; stir-fry 3 minutes longer. , Stir cornstarch mixture and add to the pan. Add oranges. Bring to a boil; cook and stir for 2 minutes or until thickened. Sprinkle with almonds. Serve with rice if desired.

Steps:

  • Heat oil in lg skillet; add shrimp, green onions, and red pepper.

1 lb prawns (21-25 count per pound)
1/2 cup flour
2 tablespoons clarified butter (or vegetable oil)
2 tablespoons steak seasoning
1 1/2 teaspoons garlic
1/2 tablespoon cayenne pepper
1/2 tablespoon black pepper
1 teaspoon kosher salt
1 teaspoon red pepper flakes
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon oregano
1/4 cup white wine
1/2 cup dark beer or 1/2 cup ale
1 1/2 teaspoons Worcestershire sauce
2 tablespoons butter

Steps:

  • Coat prawns in flour.
  • Heat clarified butter or vegetable oil on high heat.
  • Add prawns to saute pan.
  • Coat with steak seasoning (your favorite store brand like Lawry's or Johnny's will work fine).
  • Add garlic to pan.
  • To make the spice mixture, mix cayenne pepper, black pepper, salt, red pepper flakes, thyme, rosemary and oregano.
  • Grind them together in a spice grinder or food processor.
  • Top prawns with 1 1/2 tablespoons of the spice mixture.
  • Add white wine, beer and Worcestershire sauce to pan.
  • Simmer 2-3 minutes until prawns are cooked.
  • Swirl in butter to finish the sauce.
  • Serve with a thick rustic bread.

I never liked shrimp until I tried this recipe. I have used this as an appetizer at Christmas and as a meal with rice. I received this recipe from my step- mother. She got it from her son in California. It is absolutely delicious. I have made it over and over.

2 lbs peeled shrimp (21-25 size, marinate shrimp from 4 hours to overnight)
1/2 teaspoon pepper
1 teaspoon salt
4 tablespoons lemon juice
3 crushed garlic cloves (I usually add more garlic)
4 tablespoons mayonnaise (not Miracle Whip)
1 1/2 cups plain breadcrumbs
1 teaspoon basil
2 teaspoons parsley
1/2 teaspoon dill weed
1/2 cup butter
4 tablespoons olive oil

Steps:

  • Marinate shrimp up to over night. Mix breadcrumbs with spices. Coat each shrimp with breading. Place in single layer baking dish. Save marinade.
  • Stir melted butter and olive oil with remaining marinade. Pour over shrimp.
  • Bake 400 for 13 -15 minutes.
  • Serve as an appetizer with crackers or as a meal with rice and vegetable.

I put this recipe together from a lot of different sources after trying in vain to find one I really liked. It has a rather delicate flavor, but you can add a little stronger vinegar if you like. I did research to determine if there was a similar one but couldn't find one. My apologies if it is the same as another.

2 tablespoons soy sauce
1 tablespoon pickled ginger
1/2 teaspoon sesame oil
1 tablespoon rice wine vinegar (or white wine vinegar)
1/4 teaspoon chili paste (or hot sauce of your preference)
1 teaspoon sugar (white or brown)
1/2 teaspoon minced garlic
1 pinch salt and pepper
2 English cucumbers (or seedless or regular)
1/2 red onion
1 avocado
2 tablespoons sesame seeds or 2 tablespoons finely chopped peanuts

Steps:

  • For dressing, mix first 8 ingredients in a container and shake well.
  • Refrigerate for a couple of hours to blend the flavors.
  • Slice onion very thin and place in ice water for half hour.
  • Dry onion with paper towels before using.
  • Peel cucumbers and slice thin.
  • Place in a bowl, pour on dressing and mix well.
  • Peel and slice avocado.
  • Arrange cucumbers (don't pour out the dressing), onion, and avocado individually on a plate (they can be mixed but I like the way they look individually).
  • Drizzle the remaining dressing on the onion and avocado.
  • Sprinkle with sesame seeds or peanuts.

It wasn't until about 10 years ago that I met the original owner of that chain at a private party in the last remaining restaurant in the chain. He cooked the foods for this party himself with his son who at that time was the manager of that one remaining establishment. One of the dishes that he served, personally to the 20+ persons invited, was his Swedish Meatballs. They were the absolute best tasting meatballs I ever ate. I took him aside and asked him quietly..."is the wonderful taste in these meatballs the fennel seeds in the sauce?" He smiled and whispered back..."yes that is my secret for making the best Swedish meatballs". I came upon a recipe for Swedish Meatballs at Group Recipes.com that sounded so similar to that recipe so I wanted to post this version for the ZWT #6 2010 Scandinavian Region.

1 onion (well minced)
3 eggs

  • Put eggs, spices and minced onion in a bowl, mix it all together.
  • Add meat, mix well so everything is nicely blended.
  • Shape small meatballs and brown them on all sides.
  • Cook over medium heat until liquids run clear of blood.
  • Add the beef stock, kitchen bouquet, salt and pepper, and fennel seeds and simmer on low heat about 20 minutes.
  • In a small bowl mix the 1/4 cup of water and the flour well for a thickner.
  • Add the thickner to the meat stirring constantly.
  • Cook until the the sauce thickens.
  • Add the cream and just heat until the cream is blended well and hot.
  • Be careful not to let it boil or it will curdle the cream.
